I brought Hubs home this morning, he is doing well. At our Senior party yesterday, they served roast beef dinners and just piled the beef on the plate. I had ordered a dinner to bring home to hubs, so I just put that in the fridge, and he had some of it for lunch. Tonight I'm going to make a pot of Bear Creek veg-beef soup and put the left over beef in the soup, then make some biscuits and some honey butter to go with it. It is probably what we'll have tomorrow night too.

I made curried chicken salad this morning and some orange-cranberry muffins. The muffins were from a Krusteaz mix and are they ever good. Just add water LOL! I wanted to make a tomato pie but we didn't have tomatoes and I was too lazy to go get :-)

It's been another dreary day!

I picked up two Cuban paninis at my local deli-ham,pork,swiss with pickles and honey mustard. I'm just not in the mood to cook. I did a lot of Christmas cards today. And next week I'm baking.

Since I've been sick we had not been out of the house all week so we hit the grocery stores for fresh veggies and fruit, and canned cat food since it is on sale! We only bought 90 cans so will probably get the same amount one more time before the sale ends Wednesday night. We average 6 to 8 cans a day so price is important! LOL!!

We stopped at Perkins, Andy had breakfast and I had soup/salad. Not sure what we will have for supper, maybe a pizza.

We had boneless, skinless chicken thighs, milk gravy, baked potatoes (spinach for me) and peas. For dessert we had a store bought Italian Cream cake. The cake is very rich. I had a small sliver and told my husband he should not eat much of it as it is so rich. Well, he decided only to eat half of his supper and then proceeded to eat half of the 9 inch cake! I should not have fixed supper, just served him cake.

We went to Target and then to Denny's. I don't know what DH had, but I had country fried steak, mashed potatoes and broccoli. Too full for anything else. I couldn't even finishe what was on my plate.

Lynn do your cats eat any dry food? How much are your tins on sale? My guys eat Friskies and I like to buy it on sale too. I've been able to get 3 for $1.19 at times.

Sherry, I've done that as well, it's why I keep chicken, beef and veggie stock on hand. When I do let my pan cook dry I quickly chop some onion, melt some butter in a pan, add in the onions and a bit of garlic. Once wilted stir in some flour to make a roux and slowly add in some stock. I have also used beef base but find it to be so salty that I stopped using it.

We had leftover lasagna, salad from Friday's dinner with friends and I made crescent rolls. Our guests took home all the garlic bread since we weren't going to be home most of the weekend and the cake we had for dessert because I thought it would be wasted here. I got a very rich dark chocolate cake from Kroger. I had to freeze Alex's no cheese lasagna because he didn't come back with us, dropped him off at the dorm.

I didn't know I could do that Lynn. Thanks! Hopefully I won't have a repeat of this again. Funny, I have let my pan cook dry before, to get the nice dark gravy, but this was obviously dry for too long.

steak and fries

Jasdip, we free feed dry food and the canned is also Friskies. They had it on sale, $11 for 30 cans, so we usually buy 120-150 cans when they do. One day when were were getting it an older gent was doing the same, he asked how many cats we had and in turn I asked him the same. He said he didn't have any cats that he fed 2 strays, that as long as he could afford to do so he couldn't see any animal going hungry. I liked him.

Speaking of gravy. At the restaurant I use cornstarch to thicken the broth. If you use flour without mixing it with water or milk first, your broth is not supposed to be boiling when you add the flour and it will not be lumpy after you start cooking it. I have tried this and never had lumpy gravy.

BenGardening, I've always used flour and water in a little jar and shake it.
I've been tempted to sprinkle flour on top of the juices....I've seen it on tv, but I forget about it, and I'm also worried that I'll have lumps.

So as long as the broth comes to a boil after the flour is added, it should be okay then.
