Experienced cooks...I need your help

I have accidentally gotten my white chili, that I plan to serve this evening, too spice hot. I have a cousin due in from Dallas and her hubby isn't much for HOT food. I thought I had things under control, but apparently the fresh, roasted chilis from NM were hotter than some of them I've already cooked with. Yikes.

Does anyone know how to cut fire? Thanks in advance.

I'm not sure about "heat" but I know if you add potatoes to a overly salty dish, it will work. Do you think maybe adding more beans, etc. to the chili would have the same effect??? Good luck!Bettye

I looked on the web and this is what I found.
You have to dilute the spice. You'd have to add more ingredients that are not spicy to your dish. It's hard to get it right and it might not turn out. Maybe if you made half the recipe again in another dish without the spices and than added it to your too spicy dish.

To counteract the heat you need something acidic. Usually tomatoes (like in chili or salsa) or Lemon juice (for other dishes) will tone down the heat. Add a little at a time and adjust to taste.

Melons like loose sandy soil and lots of room, and full sun. I till my patch every year and add whatever a soil analysis says that it needs. I direct seed around the 1st of May, and when the plants start to run, I give them a high nitrogen fertilizer, and feed them nothing else. Since i have limited space, I plant mine fairly close(4ft. centers), and keep the plants well watered, if there is no rain. I don't remove any flowers at all, nor do I prune the plants or remove any fruit. I leave them alone. Don't worry about the wasps, because they help with pollination. I don't hand pollinate. You should have ample, bumble bees, honey bees, and wasps to do the job for you. The ones that you've lost because they turned brown and mushy, were lost because they were poorly pollinated, and are naturally aborted by the plant. Once the melons have started to develop, and nature does not provide any rain, I water the plants at the base in the morning only. Watering melons in the afternoon will tend to cause them to split in the field. I also limit my selection of melons to ones that I personally like to eat and I know will grow well for me. I find that variety selection is one of the most important factors as to how successful you will be.

Karl, I agree with you about Serendipity - it truly is always in bloom throughout the growing season. (My Les Sjulin rests a little more between blooms, but it gets some shade, which explains that). Like you, I got my Bucks from Great Lakes Roses and haven't had a virus problem. Most of my Buck roses in my zone 5 garden are grown in the lower garden, where cold and frost settles and winds howl all winter. Other 'tough Bucks'' for me are Prairie Sunrise, Quietness, Malegaena, Paloma Blanca, Golden Unicorn, Carefree Beauty, Folksinger, Joseph Lamb, & Prairie Song. Some of them have to be severely pruned in the spring but they always come back nicely. I have had some Bucks struggle, but I'm never sure if it's the actual rose, or the rooted cutting of that rose that is weak, or perhaps where it was planted. Ownroots do take longer to get established, and are more vulnerable to problems when young.

In-ground Misty Blueberries: need help from experienced folks..

