There is no traditional Stromboli or Calzone. Use your imagination. Brocolli and other Vegetables are used , including fish. Remember, Tiella of Italy. That's sort of a Calzone made in a Pie Shape. I made Lou's pizza dough, divided it in three pieces. Just rolled them out thin, about 8X14 inches and spread fillings over top. Roll them up and cut slits in the top and brushed with an egg wash. Fillings of broccoli and mozzarella, pepperoni and roasted red peppers, onions and mozzarella. The food critic and DS were very happy with the results. Place on a lightly-oiled baking sheet. Bake in a preheated 425 degree oven 20-25 minutes. Posted by OhioMom 2 comments Labels: Bread Calzone ...."I get by with a little help from my friends" I made a batch of Lou's pizza dough yesterday, wanted to make Calzone. I have never made them so I contacted my friend Lucy for help. Thanks Lucy for all your hints and tips ! A Calzone is an Italian turnover, made with pizza dough and filled with cheese, vegetables or meat.  Lou's Pizza Dough 3 cups all-purpose flour 1 cup whole wheat flour 1 tsp. salt 1 pkg. Active Dry Yeast 1/2 cup warm water 1 Tbsp. sugar 1/4 cup oil 1 cup warm water Mix yeast with 1/2 cup warm water and sugar, let proof. Add oil and 1 cup of water to yeast mixture, stir. Combine flours and salt, add to yeast mixture. Knead on dough hook for 5 minutes, or by hand for 10. Cover and set in warm place till dough doubles in bulk. Punch down, divide into quarters for Calzone. Filling: Large bunch of broccoli, chopped up 1/2 cup Ricotta cheese 1/2 cup mozzarella cheese 1/4 cup parmesan cheese 1/4 cup Feta cheese Cook broccoli in boiling water for about five minutes. Combine cheeses in a bowl. Take one quarter piece of dough and pat out into a circle, mound filling in center.  Fold dough over and seal edges well. I used an egg wash on top of mine. Place on a lightly oiled baking sheet, or a baking stone if you have one. Calzone fresh from the oven, oozing with melted cheese. I think Shepherds Pie is a great choice! A bit of a change up from the chicken and pasta dishes and perfect for Fall. Here is my recipe Shepherds Pie 4 tbsp vegetable oil 1 1/2 pounds ground beef 3/4 cup diced onion, about 1/2 medium 1 cup diced celery 2 cups diced carrot, about 2 medium 2 cloves garlic, minced 1 heaping tbsp tomato paste 2 tbsp flour 1 cup red wine (can omit)_ 2 1/2 cups beef stock ( I use 1/2 stock one half my brown sauce) 1 sprig rosemary 1 sprig thyme Salt and pepper to taste 4 medium cooking potatoes, peeled and quartered 2 cloves garlic, smashed butter 1/4 milk 1/4 cup grated parmesan cheese salt and pepper to taste 1. Add 2 tbsp vegetable oil to large pan over medium high heat. Add ground beef. 2. Cook until excess liquid is gone and meat is starting to brown. If required drain of any fat. 3. Remove meat from pan and deglaze with red wine or beef broth, let reduce slightly. 4. In another large pot, add remaining vegetable oil over medium high heat. Add onions, carrots and celery; cook until soft but not browned, about 5-7 minutes. 5. Add garlic and add tomato paste. Brown paste slightly then sprinkle in flour. Cook out for a minute or two 6. Add in red wine, scraping up brown bits from bottom of pan. 7. Add beef stock, rosemary, thyme. Return browned meat to pot. Simmer, covered for 20-25 minutes. 8. Remove lid and continue cooking for another 10 minutes; liquid will reduce and thicken. Remove rosemary, thyme . Season well with salt and pepper. Potatoes 1. Add quartered potatoes and smashed garlic to medium pot. 2. Boil until potatoes are tender but not overdone, about 15-20 minutes. 3. Strain potatoes; let dry out slightly in colander before returning to pot. Add milk, butter, pepper, Parmesan cheese and more salt if necessary. 4. Mash using a potato masher. Preheat oven to 400. Spoon filling into the bottom of a 10-inch round casserole dish. Top with potatoes. Grate parmesan cheese on top and dot surface evenly with butter. Season with salt and pepper. Bake on middle rack until top is golden and filling is warmed through, about 20-25 minutes. Let stand for a few minutes before serving. For a crowd I make the meat mixture a day or two ahead and refrigerate. I also make the potatoes a day ahead. On the day of, I bring the meat to a low simmer, just barely heated through, then top with the potatoes and throw in the oven a half hour or so before serving.

