how to tell if fruit from rootstock or from graft

a few winters ago a Satsuma had severe damage but it recovered with some growth coming from rootstock and some from above the graft, but VERY CLOSE to graft. The tree has finally produced fruit so this winter I will have the opportunity to determine for real, which is which. Will taste be the definitive factor? Once I determine that, I plan to cut off all the rootstock branches but not before learning whether flavor is the only factor to consider. Sour orange is likely my rootstock.
