Cooking for One; DB exiled to Agoura Hills

DB Kevin works at Sony Pictures, which was severely hacked just before Thanksgiving, crippling the company server, and so they have essentially shut down the Culver City offices, although not the studio lot (located where the old MGM used to be). No company emails work any more, and last week DB went to a Sony electronics office at Howard Hughes Center, but then the electronics branch threw them out, fearing that they would be affected by the hack. So then they went to another Sony office in Agoura Hills (1-1/2 hours from here in rush hour traffic), and Sony put the employees in a hotel from Wed-Fri, and they will be there the entire week this week. Therefore, DB will not be home all this week for dinner, and I will be eating alone :(.

There are a few things that I eat (and like to make) that Kevin will not eat, such as bacon, and so I am thinking that I will make some pasta carbonara with bacon, but I wonder if I can make two servings and successfully reheat half of it later. I might make some mini-pizzas with flour tortillas also, which is something I used to do when I was living alone. I will have to make the flour tortillas, however, and I'm not sure if I should make a bunch and save them or cook only part of the dough, as needed.

Anyone have special meals that they make for one?? I generally have sandwiches for lunch, and so I do not want to have that for dinner. I also do not like to go out to eat alone.

Hi Lars,

I rarely try to cook for one (other than a good variety of individual sized pizzas), but prepping or cooking normal quantities and then assembling a single serving is pretty easy. For instance, you could make enough pasta for a few servings, crumble the bacon, divide the egg etc., and package all but one serving for storage. If you use the pasta water for the sauce, put some in the fridge too. Then you can easily make each serving to order in a pan. If the pasta seems too dry, just sprinkle a little water on it. Basically, make carbonara kits. Or you can get pure whole egg whites in a carton, which might be easier than dividing and storing half an egg white.

It's easy, also, to cut up some vegetables, sautÃÂ© them, and add some tomato paste/puree/sauce, wine, herbs, seasoning, then rewarm pasta right in the pan. You can make a quick soup for one the same way, with different vegetables, some cooked meat if you like, and stock.

If you have more cooked pasta drying in the fridge, you can make a cheese sauce, add vegetables, and whatever meat you have cooked.

Omelettes are made for one more often than not.

A single steak, portion of chicken, portion of lambchops, etc., can be made in a pan, on the grill (barring torrents of rain which are supposed to come end of the week) or in the oven. A quick salad on the side. A potato can be added to the grill or oven, or sliced and added to the pan, if you want a starch. Leftovers of the meat can liven up some of the above. :)

If you have some personal sized pie plates, you can make single serving quiche. Quiche freezes well if you want to make several at a time.

Having said all that...invite some friends over and cook for them! Then you don't have to cook for one and you won't be lonely either! (Hopefully, Kevin will have some congenial coworkers to take meals with.)

Kevin said Agoura Hills is not very good for restaurants, and they did have take-out delivered for lunch and then went out as a group for dinner after work. The hotel has a breakfast buffet, and so he's been eating eggs more than usual.

I guess I need to make some new friends, since I cannot think of anyone to invite over. On Saturday, Kevin and I went to BestBuy to upgrade our go phones to ones that have qwerty keypads because Kevin was having to send a lot of texts from his personal phone while the company email is down, and I decided to upgrade mine as well. They only cost $20 each. My SIMM card from the old phone was not working, and we both had to manually enter the names and numbers from our old address books. I have not done this yet, but I wrote down the information, and I only had nine entries! Obviously I do not get out enough. In Venice we had friendly neighbors - in Westchester not so much. It was easier to have a social life in Venice, even though we are now only 5 or 6 miles from where we used to live.

I do have a lot in the freezer that I can make for myself, now that I think of it. I have frozen vegetables and frozen fish. I do have individual tart pans, and so I could make individual quiches - I could make three at once and put them into storage.

