CE marks do not meet the listing requirements of the NEC by themselves. You'd have to inquire with your local jurisdiction if this is a problem. Voltage is likely not an issue. Doing some judicious reading of the specifications ( I just looked at the Siemens site) and it seems most appear to be dual rated 230/240 50/60 so if that's the case you shouldn't have a problem on that score. It should run fine on US power.

European natural gas appliances should work fine on US natural gas. If you have propane, you need to check to see if the gas appliances can be converted. If they are sold into US markets they probably can be.

CE is not a "rating" it is merely a "mark". It is a self-branded bit of propaganda that means no more than that someone paid money to be a part of an organization. It is no more of a guarantee of quality than a person saying that since they paid their fee to be a member of the NKBA, that they gained some sort of superior cognitive ability to design a kitchen. CE is not a certification of a product. It is merely a statement by the manufacturer saying that they believe they have a good product. CE has NO independent testing by a NRTL (nationally recognized testing laboratory), and doesn't even guarantee that the product has been tested lately by the manufacturer for quality control. CE is not even similar to what UL does.

Since CE is not a testing agency, let alone a NRTL, it doesn't fulfill the requirements of any US CODES

You will also need to verify with your local AHJ that they will accept the lesser known TUV label, rather than UL.

The modules are Bosch, dual rated and clearly marked as 220/240 and 50/60. All have comprable models (just in different sizes) marketed in the US,.

I'm really out of my depth about electrical stuff. I appreciate your patience as I try to get a toe-hold on the learning curve.

My local code book just says they use the 2008 NEC. No coverage of UL requirements in the listed additions or exceptions. Relatively to code, if voltage is OK and everyone involved is comfortable that the appliance is safe, is the UL sticker an issue?

Does anyone know if the 2008 NEC (as written) would permit installation of dual listed residential kitchen appliances (induction cooktop, etc) without a UL sticker? In other words, if a jurisdiction bases its regulations on NEC 2008 and doesn't specifically address hardwired, dual listed (but not UL rated) residential appliances, would they be OK under code?

I looked at the State Code, but it was overwhelming since I don't know where to look or what I'm trying to find. I'm happy to do the research, but What section would something like this be under? Are there keywords that I should look for?

I don't want to open a can of worms with our local inspector, if it isn't necessary. Experience tells me that it's better to know the answer before asking rather than to send up red-flags that we are doing all sorts of weird stuff...

It is only possible to give you any accurate information if I have all the facts to begin with. That includes the specific model numbers of the appliances in question and the jurisdiction in which you live. The reason the US uses independent testing laboratories is that every model of an appliance can be different and have different problems or risks. It is important to know all the specifications of the appliance to even make a judgement. Some European appliances may have a volt-amp rating that exceeds what is allowed in the NEC, for example. The AHJ is not going to stick their reputation on the line for a complete stranger and a non-listed appliance very often, especially if you don't try to preapprove it with them ahead of time and find that you are trying to sneak it past them.

It is not just the NEC that you have to comply with. You also have to check the Residential Building Code and Mechanical Code and any state and local amendments. I can do this online for most states.

(2) Section 3403.3 Listing and labeling. This section has been modified to comply with NFPA 70. It has been modified to read: Electrical materials, components, devices, fixtures and equipment shall be listed for the application, in accordance with NFPA 70, shall bear the label of an approved agency and shall be installed, and used, or both, in accordance with the manufacturer's installation instructions.

So, it appears that you will need to find an "approved agency" , such as THIS, to "list" this equipment if you want to pass a code inspection in Oklahoma.

As several of us have pointed out (going back to my initial post), CE is *NOT* a testing lab and hence not a listing that matters. AENOR actually would be, but you'd need to check with your AHJ if they'll buy off on that certification. Frankly, as this stuff is available as the Serie line in the US, it's probably safer to just get the stuff that's branded for the US (and has the appropriate listing).

Using the word "approved" instead of NRTL may make it sound like AENOR could be used, but they are not a Nationally Recognized Testing Laboratory. AENOR would also have to already be testing equipment to be in strict compliance with UL standards 858 & 737. Not likely.

You will need 240V outlets to plug in these appliances.
The German 240V plugs are different shape than US. You may need a converter plug, or have a compatible plug put on the end of the power cord, or if you are lucky, the appliances were made for the US market and will have the appropriate US plugs.

One European standards organization goes by the initials IEC.

The "over surface" spacing between electrical conductors is less in European standards compared to UL spacings. However, both have a history of proven safety.