Our school had a junior-senior prom. It was a small school so I guess they needed two classes to fill the Elks Club ballroom. Don't remember my gown or date my junior year. I'd have to get out the yearbook--wherever it is. :0 My senior year I was dating a guy from the next town. I was very small and we had a terrible time finding a gown to fit. I don't know why my mother didn't make it. She always made our clothes. About a month before prom, mother and daddy went to Columbus, Ohio to visit my aunt and uncle and mother found the prettiest dress. It was a size 3 and she had to alter it. It was short, dusty rose organdy with spaghetti straps (nothing to hold up a topless gown). Across the bodice was a row if deep rose and dusty rose organdy flowers that could be removed (I kept them). I loved that dress! My date brought me a corsage of pink baby roses with babies breath that I pressed and kept for years. After the prom ended at midnight (a treat for all of us to be up that late back then), the Seniors had an all-night party. It was also at the Elks Club. We all changed into bermuda shorts, which were the new hot thing, and danced, played games and ate until about 5 when they served us breakfast. It was a lot of fun and emotional because we were graduating and sure we'd never see each other again. You know how emotional HS girls can be. A lot of kids in my class ended up back in R-ville. Nice little town to raise a family. It'll be 50 years next month since that prom night. Sure wish I was going to the reunion in June!

This freezes well: ENCHILADA CASSEROLE (serves 6-8) 12 corn tortillas 2-4 TBL oil 3 TBL flour 1/2 tsp salt 1/4 tsp paprika 10 can enchilada sauce 1 1/2 cups milk 1 cup grated Cheddar (I use a combo of Monterey Jack & Cheddar) 1/2 cup sliced ripe olives 1 lb ground beef 10 oz can jalapeno bean dip Salt & pepper to taste 1 large tomato, chopped GARNISHES: Shredded lettuce, tomatoes, sliced avocado, sliced ripe olives In a small skillet, gently fry tortillas in 1 TBL of the oil, adding more as needed; drain on paper towels. In a medium skillet, combine flour, salt & paprika & slowly stir in enchilada sauce until smooth. Add milk & cook over medium heat until bubbly. Add cheese & olives & continue cooking until cheese melts. Remove from heat. In a large skillet, brown beef & onion, stir in bean dip & season w/salt & pepper to taste. Place 1/3 cup of the meat mixture & a small amt of the tomato in the center of each tortilla & roll. Place rolled tortillas, seam side down in a 9x13" baking dish. Pour cheese sauce over top & bake uncovered at 325° for 20-30 minutes until bubbly. When ready to serve, garnish.~~Bound to Please I haven't made this in eons but it's good, easy & can be frozen: SCRAPPY BEEF FOR SANDWICHES (makes 10-12 sandwiches) 3 lbs chuck roast 1 onion, chopped 3 cloves garlic, sliced 1 1/4 cups water, divided Salt & pepper to taste 1-2 TBL flour Buns or rye bread Horseradish mustard (optional) Heat oven to 400°. Trim excess fat from meat. Place in shallow baking pan & bake until browned. Drain fat. Add onion, garlic & 1 cup water. Cover tightly. Reduce oven to 350°. Bake about 2 hours or until very tender. Remove meat from pan & shred with a fork. Season w/salt & pepper to taste. Thicken juices from meat using flour mixed with remaining 1/4 cup water. Return shredded meat to pan. Bake until heated through. Serve on buns or rye bread with horseradish mustard, if desired.~~Fare to Remember
