What's for Dinner on Thursday

We had the chicken and rice that we were supposed to have last nite (neighbour brought us some grilled salmon).

Earlier this week I made them using a spice rub (cayenne, paprika, etc) and then basted the breasts with a pineapple and soy sauce and other stuff. We had the rest of the chicken tonite (I made enough for 2 meals)

It was plenty hot and spicy. It called for 1 tbsp cayenne, I'll probably cut it back to 3/4 tbsp next time.

I had a baked chicken leg quarter, season with crushed rosemary and kosher salt. And that was it. It's why I didn't post. No veggie, no starch, no nuttin'. Rather uninspiring. Not cause I don't love you! I do. All y'all!

We had a wonderful meal. We grilled giant shrimps and Vidalia onions and ribeye steak and vegetables. Omg it was awesome and I am stuffed.

Some really tasty sauerkraut from the freezer cooked with chicken and ham and some boiled potatoes. And for dessert we are having some Satsuma tangerines grown on the next farm over from my BBF's farm. We get them in our community supported agriculture (CSA) box. They are the best I have tasted in years.

It was a really long day for me. Left home at 7:30 and didn't get back until 6:00. (Playaway golf group and the course was an hour and 1/2 away.) Had a great lunch at a great restaurant.....It's not all about golf. LOL I had a delicious Caesar salad topped with the best fried oysters and there were plenty of them! DH can polish off the rest of yesterday's take out. I'm not hungry. Howdy from me to Patti, too. Miss you gal!!!!!

We went out with our Wine and Dine group last night....delicious crab cake and filet dinner. You could cut the filet with a butter knife. I saved half for dinner tonight. DH doesn't want dinner until Christmas day. I'm sure he'll find something here to eat but wants to lose weight. Not the way to do it but since I won't have to cook, who am I to argue. Jasdip, we put a big pork butt on the grill over the weekend and enjoyed it with a pile of slaw. It's a full day commitment but seemed like a good Labor Day weekend project. Last night, I made a garlicky, gingery chicken stir fry with lots of fresh vegetables, served with brown rice and toasted almonds. I don't know why I don't make something like that more often, it's a favorite.

Sorry you felt alone last night. When I looked on here, I didn't see a dinner thread. I had leftover pork roast, green beans, and mac n cheese. Wish I had had Raven's meal.

A vanilla yogurt with 3 maraschino cherries & 5 tortilla chips with salsa. :0) I'm cutting back....not exactly a diet....but not my usual....lol

I just made a big tray of meat, cheese, crackers, assorted fresh vegetables and some dip. If I can drag myself down to the freezer in the basement, I will pull out some steaks to throw on the grill tonight. I don't know why I am feeling so sluggish for the past couple days.
