Comments (3)As simple as this seems, it is absolutely delicious!! IF there is any leftover, it freezes well. ZUCCHINI CASSEROLE 6 Cups Sliced Zucchini 1 1/2 Pounds Ground Beef 1 Onion, diced 1 3/4 Cup Instant Rice 1 Teaspoon Garlic Salt 2 Tablespoons Italian Seasoning 1 lb 8oz carton Small Curd Cottage Cheese 2 Cans Cream of Mushroom Soup 1 Cup Grated Cheddar / Mozzarella Cheese, more to taste Cook sliced Zucchini in a small amount of Water until tender. Be careful not to overcook, crisp is better. Drain and cool, set aside. Fry Ground Beef and Onion until browned. Add Garlic Salt and Italian Seasonings and Rice. Layer half the Zucchini in the bottom of a 9 x 13 pan. Spread the Meat / Rice Mixture of the top. Spread the Cottage Cheese on top of the Meat / Rice Mixture. Layer with the rest of the Zucchini. Thin the Mushroom Soup with 1 can of Milk and pour over all. Sprinkle the top with the Cheese. Party Potatoes 6 medium potatoes 1 medium onion, finely minced 2c sour cream 1/2lb grated cheddar Salt & pepper to taste 1/4c milk 1tsp snipped chives 1/2c coarse bread crumbs 2T melted butter Boil potatoes in water with skin on until tender, cool and peel. Grate potatoes coarse. Mix potatoes with sour cream, cheese, salt, pepper and chives, place into buttered casserole dish. Sprinkle bread crumbs over top, drizzle with butter. My Mother gave me this recipe years ago - super easy & wonderful for either dinner or brunch: Pineapple Dressing 1/2 cup butter (I have used margarine & "spreads") 1 cup sugar 4 eggs 1 cup crushed pineapple, drained 5 slices white bread, sliced (I have used wheat & other) Cream butter and sugar, add eggs one at a time. Leila's Crispy Buttermilk Fried Chicken Makes approximately 8 servings This wonderful fried chicken was prepared for my family by Leila - an amazing woman who worked for us and practically raised my brother and I up from pups. It is full of delicious flavor and has the kind of crispy coating that you'll never forget. It is also fried chicken, so nowadays it's something that is served for special occasions only! 3-4 pounds cut-up frying chicken 2 cups buttermilk 2 cups self-rising flour Ground black pepper, to taste Paprika, to taste Garlic powder, to taste Vegetable oil for frying Step 1 - Cut your chicken into parts and wash well. Place in a large bowl and pour buttermilk over. Allow to sit for at least an hour. Step 2 - Mix and sift together flour, black pepper, paprika and garlic powder. Step 3 - Pour enough oil in a large, cast iron skillet to fill it about an inch deep. Heat to 375 degrees. Use a thermometer to carefully regulate the temperature and prevent the oil from burning. Step 4 - Remove each piece of chicken from the buttermilk and shake to remove the excess. Dredge in the seasoned flour. Step 5 - Drop pieces in the hot oil, four at a time. Do not crowd, as this will reduce the temperature of the oil and cause the chicken to absorb more grease. I like starting with dark meat pieces first and saving the white meat for the last. Cook each piece six minutes per side. Turn when the underside is nice and brown. To ensure doneness, cut a small hole in the thickest part - the juices should run clear. Step 6 - Serve and enjoy - either hot from the pan or room temperature!
