New under mount sink - drain off-center?

I had a new granite countertop installed with an under mount sink. Everything looked fine until I un-packaged the sink grates a few days later and noticed the holes don't align. Upon further inspection, it looks like the drain hole isn't fully center.

This is only the left side, the right smaller side aligns perfectly.

Now that the plumbing is completed and the sink is glued to the counter, I think it's too late to reinstall a new sink.

My neighbor had the same sink installed with the same manufacturer last year and hers aligns perfectly.

The installer is coming out to look at it on Friday but I'm not sure what they can do without removing the countertop. I was told over the phone I have the correct grates for the style sink I ordered.

I would like it fixed but at the same time I don't want to have the entire P trap re-plumbed again - plus there is a seam right in the middle of the sink cutout and I don't want to risk damage. Should I let it go? What would my options be?