Couple of comments @sfjeff - 1) I think its quite silly to judge a manufacturer's quality based on which domain name provider they are using or their MD5 certificate quality. Most of these manufacturers are small companies that usually don't even have a dedicated IT department. Unlike huge brand names who have global corporate operations, these guys can't always invest in the best "overhead" areas like IT, marketing, etc. In fact, if you had seen the bluestar website a couple of years ago, you would have said they don't seem to be a credible company at all. 2) I own a proline hood that I bought two years ago. Its a 900CFM chimney hood with stainless baffles. The reason for choosing it was similar. I was spending a lot of money on my Bluestar range top, cabinets, counters, and other appliances, and didn't want to spend $1000 or more on a more "brand name" hood. I looked at several hoods in high end showrooms before ordering a proline, and wasn't convinced that there is so much complexity in a hood that would differentiate one vs. another. The downside of a proline was that its online order only so you can't go and see them anywhere. I took the risk of ordering one, it arrived ahead of the estimated delivery date. Everything was packed perfectly. Everything installed as expected. I have been using it for two years and don't have any issues. The only comment I would have is that 900CFM seems inadequate *sometimes* when the bluestar is cranking, when cooking something with lots of smoke (like cooking a ribeye steak on high with the 22K burners. Most of the time, its perfectly adequate, but for those once in a while times, I wish I had gone with 1200CFM. The only issue that I encountered were one of the halogen lights went out. I replaced both halogen lights with LED lights for a while, which worked just fine, but the the LED lights had a slightly different contour, so they didn't sit perfectly flush in the light enclosures, hence providing a path for the smoke into the body without passing through the baffles. After a few months, I replaced with halogens again. Also, the main input panel with the fan speed buttons had one button stop working after about a year. I called Proline and got great customer service (it was a US call center). They sent me the replacement part and instructions overnight. I would buy again if I was looking for a new hood. Hey, what a fun thread! I have only been visiting this forum for about 3 months or so, originally getting into Garden Web through the Canning forum. My name really is Rachel, and Ellen is my middle name. I am 47, married for a year and a half...my husband is 47 as well, and it is the first marriage for us both. Slow starters. ;D No kids. At the moment we have 2 cats, an old grumpus of a male and a sprightly, mischievous kitten (almost cat), having lost my 21 year old Suzu Badcat last winter. We have also recently acquired Outdoorcat, whom I started feeding when someone moved away and left him. I can't bring him in because the old grumpus would have a fit having another male cat in the house...so I'm currently looking for a home for him. I have been cooking since I could manage pouring things into a bowl. My mother was a truly horrible cook, but I bless her for teaching me the basics so that I was at least not intimidated by cooking. I moved in with a Chinese family for about 6 months when I was 17, and that started my life long love for and fascination with ethnic foods. I am an eclectic cook...my husband never really knows what I might put in front of him, luckily he's wonderfully open minded and willing to try new things. I learned the basics of Chinese cooking from that family and kept going from there. I had many Japanese friends as a teen and learned a bit from their mothers, and then worked in a Japanese restaurant for 8 years and learned a lot more. I was born in Southern Maine, but lived most of my life in the San Francisco Bay Area. When I decided that I would like to some day move to a more rural area, I realized that what I'd miss most was the variety of foods available. So, I started to teach myself to cook the foods of India, and have gained sufficiency enough to slake my desire for dals and curries and their lovely vegetable salads and sambhars when the mood strikes as I now do live in the Central valley...many Mexican restaurants, a few Chinese, and lots of burgers. My latest project is to learn Thai, but I've just started that. In addition, I dabble with various African and European cuisines, and of course, there is always good old American food! I bake for other people (I don't care for sweets as a general rule) can lots of jams,marmalades, relishes, and pickles. I have a real passion for vegetables, but am too much a carnivore to give up meat...though if I had to make a choice I'd rather do without the meat than do without the vegetables. I was in the restaurant business most of my adult life, going from waitress to head waitress to manager in a foo-foo fancy restaurant (after the Japanese place) where the chef often hit me up for menu ideas...the menu changed every month, and he got tired of thinking up new things. We'd toss ideas around and get into arguments about what was feasible and what would sell, but we had fun and he was always good about giving me credit when he used my ideas or recipes. Now I'm in business with my husband, and mostly just cook for us. When my cabinets got filled with all my spices, various grains, legumes, flours, rices etc., my sweet husband built me a whole pantry worth of shelves in the garage...which are now full...dunno what the heck we'll do now. :O The problem with multi-ethnic cooking is that you have to have SO MANY ingredients on hand! I love this forum because very few of my friends even know how to cook, let alone have a passion for it, and I can see that many here do. I am also very impressed by how positive, encouraging and helpful all the posters are. With cooking, there is always more to learn and no matter how accomplished you are, there is always someone who can teach you something. And, no matter how experienced a cook or how inexperienced, burnt carrots are burnt carrots and cursing under your breath at the botched mess in a pan before you throw it out and make sandwiches for dinner is sometimes really therapeutic lol. One of my biggest cooking problems is that I very rarely follow a recipe exactly...in fact, I generally use them as sort of an "outline" to what I end up doing. Or, I do a lot of just throwing things together because they sound good. So when someone asks me for a recipe, I'm at a loss. Also, we have a running joke, my husband and I, that if he really loves a dish I make, he'd better savor every bite as it will never taste exactly the same again! Lately, I have started trying to write down what I'm doing as I do it with mixed success. Anyhow, nice to meet y'all!

