Preheating my gas grill problems

Hi all, I just purchased a nexgrill 4 burner with rotiseri and side searer. Love the grill cook alot on it mostly bbq, steak,burgers etc. However, soon I will be rotisering a couple of chickens lol excuse my spelling. The problem im having is getting it set to any certain temp. I first turn the grill to ignite of course ignite, then turn the burners all the way to low or med or whatever. But, even if i turn the burners down to low it will be at a temp above 500 degrees if course you can expect this to be too high when it should be 350 to 400 ish to rotiseri the chicken properly without charring. Its not a problem if im bbq or burgers since im flipping alot but if anyone knows what im doing wrong or has any suggestions please do let me know, thanks in advance.