Okay, backpedaling just a wee bit: The regular fertilizer you applied. Was the nitrogen source in nitrate form? If so, this may have been fatal for your Misty (or any other blueberry). It may just be that the Misty's roots were just not established enough to handle the nitrate assault, and it has caused the demise of your Misty blueberry. That's the usual form of nitrogen in regular plant fertilizers :-( Remember, blueberries don't need a lot of fertilizer. They are basically very lovely weeds :-) If you're composting them, they're probably getting plenty of fertilizer. You can water with acidified water (vinegar is the easiest thing to use, to acidify the water), but you want to make sure you don't get too acidic. Invest in a pH meter for about $10.00 from your local gardening center to make sure you don't go below 5.0. Frankly, I think that's a lot of hard work. I would be more inclined to put my blueberries on a drip, and then address the pH with making sure the soil is properly acidified in the first place, then top dress once or twice a year with ammonium sulfate. And, the best way to keep your soil acidic is to to dig a hole about twice as big as the pot. Mix in azeala, camellia, gardenia potting mix. Add in a couple of tablespoons of soil sulphur into the potting soil to further acidify it. Then, about once, maybe twice a year, top dress with a little bit of Ammonium Sulfate. Check with the pH meter to make sure you need to topdress. Here's what UC Davis has to say about growing blueberries up in the Sacremento area, but it is really quite applicable to just about any area of California: Blueberries do not require large amounts of fertilizer and are sensitive to over fertilizing, so observe first whether plants are growing and fruiting well. If fertilizer is needed, rake back mulch, spread fertilizer over the soil without incorporating it in, then replace mulch and water in well. Fertilize blueberries with an acidic fertilizer, such as a 10-10-10 formula for azaleas at the rate of 1/2 cup per mature plant applied first in early spring as growth starts, and twice more at 2-month intervals. Organic fertilizers such as blood meal, cottonseed meal, fish meal, and alfalfa meal can be applied at a rate of 1 lb per plant instead of the above inorganic recommendation. Ammonium sulfate, a common acidic nitrogen source, may be used if caution is exercised to carefully follow application rates on its label. Hope that helps, and sounds like maybe the Misty might need to be replaced. Give it a few weeks. If it doesn't come back, I'm afraid it's a goner. Patty S. The painting was finished yesterday. Thankfully, it turned out so beautifully that my husband didn't cry too long when he got the bill. My painter couldn't help letting him know that the Benjamin Moore Aura paint I chose was the most expensive he had ever worked with. I had several minor issues with the painting team but nothing that I didn't get corrected and worked out. The big surprise was that the Benjamin Moore store mixed my paint wrong twice! That's right, the people that pride themselves on their color mixed one gallon of Edgecomb gray minus one of the colors and gave me a yellowy cat puke color. Of course because of the "north-facing-shadow" challenges, he didn't notice it until he had painted ¼ of the crown molding in one room and touched up baseboards in another. The second mistake was putting enough tint for a gallon can in a quart sized can of Revere Pewter. Now that mistake worked out well, because there seemed barely any difference between the Edgecomb Gray and the Revere Pewter except the RP looking muddy... so the darker quart actually worked better; and I put that color in the back of my book case. Otherwise EVERYTHING was painted the EG. I am still waiting for the enamel to cure so nothing can get put away yet. I'll post before and after pics once everything is back in place. And yes, I'm taking all the advice and editing and decluttering as much as I can. Thanks again everyone for all the very helpful advice.

That's not what I heard Lizzy. I hear you can chef it up with the best of 'em young lady. Who you trying to kid. LOL And thanks for the hug, I needed that! Right back atcha.

I do have one more ingredient that goes in the chili Mamatoad and it happens to be the beans. I like to add them the very last so they won't get too over cooked and mushy. Maybe they will help cut the heat. I added a little sugar, which Jenni recommended too. I may just give it a squirt of lemon juice Ronm, for good luck. :) Thanks to all of you for your suggestions.

Guess if it's still too hot for him to enjoy, he will just have to eat cornbread. :)

Sugar honey!

I made Tadpole's salsa one time, and it was way too hot.
He or someone told me to add SUGAR and it WORKED!

Maybe a 1/2 tsp, if that doesn't work, a little bit more.

I know SUGAR does it!

And just to make you feel easy, it didn't make Tadpole's salsa sweet, just cut back the heat :o)

Summer, I found this hint....I have on idea if it will work for your problem...

"If you get heavy handed with the chili powder in your Chili con Carne - dump in a can of crushed pineapple. It virtually disappears so no one knows that it is there, it leaves the flavor of the chili - but takes out the heat."

Ok ladies, I've added a little sugar and I think it's helped. Joy, Jenni and emailed me about the crushed pineapple too. I have some pineapple chunks, but I'm reserving them to make Glenda's Pineapple Casserole for our ham dinner Christmas. Sure seems odd that you can add a whole can of crushed pineapple and it won't change the taste of the chili. Thanks for you help too Glender darlin'. :)

I don't know about taking out the heat, but the Bromalein in the pineapple will help with the "after effects" of the beans!

Let us know how your meal turned out. When I get my chili too hot, I just tell everyone to stay out of it and I eat it myself. :-)