Just finished a quite enjoyable read called "The Great Filth: The War Against Disease in Victorian England" by Stephen Halliday (2007). (The same author wrote "The Great Stink" about that hot summer in London when the Thames smelled horrible and affected the politicians at the Houses of Parliament enough to get them in gear about the city drainage system.) The topic was great and I'm always up for a delve into Victorian times, social history and medicine, and so most of this was truly fascinating. And I liked the approach that Haliday took which was more of a big-picture approach and gave appropriate kudos to engineers and architects and some reform-minded politicians who all helped to make public health safer. One ongoing thing that kept annoying me (and this is my permanently switched-on Editor self talking) was the actual format of the book. You could tell that Haliday had done his research - this is good. However, you could also tell that this book was a bunch of essays written at different times and then patched together. There was a lot of repetition and only some vague continuity between the different topics, and I think it's a bit lazy for an author to do this instead of finding new material or reworking the info differently. The thing that galled me the most was that Haliday (writing in 2007, mind you) kept referring to men and women in different ways. When males were first referenced, they had both their first name and their last name (surname) and then after that first mention, were called by their last names only. The women, on the other day, were first mentioned with first name/last name, but then referred to thereafter by their first names. This struck me (as an editor) to be infantilizing for these brave and smart women of the times in comparison to the male characters who were featured. I saw this early in the book, and then saw that it continued as a formatting choice throughout, and it started to quite irritate me. I don't know why Haliday made this choice (or perhaps his editor did). Published in 2007 means that it is recent enough for people to be aware of gender bias in writing, so I don't have an explanation for this. I know - nit-picky, but it affected my overall reading experience. Why not first name/last name as first ref and then revert to last names for everyone regardless of gender? So - content was good (apart from the repetition) and there was a nice bibliography at the back for further reading. And I learned things - but it was all a bit marred by this gender bias thing that has little excuse for existing in this day and age. Speaking of Victorian medicine, whilst we were in London, we visited the Hunterian Museum (housed by the Royal College of Surgeons) and packed with historical medicine artefacts. Fascinating. Smallhouse: Thank you for the links to your friends new kitchen. I like it! And it is so helpful to see how some ideas have worked out in small space. TBB123: Our upstairs is not too-too convoluted, but we do have a room that was divided in half. Both rooms are useful, but one is a weird shape. If your son ever puts info on his house online, I'd be very curious to snoop into what they've done with it. (I haven't gotten the chance yet, but I will map my other two floors and post the diagrams to this thread.) Brewcat: Happy hunting for renovation ideas. I am going to order a copy of the book you mention. I have read a little bit on rowhouse history, since I live in one and am (barring a massive career shift) setting down roots here. But what I read was not super detailed. I bet the book would be very illuminating. Maybe I could even figure out when our house was built... I have a rough idea but its really rough. Thanks for your observations re: the real estate market. My broad impressions are in line with yours on Fed Hill and Canton. I am uncertain what is true in my own market (Hampden). The market is not, I think, nearly as robust; at least, the home values are not as high as Canton. There has been a noticable uptick in buying and selling since I got here (I bought during the housing crash), and all the sudden people are gutting properties and doing the total overhaul inside that tbb123 and 4kids mentioned. Will the trend continue? It seems very recent, almost like it started last summer. I'm not sure I trust it yet. It does make me feel optimistic about the wisdom of smaller projects, esp if they improve aesthetics. I did try to do a little survey of what was up for sale this spring. A lot of houses have 2 baths, and many of them - not even the totally overhauled homes - have those baths above or below first floor. A lot of people who could use a basement seem to have done so. But it's also not super hard to find places that do have the first floor bath. So if a buyer wants it, she will have a choice of houses, and some will offer it. My suspicion is that, in terms of the market especially, there is wisdom in holding onto the powder room. One reason a person might consider Hampden over some other areas is that you can get a little more space for your money, you may be able to get a little yard, and the prices for the not-totally-overhauled houses is still reasonable. My observation is that this has attracted a lot of couples with babies and toddlers. And that, as some have pointed out, makes the first floor bath an asset. Also, having looked over our house very hard this last weekend, I realize that it might be difficult to find (a lot) more bathroom space on the other floors. So if I have space for a powder room on floor 1, it might be a bad idea to erase it. One advantage of the daylight rowhouse layout is that even if we keep the back partially blocked by the powder room, we could invest in nice windows all along the wall that is not shared with neighbors. It is mostly closed off right now, but it is south-facing and very bright. I suspect it that more windows would really open up and brighten the space.

