Using Up Canned Veggies/Greens?

My SIL lived near us for a couple of years while we took care of my FIL. She moved away after FIL passed away. She was a bit of a Prepper and was somewhat prepared for social collapse. She left us with a portion of her stash of canned goods. I am realizing that most of these cans are reaching their use by dates and I should attempt to use them more often. I am not worried by the age, but I have never used canned greens and hardly ever used canned veggies except corn or beans either.


I usually cook simply. Our fresh or frozen vegetables are usually just cooked fresh with butter, salt and pepper and perhaps some mayo. and or lemon; except when I rarely make a souffle or pot pie dish. The stash is a lot of spinach, as well as collards and other mixed greens, and lots of squash and squash with onions, and then some tomato and okra and lots of beets. I guess we can eat the beets as is, and the tomato with okra will be gumbo or chicken gumbo soup which we like and know what we're doing.


But what am I supposed to do with the canned squash (never knew it existed as a product) and all these greens? I have made spinach souffles before, but I wonder if the canned stuff would be a lump and not separate well. Experience and ideas appreciated.
