What zone am I in?

I have been trying to understand this zone stuff and it is not working out.

I live in wonderful Dayton, Texas (77535). I believe I am a Zone 8b, but then I see stuff that says you can grow anything below your zone number. Or I will see a zone number like Z8.

What is going on. I believe I've already screwed myself by planting 9 apple trees 20ft apart in a straight line. About 8ft off of my fence line. They were starting to grow, but every time new leaves grow in a cluster, about 3 weeks later, they will brown and wilt. This cycle has repeated itself about 4 times this year. All trees were planted this year. All are different variety of Apple.
Fuji, Anna (x2), Gala (x2), Red delicious (x2), Grannysmith (x2)

I was told to buy different varieties for pollination.

This is turning out to be extremely difficult. I just want to plant some apple trees. WHY IS THIS SO HARD.

By the way, this is my yard after the most recent flood. Happens about 4 times every 3 years.