Oh Lars, too often I have felt like your doppelganger.
Along the lines of what jc said, you do eat meat, so what about one seared chop, steak or piece of fish? With a little pasta and a salad or other vegetable?

Make enough for two and eat it two nights in a row, easy if it is great. But sear the meat each night.

Order a pizza! Be wild and carefree!

Funny how cooking for one is a problem for some. For me it's a treasured event. Expensive protein (and other expensive ingredients) suddenly become affordable, I don't have to worry about who (other than me!) will eat what, I can cook on my own schedule, and if it doesn't turn out as well as I dreamed it doesn't affect anyone but me.

Suggestions? Well tomorrow morning I'd start with a dry aged NY Strip and perhaps a lobster. With a poached egg and buttered toast so I'd feel better about calling it breakfast. Then a small lunch of perhaps foie gras and salad. Dinner, probably go out for something, anything, which the family would not enjoy.

I do have lobster and King Crab legs in the freezer, but I do not enjoy that as much when I am eating alone. I have leftover chicken breast and leftover pasta sauce for tonight, and so I would only need to cook a single serving of pasta. I would buy a nice steak, but then I would have to go to the store, and I do not need anything else. I wish there were a butcher shop in my neighborhood like I had in Culver City.

BB, I have found that I can eat certain cheeses in small quantities with other foods, but not milk or soft cheese. Milk in coffee very much upsets my stomach, but that might be partly because of the coffee, which I almost never drink.

Lars, I've never tried reheating carbonara but I'd save some of the pasta water from the day you make it - 1/4 to 1/2 cup. Reheat the water in a skillet, non-stick would work best, then add the pasta and gently heat so that the egg doesn't scramble. Toss and eat!

The other alternative is to make a frittata with the leftovers.

Mmmm, now I want to make it too! It's my very favorite pasta dish and I've finally found the perfect recipe after years of disappointments.

Carbonara sadly, does not fare well in cooked form. Reheating tends to push it to the scrambled egg stage. It's also probably not advisable to try to eat raw eggs you stored overnight -- nature's packaging is best for that. You can precook the other ingredients and then add the egg later.

Since there are only two of us, and since DH went veg, I often cook for one. Bacon makes a great pizza pairing with thinly sliced potato, onion and sage -- and a strong cheese , which I understand wouldn't work for you. If you have scallops or shrimp, try some bacon wrapped skewers. Bacon also makes a great base for an americanized fried rice -- a great way to repurpose day 2 rice.

I've been thinking of carbonara for the last four days -- I just need to get some fresh eggs.

Ground beef is a good idea, and I might buy some chuck and grind it myself. I have leftover potato frittata also from last week-end.

Yesterday there were no hotels available in Agoura Hills, and so Kevin had to come back, and I made linguini with leftover pasta sauce that I made a few days ago. I could have made this just for myself, but now there is no more leftover pasta sauce. There is no telling now whether there will be hotel space tonight, and so he might be back again - very tired.

Normally when I'm alone, I do have something on a tortilla. I have leftover Tom Yum soup that I made on Sunday and some frozen shrimp dumplings that I can add to it. Lately I've been adding gyoza to Japanese or Thai soups that I make.

Hey Lars,
Tell Kevin that Calabasas, Agoura and Westlake offer some good eating. He might want to grab a bite and hit the road after 7pm for easier traffic. The 101 to the 405 heading south is terrible in the later afternoon and early evening. If he takes a canyon to the 10 he would likely have an easier commute.

Over the weekend I read an article about the Sony hack and the film studios in general baring responsibility for what they choose to show on screen. From the crazy driving in the Fast & Furious series to this "send up" of Korea's dictator. Today's news is even more disturbing. I hope the payday for this movie is worth the nightmare it has caused!

They have my SS number also because Kevin has me listed as his beneficiary, and so I may be a some risk as well, but Sony is providing insurance against losses that may occur as a result of stolen information. Kevin froze his credit listing last week, and so no one can open a credit card account in his name. He will be coming home again today, as there were still no hotels in Agoura, but he will be spending Wednesday and Thursday night there. He is more concerned with where to eat in the evenings that he is stuck there - if he comes home, he will eat here. Do you have any specific recommendations for restaurants in Agoura? They had Japanese food for lunch one day that Kevin said was okay, but they would not want the same for dinner. Yelp has the best suggestions, and I will recommend Kevin to try that.

