Craving Something Sweet in a Storm

Hi folks -

The Nor'easter in Massachusetts is in full swing. I got about 6-7 inches of snow this morning, now the sleet and freezing rain is happening, and it's supposed to change over to all rain later today. Can you spell B-I-G M-E-S-S ???

But ... I'm craving cookies! I'm not going out in this storm. I would love to have chocolate chip cookies or something like that, but have no chocolate on hand (what was I thinking!)!)!)

I've got the basics for cookies - sugar, flour, eggs. I've got milk, oatmeal, stuff like that. I don't love oatmeal cookies, but wouldn't mind something with oatmeal in it. I've got cinnamon, nutmeg, that type of thing.

Anyone have any recipes for something sweet made with just basic ingredients?

LOL! You're so funny. I had the same craving last night. I don't keep anything sweet. I rarely crave sweets.

Main Man spread peanut butter on toast with jam on top, then popped it into the toaster oven. It melts all together and it is very yummy actually. Just let it cool or the hot peanut butter will stick to the roof of your mouth.

When I want something sweet, I spread peanut butter on graham crackers or even on plain white bread. I have a roll of Pillsbury sugar cookie dough in the fridge,but I'm saving it for Christmas.

Chocolate's not one of my favorite flavors, but even I love a good rich brownie. Or a chocolate cake with port sauce. The recipe is from Ficklin Cellars website. Um...*whistles*...I've never used Ficklin port in it. We usually buy other brands. Guess I shouldn't admit that, huh? Eh, maybe I'll buy a bottle one day to see how theirs is. The cake is good, though. FICKLIN PORT CHOCOLATE CAKE WITH CHOCOLATE SAUCE This is a confection of chocolate sauce on dense-chocolate brownie-like wedges. It is a delicious and exotic dessert, with intense chocolate flavors in harmony with the spirit and vibrancy of Ficklin's port wine. Serves 12. 2 ounces (2 squares) unsweetened baking chocolate 1/2 cup unsalted butter 1 cup sugar 2 large eggs 1/2 teaspoon vanilla 1/4 teaspoon salt 1/2 cup sifted all-purpose flour 1/2 cup chopped walnuts (optional) Port chocolate sauce (recipe below) Coarsely chop chocolate squares. Heat butter in a heavy saucepan over medium-low heat until half melted. Add chocolate and stir with a wooden spoon until chocolate and butter are melted and blended. Remove from heat. Stir in sugar, stirring until dissolved. Add eggs, one at a time, and beat with spoon after each addition until mixture is thoroughly combined and shiny. Stir in vanilla and salt. Stir in flour. Turn into a buttered 9-inch round layer cake pan and spread smooth. Bake in a 350 F. oven until slightly firm to touch and toothpick inserted in center shows mixture is a little moist, about 25 minutes. Let cool in pan on a rack. To serve: Cut into wedges and top each with warm sauce. FICKLIN PORT CHOCOLATE SAUCE Combine in top part of double boiler over hot (not boiling) water 1 package (4 ounces) sweet baking chocolate, coarsely chopped, and 1/2 cup Ficklin Tinta Port. Heat and whisk until smooth. Makes about 1 cup, or topping for 6 to 8 dessert servings. Note: The sauce is the consistency of syrup. My DH has been craving Cal-Mex food, so we've been hitting our fav taqueria a whole lot: shrimp quesadillas, carne asada nachos (lighter than most with queso fresco rather than melted Jack or Cheddar), chile verde plates. So it was my turn to pick, and since I was tired of Cal-Mex, I chose Eritrean (similar to Ethiopian). We started with beef samosas, lovely little deep-fried wraps with a super-spicy chile sauce that could blow the top of your head off! Gommen (braised collards), zigne (spicy beef cubes in red gravy), bamiya (stewed sliced okra--yum!), alitcha dinish (potatoes & carrots in turmeric gravy), birsin yemisir wot (stewed red lentils), doro alicha (chicken yellow curry) -- colorful little piles atop freshly-made injera; the spongy, sourdough-like pancake that serves as both bread and flatware. All of this is "eat with your fingers", fun and messy. With it we had two of their banana-fruit juice smoothies, a popular accompaniment to this cuisine.

