Comments (35)A tip from one in Native "Smoke" country (Texas) Regardless of your chosen smoking wood there is a term often over looked,green wood and seasoned wood,knowing the true differences is the key to over all smoke quality. Mesquite is a very good wood when used with experience,that "toxic" flavor most describe is from the "green" and primarily from the bark. Remove the bark on wood that isnt at least a year/season old from cutting and the animal indeed changes spots. Using Mesquite as a finishing wood works very well over both pecan and oak for very distinct flavors with all meats(even fish,both fresh and saltwater species) These simple tricks are passed down thru generations and will not be seen on FoodTV. Comments (22)I have a double, stainless, drop-in sink with a faucet and sprayer. The sprayer gets little use since we rince the washed dishes under running water before racking into the drain container. I have had this one for 30 years and replaced the valve cartridges only once. The valve asssembly and spout is up for replacement because the diverter valve for the sprayer is messed up (got punched out during clumsy repair work). I plan to replace with an identical or similar unit. I really like the stainless tubs. They are very easy to keep clean. The only complaint I have is that after about a year, the seal begin to weep around the swiveling spout and lime begin to build up. This build-up tends to grind at the seals accelerating seal wear. Preventive maintence of replacing the seals on a regular basis would go a long way to getting good service....See MoreWhat's your onion preference?
Comments (44)bbstx, if the scapes (the little bulbs on top) are cut off, the bulb on the bottom will grow bigger. The scapes taste like mild garlic and can be eaten/cooked with. Scapes are the result of hard necked garlic sending up that flower stalk, although they don't actually bloom. The stalk will curl around, I was always told to cut them when they were a circle. The stalk in some varieties straightens out as it gets bigger and the bigger it gets the tougher it is so the scapes should be cut while it's still young and tender. You don't HAVE to cut them, you'll still get a garlic bulb underground, but the bulb will be bigger if the scapes are cut. I've never grown garlic from seed, only from cloves of garlic, so I'm only assuming it will reseed itself if the scape is left. When half of the outer leaves of the garlic plant die, it's time to pull the garlic and use it, the bulb grows under the ground. Annie...See Moreravencajun Zone 8b TX
