The Lost Garden by Helen Humphreys may offer some interesting themes.
Set in the early days of World War II in England, a group of young women volunteer in a war-effort farming experiment on an abandoned estate in Devon.
Not just about horticulture but also love, loss and healing.

"The Samurai's Garden" by Gail Tsukiyama. Sort of a coming of age story about a Chinese boy who is staying in his family's vacation house in Japan in the time leading up to WW II, while Japan is preparing to invade China. Food gardens and contemplative gardens both make an appearance.

I Never Promised You a Rose Garden by Joanne Greenberg
This class could discuss the challenges of growing a healthy rose garden: black spot, powdery mildew, aphids, wilt, successful pruning, first aid care for gardeners trapped in thorns when trying to prune overgrown rambling roses.

I couldn't resist having fun with this:

Hi. I'm new here and have been mostly listening in over in the corner for a few days. But since I love reading and gardening, this thread caught my attention. The first title that came to mind was Flowers for Algernon. I suppose it could serve to show how to care for beautiful but fragile flowers and how to love them even when they begin to fade.
