Looks can be deceiving

I thought it was time to unearth my Mestoklema tuberosum which had been growing in my raised bed. It is the same age as three I have that had been staying in 1 gal pots and made some interesting roots. It is about three times the above ground size of the other three because of more spacious accommodations.

I expected to see larger roots. What I found surprised me a little. Carrots anyone?

I'll let the roots harden off a few days in shade and then look for a pot that can display about 2/3 of the root mass. I haven't decided how much of a haircut to give it yet. Any suggestions? Planning on putting it in the summer show in a few weeks.
