I use celery very often, if I want to plant, the quick way is to buy celery with the roots at the oriental market, you can also root regular celery cutting the bottom and root it in water or soil. I make the best celery salad, I use the whole bunch of celery thinly sliced, green peppers, thinly sliced onions, meyer lemon sections, parsley and cilantro. With or without feta and egg. Silvia

Nice. And yes, take it out of your water bath and rinse under your sink cold water faucet. Fresh water every day or when you think of it...three days is ok but the water gets funky. Half your amount of water is best. Just the very bottom needs water. Every time I change the water I give the root a nice rinse. I just started another yesterday as well as a fennel bulb end. Plenty of time. Not affected by early Fall frost. One of my early celery plants is about 4 feet tall and went to seed. Pretty plant in my herb bed. Take the big outer stalks off. Then next week a few more. Leave just a few when planting unless they are rotty soft. The plant really has no use for them. I'll post a pick of the fennel if it does well.
