Purple Cherokee Tomato - splitting - why?

Here is a photo of the tomato I just picked today. First time I've grown Purple Cherokee. The plant is healthy, no disease on the foliage at all. Pushing out a good amount of tomatoes. They've looked gorgeous green and shiny as they were growing. The first one we picked and ate, despite all the cracking was delicious.

I'm also having a hard time figuring out when to pick them. I think I'm waiting too long, thinking they are going to turn all red, but they have green shoulders, when the bottom is soft and medium red.

Watering by hand around the base, keeping the foliage dry for the most part. Fertilizing once a week with diluted half strength Neptune fish/seaweed fertilizer.

Can you tell whether I am doing something wrong that is producing these cracks? The skin seems to be very thin, is that part of the problem?
