Pineapple Coconut Self Frosting Cake 1 8.75-oz can crushed pineapple in syrup 1/3 cup shortening 1/2 cup sugar 1 teaspoon vanilla 1 egg 1 1/4 cup all purpose flour 1 1/2 teaspoon baking powder 1/4 teaspoon salt 1/2 cup flaked coconut 1/3 cup brown sugar 1/3 cup pecans 3 tablespoon margarine or butter (melted) Thoroughly drain pineapple, reserving 1/2 cup of the syrup. Beat together shortening, sugar and vanilla. When creamy, beat in egg. Sift together flour, baking powder and salt; add to creamed mixture alternately with reserved syrup, beating after each addition. Spread 1/2 of batter in greased and floured 8" round or square cake pan. Try to evenly layer with crushed pineapple. Cover with remaining batter. In small bowl, combine coconut, brown sugar, pecans, and butter. Try to sprinkle evenly over batter. Bake at 350° for 35 to 40 minutes.

Yes, I did grate. I buy pre-grated at times, but swear something's been done to it; it just doesn't taste as good as home-grated. I'm planning to make your pineapple recipe at Easter. Thanks again, Glenda.

Pineapple Casserole-Miss GlendaÂs 1 (20-ounce) can pineapple chunks in juice 1/2 cup sugar 3 tablespoons all-purpose flour 1 cup shredded cheddar cheese DO NOT USE PRESHREDDED, grate your own. PRESHREDDED does not work with the pineapple 1/2 cup butter or margarine, melted 1 stack Ritz crackers, crushed Drain pineapple, save 3 tablespoon of juice. Combine sugar and flour; add cheese, pineapple and pineapple juice. Mix well. Put in greased 8 x 8-inch baking dish. Mix crushed crackers and melted butter together; sprinkle over pineapple mixture. Bake for 30 minutes at 350*F or until browned and bubbly Serves 6.

PINEAPPLE AU GRTIN 2. c self-rising flour 2 c. sugar 3 cans (20 oz. each) unsweetened pineapple chunks 1 c. (4 oz. shredded cheddar cheese 1/2 c. butter, melted 70 Ritz crackers, crushed Combine flour & sugar. Drain pineapple, reserving 1-1/2 c. juice. Add juice to flour mixture. Stir in pineapple and cheese. Pour into a greased 13x9" pan. Cover and bake at 350 for 30 minutes. Uncover and stir. Bake 10 minutes longer. Combine melted butter and cracker crumbs; sprinkle over pineapple. Bake, uncovered, another 10 minutes or until a knife inserted near the center comes out clean. Serves 16.
