Glenda's Pineapple Casserole - 2 questions!

One - is it served hot, or cold?

Two - Can I make it tonight, put it in the fridge and then cook in it the oven tomorrow? Will it change the texture of the cheese/crackers, etc.

Thanks!

I serve it warm. I think the crackers might not have the same texture. You could certainly get everything ready to combine by measuring and shredding and wrapping each ingredient in a Baggie ready to dump into the bowl or pan.

Put it all together the nite before. I always do that, EXCEPT FOR THE CRACKERS AND BUTTER. Refrigerate.
I do mix the crackers and butter together and put in a plastic bag. And refrig them, as well.

Take everything out that morning, set on counter for a while, then bake. So everything will get heated all the way thru. Then top with the crackers right before putting in oven.

My DS has been caught eating leftovers cold, standing at the refrigerator door.

But for meals, I serve warm.

Enjoy, Greta!

Yes, I did grate. I buy pre-grated at times, but swear something's been done to it; it just doesn't taste as good as home-grated. I'm planning to make your pineapple recipe at Easter. Thanks again, Glenda.

I did. My daughter's boyfriend said his stepmom made it and it was disgusting and my daughter agreed. But when my daughter read the ingredients she said hers was different as it had jello. Anway, I made her boyfriend try it and he came back for seconds. I sent my daughter the recipe and she made it again today for the two of them. It was a hit with everyone except my dad who hates pineapple. I'll make it again someday.

I reckon this is one of those "secret" recipes that have been shared around for a long time. I first learned it at a duck hunting camp in Stuttgart, Arkansas, quite a few years back, and have been making it ever since. Everyone we serve it to for the first time is enthused, and has to have the recipe. I've made it with Ritz, with Saltines (which is how I learned it), and with wheat crackers. It's all good. And, like Glenda, I usually double it.

Glenda, the casseroles I have made I have no problem with the package grated cheese. The only time it doesn't melt is when I have used pineapple.
