Recipe for those with lemon trees (and others)

I'm lucky to have made a GW friend who sends me wonderful lemons from her tree. I tried this recipe last night, with serious modifications (noted below). It was very good!

Lemon Pork Chops (from Cooks.com)

4 pork chops (I used three pieces of boneless pork because that's all I had)

1 clove garlic (I put mine through a press because I didn't read the recipe carefully)

1 bunch green onions, chopped (I used two thin slices of a large sweet onion, chopped)

1 tbsp. minced fresh parsley (I omitted it -- didn't have any)

2 tbsp. sherry (I had that!)

salt and pepper

1/2 cup water (I forgot that......told you I didn't read it carefully)

1 tbsp. oil

Salt and pepper the pork and brown in oil. Cut four slices from the center of a lemon and place a slice on each of the chops. Squeeze juice from the ends over the chops. Distribute remaining ingredients on top of the chops. Cover and simmer until tender, adding more water if necessary to keep moist. Serve over rice.

Interestingly, the garlic on top of the lemon slices turned bright green!