Congratulations on a great check up! As to giving in to the cravings. YES! I learned a long time ago that if I ate a little of what I started craving, as soon as I started craving it, I didn't go overboard with it. If I try to not give in to it, when I finally do, I eat and eat and eat and eat, whatever I'm craving. When I crave chocolate really bad, is usually when I get charlie horses in my feet and legs. If I remember to eat something with lots of magnesium, or take a magnesium tablet, I no longer have the charlie horses or the chocolate cravings. What I hate, is when I am craving something, but can't figure out what it is! That's when I really binge, trying to figure out what I am craving. Tami

I like roasted red bell pepper soup with grilled cheese. I've heard TJ's is good, but it's super easy to make your own. I add serrano pepper to mine for a little bit of heat. Roasted Red Bell Pepper Soup 2 jars roasted red bell peppers or 4 red bell peppers, roasted, seeded, and peeled 2 tablespoons butter 1/3 cup chopped shallots 2 garlic cloves, minced 1 serrano pepper, minced (optional) 3 cups chicken broth 1/4 cup half & half or heavy cream salt and pepper, to taste lemon wedges Saute shallots, garlic, and serrano in butter until soft. Add red peppers. Cook for 2 or 3 minutes. Add broth, cover and simmer for 20 minutes. Remove from heat. Puree with immersion blender until smooth. Add half & half or cream. Season with salt and pepper. Serve with lemon wedges. Don’t forget them! The juice adds a wonderful flavor profile to the finished soup.

I feel like baking too, must be because I'm freezing to death here. The thermostat is set at 70 but by this window it's freezing cold. My hands and feet especially. I'm getting ready to make a big pot of curry. I might bake up some almond bars too.

If you have Hershey's cocoa, make some no bake cookies. You said you had oatmeal and probably the other things. I always think of them as sort of a cross between cookie and candy.

Nope, no chocolate on hand. Lots of things I could do if I had some kind of chocolate, but haven't got it.

Sure hate to make you feel bad, but I have to brag!!!! My neighbor MAN just brought me a plate of Christmas cookies that HE baked--Thats a first--LOL

Hot Cocoa?
Peanut Butter cookies? Glendas recipe only needs 3 ingredients.
Pixistixs cake?

Hot Milk Cake - Pixistix
Old fashioned, simple, melts in your mouth!

4 eggs
2 cups sugar
2 1/4 cups flour
2 1/4 tsp. baking powder
1 tsp. vanilla
1 1/4 cups milk
1/2 cup (1 stick) butter

Beat eggs and sugar well. Combine flour with bk. powder and add to egg mixture along with vanilla. Heat milk and butter together until butter melts; gradually add to batter, beating until well blended.
Pour batter into a greased 9x13 pan. Bake at 350 for 30 to 35 minutes.

I'm not sure where the recipe for the topping came from, but this is what Tara used:
Brown Sugar Topping
1 cup packed light brown sugar
1/4 cup whipping cream
1 T unsalted butter
3/4 tsp vanilla
1/2 cup chopped pecans

Combine the brown sugar, whipping cream & butter in a saucepan. Bring to a boil, whisking constantly until smooth. Remove from heat. Stir in the vanilla.
Let stand 10 minutes. Whisk until of spreading consistency. Stir in the pecans. Spread over the brownies or cake. Let stand 1 hour or until set. Serve cold or at room temperature. Makes enough for an 8x8 pan.

Donna - c'mon over! I'm in Massachusetts, by the way. Not too far for you to bring cookies, right? :-) Lucky you to have cookies brought to you!

As mentioned, I've no chocolate (so no hot cocoa), no peanut butter. Just the very basics. I've got eggs, milk, butter, sugar (brown and white), flour, nuts, baking soda/powder, oats, that type of stuff. I could make the Hot Milk Cake without the icing; I think that would be yummy. Sounds wonderful.

Hmmm...come to think of it, I think I've got everything I need for Snickerdoodles! Yum - I love those. Now I'll do a search for a recipe.

Thanks for the ideas, everyone. Next time I'm at the store I'll pick up a few more "staples" (like chocolate and peanut butter! LoL). Heck, some cruched up Heath bars are great in cookies, too.

There goes my waistline - but what the heck, it's going to be a long winter!

snickerdoodles are good
INGREDIENTS:
1 tablespoon sugar
1 tablespoon ground cinnamon
1 cup shortening
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cream of tartar
PREPARATION:

In a shallow bowl, combine 1 tablespoon sugar and cinnamon; set aside. Cream shortening; gradually add 1 1/2 cups sugar, beating well. Add eggs; beat well. Stir in vanilla.
In a separate bowl, sift together flour, soda, salt and cream of tartar. Add sifted ingredients to creamed mixture; stir until well blended.

Shape dough into 1-inch balls and roll in cinnamon-sugar mixture. Place snickerdoodles 2 inches apart on lightly greased baking sheets.
Bake snickerdoodles at 400Â° for 6 minutes or until lightly browned. Remove to wire racks to cool. Makes about 4 dozen snickerdoodles.