Now I'm down to only two nights by myself, and I'm definitely ready for that!

Thanks! I emailed Kevin those suggestions. I also noticed that my link to Yelp is a different page now from when I linked it - different restaurants and different photos. I guess it gets updated hourly, depending on new posts. It looks like there are some good Middle Eastern, Szechuan, and Japanese restaurants that he might like.

Right now I think he has other things on his mind. There are some strange things on Facebook right now regarding this issue.

He might have to go back next week, and I told him that if he does, he needs to make sure that Sony gets the hotel reservations in advance so that he will not have to commute more than Monday morning and Friday evening.

This Friday we are invited to a book signing that my friend Mark is having at Hollywood Heritage (across the street from the Hollywood Bowl) for his new book, which he co-authored with the granddaughter of Cecil B. DeMille. (They were both on CBS Sunday Morning last Sunday promoting it.) However, with traffic the way it is, Kevin won't be able to make it, and I do not want to battle the Hollywood Bowl traffic by myself. No one I know wants to go through that traffic, and so I will have to see Mark another time.

I just noticed that Mark will be at Book Soup this Thursday, and so maybe I can go there by myself to get the book. West Hollywood is not too far for me to drive, and the traffic might be less on a Thursday.

FOAS, that's exactly what I do when I "get" to eat alone!!!! Lars, the way to solve the, "going to the store, but not needing anything else", pretend you're European. You're only buying what you need to make the meal. It also lends an elegance to it, making it more special. I am happy to do this a few evenings in a row. Probably would get old if I had to do it a week or more.

I could pretend I'm European if I had European style markets to go to like I did in San Francisco. There was a great fruit and vegetable market across from my flat on Guerrero Street, and I used to go there every day, and I would go to the corner deli frequently as well. However, I could walk to those markets and not have to wait in line. I definitely shopped European style when I lived in SF, and I would go to several markets in one day because I got different items at each one. I really do not like supermarkets but have fewer choices here. I never liked "one-stop" shopping.

There used to be a small market in my neighborhood here, but it closed and became a Dollar Store - like we needed another one of those.

On Sunday afternoon, the market I normally go to here (close to the airport) is filled with Chinese stewardesses, and so I could pretend I was a Chinese stewardess, but I doubt I would fool anyone - they are very tiny.

What I need to do is shop from my freezer! I'll give that another look this week-end. If I buy any more food, I will not have a place to put it, at this point.

Actually, as it turned out, he has managed to be able to work at the Howard Hughes Plaza, which is five minutes from our house. So Monday was his last day at Agoura Hills, after being there most of last week. However, I had already planned to be eating alone and bought a pork loin, which I roasted Monday evening. Kevin won't eat any of it, and so we are having somewhat separate meals now. Yesterday he met me at the house for lunch, since I am four minutes from home and always go home for lunch. I made sandwiches for both of us. Tonight I will be cooking some Italian turkey sausage with potatoes for both of us, and then he can have the leftovers for later. I bought some spinach for a souffle, but I will make that probably on Friday. Sony is expecting it to take until March for its operations to get back to normal.

Kevin was depressed yesterday and said "The bad guys won," because Sony has pulled the movie. The major theater chains were refusing to show the movie because of the bomb threats. I told Kevin that bomb threats work. Not sure if the movie will come out on BluRay yet, but it will not be available for "On Demand" as very little money is made through that. Some of the other studios were worried that people would stay away from all theaters if this movie were shown.

That's just terrible -- indeed the bad buys one and freedom of expression lost. I hope Sony does them one better and releases the movie free, in any as many places as possible, and air drops DVDs into North Korea.

I was thinking about this thread this morning. My family packed up and left without me for a few days because I have to tend to my mom who came hope from the hospital on Christmas Day. She's doing well, but needs assistance with medical procedures three times a day which apparently they think an 85 year old woman who days before thought she was on her deathbed could take care of herself. Unreal.

Anyway, thought of this thread. Not a breakfast I'd do every weekend, and thank goodness no other hungry mouths were waiting for me because I was inexplicably out of white wine for my lemon-butter sauce so I had to wait for noon to buy that. Presentation? Somehow I ended up eating on a cutting board. Who cares, no one's here to see!

Lobster is probably my favorite use of sous vide. Poached eggs become relatively foolproof as well.
