Hanukkah starts today.....so.....

Today is the first day of Hanukkah,(not that I'm Jewish)but I found this recipe for Latkes on Ivillage. I think I may make some tonight. I've tried them many times, but I never had a recipe.

Latkes/Potato Pancakes

8 medium russet potatoes, peeled

1 medium yellow onion

2 large eggs, beaten

1/2 cup matzo meal

2 tsp. kosher salt

1/2 traspoon cracked black pepper

Vegetable oil for frying

1. Grate potatoes and onions in a food processor, using the shredding blade. Remove mixture to a bowl and replace shredding blade with steel blade. In batches, pulse-process the potato mixture for 10-15 seconds. Place mixture in a strainer over a bowl, and squeeze out extra liquid.

2. Reserve liquid. Wait 2-3 minutes; water will separate from the starch by rising to the top and the starch will be on the bottom of the bowl. Pour water out and use starch in step 3.

3. Place strained potatoes in a medium-size bowl. Fold in eggs, matzo meal, salt, pepper, and reserved potato starch. Mix well.

  1. In a cast-iron skillet over medium-heat, heat vegetable oil. Oil should be about 1 inch deep.

5. Form 1/4 cup potato mixture into pancakes and slide gently into oil. Let cook for 6-8 minutes or until golden on one side. Flip pancakes and continue cooking for 6-8 minutes. Drain pancakes on paper towels and serve immediately.

Tip: Latkes freeze beautifully. Cook according to recipe, cool, and freeze. Reheat at 400 degrees F for 10-12 minutes or until heated through.
