Open Shelving or Rail System - how practical?

Our kitchen is super boring, basic builder. I'd like to do something a little different and open it up. I really love the look of open shelving or rail systems but I worry they're not practical.

Anyone here regret moving to open shelving? We might keep one set of upper cabinets to hide ugly things.

If we did move to open shelving or a rail system, would we need to extend the tile backsplash up to the ceiling?

ETA, does an open kitchen/rail system look too 'industrial' or European for the average American suburban kitchen? I had SS Elfa shelves in our old condo but it was very urban with exposed brick, etc. Would it look okay with white base cabinets with shaker doors? Or too big a disconnect?
