Plain tile backsplash, or a decorative piece over cooktop?

Please help us decide how to do our backsplash. We have a fairly decorative hood, so I'm not sure whether to keep the bs plain and simple, or to do a tile frame with a plain tile design inside.

Here is the kitchen:

Hood detail: (This may be left as is, or painted. It's a paint around the framework, then decide decision.)


Considering this color paint for the hood:

In the end, there will be crown molding on the hood and the cabinets.

I'm thinking about doing all white subway tiles, or doing subways with a diamond pattern over the cooktop, like this: (from blog Centsational Girl)

Or...we have this edge tile, which I love, love. But would it be "too much" in our kitchen? (You can see how icky the wall is getting already! I need to make this decision a.s.a.p.!)

I've also thought about doing all diamonds, everywhere... If people promise me we won't have stained grout, I'd really like to do white.
