Charoset ice cream

Charoset (for Ashkenazic Jews) is a mixture of ground/shredded apples, nuts, cinnamon (and sometimes cloves), a bit of sweet wine and sugar (or honey). Ben and Jerry have brought out a charoset ice cream in Israel. That sounds like a good idea so I'm planning attempting to make my own version of that for our Seder on Friday (which will be dairy because of our vegetarian son's family).

I've looked at some recipes on line for apple cinnamon or walnut ice cream to get ideas, but I'm not sure what the best technique would be.

I'm thinking of peeling and dicing very small a granny smith apple or two then macerating it with some of the sugar for the ice cream. Strain reserving the liquid.

Add the liquid to some apple cider and a bit of sweet wine. Put in cinnamon sticks and cloves. Boil to reduce. I'm not sure whether to put the diced apple in to cook a bit. (Or saute the diced apple or use it raw - it's raw in charoset.)

(Strain out the apples if they are cooked in the liquid.) Chill everything.

Add the cream, any remaining sugar and reduced cider mixture to the ice cream maker. Add the diced apple and walnuts when it is close to done.

Suggestions on how to do this? Especially what to do with the diced apples and the proportion of cider mixture to cream.
