Felt like today was Christmas

a few days early!

DH came across a box of stuff that had gotten misplaced in the basement a few years back. I knew it was there, but couldn't figure out which box was the one I wanted, and I really didn't need the stuff that much.

Well, a lot of stuff is coming to light with moving--LOL.

When DH brought this one up--sealed with at least a roll and a half of packing tape (he's VERY thorough and ALWAYS seals stuff well when he stores it!)--I was delighted. It was a box of kitchen stuff that a sponsor had provided for me to use to cook with in a contest some years ago. After the contest, they sent all the equipment we used to us. That's not real common. Well, when I opened the box, I was floored at all the stuff in there. I'd totally forgotten how much there was. Going to come in so very handy, since we're between 2 houses now. Good pots and pans, knives, a pretty lasagna pan, an extra Atlas machine--all sorts of little gadgets and stuff. Well, that was the bright spot in our otherwise icy, dismal day.

Wow what a nice surprise! Now you can make a great pan of lasagna. Would you make the lasagna noodles as well with the Atlas machine? Is it the kind with the electric motor or the hand crank, which is what I have. happy cooking !!

Mcmann - I don't know how I did that either. I just named each one after I loaded them on Photobucket. The GKs got a play kitchen for Christmas and DD was making felt food for it. It was so cute and looked like fun so I had to try it. I do most of the sewing by hand but do use the sewing machine some. DSIL says he is the only one in the family allowed to make ribs!!! These are really fun to make and craft felt is only 20 cents a sheet. Add a little stuffing and you've got a meal. (I made my pasta and the cheese for the pizza from flannel b/c it "puddles" better. DD had a fried egg, bacon, ham sandwich, hamburger in a bun with lettuce, tomato, pickle, tea bags, bow tie pasta and ravioli. I wish I had taken a picture of her "food". She was making an eggplant last time I talked to her. I think I might do strawberries next. If you do a search for "felt food" you will get lots of ideas. The link below is for my favorite. deedles - I think that a big part of the issue is just what you said, "LARGE SOMETHINGS where nothing used to be". Each time we get another step closer to our kitchen being finished, I get that "uh-oh, did I screw up" feeling. It's normal...it's a lot of money and not much options if it's not "right". And if you're like me, there's really one chance to get this right...we're for sure not going through this again any time soon. Just yesterday, we started to get our handles put on. As much as I wanted something other than blue tape...I'm looking at our beautiful wood...and I'm feeling rather "meh" about the handles. I wanted to look at those and say, "oh, that's so perfect." Instead, I'm looking at the handles and going, "Well, it's nice that I can finally open the doors properly now." Not really a chance of a redo there...holes are drilled. I imagine in a few more days, once I adjust to our kitchen having the handles (that we've been waiting for to be put on for about 1 1/2 months now), I'll look at it and think it looks just right. But for now, I'm feeling that uh-oh feeling you described. Knowing the bits and pieces that I do about your kitchen, I know it's going to look stunning when it's all finished. :)

This is a fun thread. I've had such a weird love/hate relationship with my new construction home. We bought the land over a year ago, then decided to put off building until Spring. Over the past fall and winter, I had so many misgivings about building the new home at all. We were staying in the same township, same school district, etc., but were building a bigger home on a much bigger lot - so money worries exacerbated the whole idea of the build, and the fact that I've never been totally in love with the new area (moved from NJ to NE PA 5-1/2 years ago) added to my misgivings. In March the build just sort of started up; I'd spent the winter in denial that we were really going through with it, and then in the midst of the build, it took us four solid months to sell our old house, so I was afraid to like the new house for fear that we would end up putting that one up for sale and see which one went first. We ultimately accepted our first and only offer in July, closed on both homes in September and moved in on Sept. 15. It actually felt comfortable and homey right away; it is a beautiful, large home, with a lot of acreage, and it helped that my daughters felt at home almost immediately as well. (Naturally, staying in the same community and same schools helped their transition immensely, and ours too.) Ironically, now that we have been in just over two months, I'm starting to discover things that I don't like about the house that I hadn't really focused on before. And I mean BIG things, like dh and I really aren't that in love with the two-story foyer (like that's ever going to change!), the fact that my daughters' bathroom is directly above the stairway and can be seen from the foyer and the huge window on the front wall (how did I not notice THAT gaffe in planning - I modified the home plan myself!). And small things, such as odd placement of light switches, closet shelves too high to be useful for my girls, etc. etc. My dh and I are so fortunate to be here, it is a great home on five acres on a cul-de-sac in a small, quiet, new community of only 20 homes, we have so much to be thankful for, but still . . . we both agree that new construction is great in that you can design things your way, and get everything brand-spankin' new, but it also allows for so much second-guessing and re-thinking and re-assessing, and you have only yourself to punish!

I actually already had an Atlas--this one's exactly the same model--crank version. Yes, I've done lasagna noodles with it (I have the lasagna cutter thing, even--do you?) It had actually been a lasagna dish I was making in the competition years ago--the reason I ended up with the extra A.

Truthfully? I find it's really faster just to roll my pasta dough with a rolling pin, than to get out the machine, set it up, etc etc etc.

Probably won't be making lasagna this holiday, but the pan is a pretty one that will be nice for one of the dishes I'm serving at the family get-together.

Azalea, if you could, would you be willing to share your pasta recipe? After hearing it was easier to roll out the dough yourself it makes me want to try it again. What type of flour did you use?

I basically wing pasta.

More often than not, the flour is just regular all purpose--because that's usually what I have on hand. I have used semolina--which was great, of course.

Basically, for each cup of flour I use, I add 1 egg, 1 tablespoon of oil (either safflower or olive, depending upon my mood), a couple of pinches of salt, probably some pepper. I pulse that in the food processor until crumbly, then drip in water until the dough comes together and is the proper consistency. Wrap in plastic and rest 20-30 minutes, then roll and cut as needed.

That's the basics--but I often add in some herbs or spices--using whatever will go with the way I'm serving the pasta. Sometimes some garlic, oregano and/or cheese. Sometimes, I'll add lemon rind and lots of cracked pepper. Sometimes I'll puree some sun-dried tomatoes to add. I've even done sweet lasagna, by adding a little sugar and some ground nuts to the mixture, then making a lasagna with a sweet ricotta filling, alternated with fruit.

And I've used half white, half whole wheat for the pasta for my fresh vegetable lasagna--I layer the whole wheat noodles with thinly sliced fresh vegetables, ricotta and fresh mozzarella. Oh, WOW! I've been trying to figure out what special dish to make for Christmas--my very finicky dd is coming over--that's one of her favs and I haven't made it in ages. THANKS!!!!!
