I made the Wild rice soup for lunch today. It's excellent.

I didn't have to cook so it was cornbread and milk and a lunch meat sandwich.

I had french toast. Did not feel like cooking.

I had made a nice pot of pinto beans with ham so we had that along with cornbread. It was so good!!

Raven, what is the sausage and wild rice casserole you are mentioning?

I made spaghetti yesterday and will have some again tonight.

But I really want to go to Nita's instead.

jasdip it is one that was posted here on the recipes area, my husband loves it and has asked for it a few times now. I do a few changes to make it more to our liking.

sausage rice casserole
1 pound Breakfast Sausage
1 6-ounce box Uncle Ben's long-grain and wild rice
2 small onions, chopped
1 4-ounce can mushroom pieces
1 10.75-ounce can condensed cream of mushroom soup
4 tablespoons butter
Steps
Preheat oven to 350 degrees F. Cook rice according to package directions. In a heavy skillet over medium heat, cook sausage and onion until thoroughly done, about 4-5 minutes. Drain. Combine all ingredients except butter and pour into casserole dish. Dot top with butter. Bake until bubbly, about 25 minutes.

I also add some diced bell pepper and celery to this recipe and add it to the cooking sausage to get it tender, I also used fresh mushrooms and cooked them with the sausage. I use less butter on top. I cooked mine in the oven longer too about 35-40 mins. The sausage I use is Tennessee Pride mild. I add a bit of seasonings to mine, some Tony's and some garlic salt. I used cream of onion soup this last time.
There are never any leftovers once my husband gets hold of it. LOL

I have a question about the rice. Wild rice takes a long time to cook, so if the long grain and wild are mixed together isn't the white rice cooked a lot faster than the wild? How does that work?

patt43.....wild rice cooks at the same rate as white.....it's brown rice that takes a LONG time to cook. Not the same thing...

Nicole, my wild rice took about 50 minutes to cook????

My wild rice took about 40 minutes when I made it for my soup yesterday.
