pastry mystery sovled...canele'

A pastry platter shows up at work every day...from various bakeries in a rotation of fresh bagels to chocolate croissants, and a selection from Balthazar...or donuts from a spot in Greenpoint bklyn. I've already had my granola/yogurt and green juice, or an omlet. I don't care much for sweet pastry anyway, especially after a filling breakfast.

Last september i noticed a little gem with the Balthazar order. Not pretty and had no idea what it was. An english co-worker called it a 'nellie'. Found nothing in a google search except a 'wet nellie' so i called it that for a while...then went on Balthazars website a month ago and found it. A canele'. (or cannele' sp sometimes)

Breaking it open it has an intoxicating scent of creme brule' with a thick chewy crust. Just divine.

Made in copper molds. (or silicone). Rubbed with butter and beeswax for that chewy crust...a bit like a soufflé but allowed to rise and fall creating a custard interior.

Now i want to make them...and they freeze well...
