Is anyone making turkey soup this week?

Or do you wait awhile? I took about half the leftover turkey and broth out of the freezer yesterday so I could make soup today. I was going to wait a little longer but soup sounded good today. It's cold and rainy and I'm fighting another cold.

So, do you make turkey soup with leftovers or not?

I'm never sure if I like the leftover turkey/dressing/cranberry sandwich the best or the turkey soup. Whichever one I'm eating, I think! Yes, we make turkey soup and usually start it during cleanup after dinner. I love it and it's very Weight Watchers friendly, too! I try to freeze at least 1/2 of it but it usually only stays in the freezer a week or so.

I've never eaten turkey soup, but it sounds good. Alas....we have no turkey left over.

I let a broody (chicken) hen incubate my turkey eggs. This also made raising them a lot easier since she taught them to eat. When I raised my first group of turkeys (from MMM) I had the worst time with them. Getting them to eat was a nightmare and I was losing at least one a day. From now on, if I ever decide to raise turkeys again I will definitely let a chicken do the work. Interestingly, after my turkeys were about 8 weeks old, my broody turkey hen adopted them and she has been with them for well over 2 months now. Much better mommies than the chickens who seem to tire of their brood after 4-6 weeks (in my experience anyway).

for years i worked as a banquet waitress, and many holidays i did private waitressing at homes on Thanksgiving. my last 4 years i worked for the same family and every year they made the same thing, a presentation turkey, a turkey they cut up for warming to serve at the table, the whole turkey for extras, and all the fixings. every year, everything was tossed into the trash. the first year i asked the domestic why she didn't take home at least the whole turkey for her family. she said she was told she would be charged with stealing. the last year i worked for that family, i had made a 20lb+ turkey and all the fixings, somne dishes were either prepped or cooked 2 days ahead, the turkey was cooked the day before. leftovers were to be frozen for soups, cassaroles, salads, enchiladas, sandwiches, pot pies or just for omelettes for the coming months. during that last party i found out that domestic, with 4 kids and no father in sight since the last born, had 3 kids sick and had exhasted all her holiday funds for the season. i talked her into coming to my apartment after the party ended and cut my turkey in half, and packed up some of my fixings for her to take home so she could have her Thanksgiving dinner with her kids the next day. i even gave her some Xmas gifts i got for my own kids so at least she had a start on the Santa season. that year my Saint Bernard went with less dog food and had to do with more prime rib left overs from banquets for a while, i don't think he minded much tho. it's great to see that many don't toss the turkey and try to make the most of it. for my turkey stock, i pull off what meat i possibly can and roast the bones, then slow cook them and pick the bones again then freeze. i never gave the bones to BoBo, was just too afraid of another Dr bill of my own.

It really is and can be a fabulous soup. Old thread but always worth bumping up to encourage others to make a good stock. My X-BIL would always want to toss that big bird carcass. No way. Mom took it home and we pick the bones of any meat with any leftover slices. That meat goes in the fridge. He just wanted done with it. (leftovers are for poor folk) jerk. : )...kidding All the bones and carcass go in a stock pot, some will even break up a bit like the ribcage. Chop corse a big onion, a couple ribs celery, carrot. Parsley stems, leek tops...any mild veg...no cabbage, brussels, hearty greens. No green or red pepper. Barely cover with water. Even 2 inches under. After an hour at a low simmer the veg simmering will release enough moisture to top the contents. Two hours at a low barely simmer is fine. 3hours is fine. Turn off heat without a lid for an hour, then pull out the big bones and strain through a pasta strainer...the sink works well for that. Best to chill as fast a s possible to keep stock out of the danger zone. Some can take the stock out into a deck that has a snow bank or a cooler full of snow or ice. A big bowl of ice under works. Don't put hot stock in the fridge. Get it at least cool first, no lid. Chill over night and make your soup the next day. (we put ours in the truck bed that has a cover to keep critters out...had a sneaky fella wipe out an entire stew one year...after just a hour on the deck in snow) I pack the chilled turkey chunks with any beans rice grains i've cooked into pint deli containers then fill with cold stock...even some raw slivered greens like spinach collards kale, then freeze. It is cold and will freeze quick. A soup 'kit'. The next couple cold months i can pull one out, frozen, after some fresh saute of what i have in the veg bin, then add the block to simmer and thaw in my pot with a cup or two of water. Soup for two-4. Hearty, with some fresh ingredients added.

Well, I am very late (don't know how I missed this earlier in the week) but I want to say that if you are not considerably better now, then you need to go back to the doctor. I can't tell you how many times I have cared for people at death's door who were told they didn't have pneumonia, except they did. And your story (sick with virus, better, then much worse) is so typical of the onset. Lavender Lass, Chicken and Dumplings made by my grandma was my favorite birthday treat! but I never make it now, for some reason. Anyway, right now my favorite soup is a chicken vegetable based concoction that I came up with a few years ago. Essentially, I started out to make basic chicken vegetable from a roast carcass -- after making the stock, added mushrooms, greens, corn, broccoli etc. I had some pumpkin (from my supply of frozen that I put up every fall) so I threw that in. Then I added some diced cooked bacon. Decided that I wanted more protein but didn't have more chicken so I tossed in a codfish filet. Lastly, on a whim, I added jerk seasoning. Sound bizarre, doesn't it? But it is so good! I think that it is the pumpkin and jerk seasoning that takes it to the next level. I made it after Thanksgiving with the turkey remains. My other favorite soups are my "walk down the vegetable aisle and get one of everything" vegetable soup -- don't skip the tomatillos! -- Cincinnati-style Chili, and a multi-bean soup that DD's kindergarten teacher helped them make in class: Thanksgiving Soup 2 cups mixed beans, washed, soaked overnight and drained 2 quarts water 1 ham bone bring to boil & simmer 2-3 hours Add: 1 large onion, chopped, 1 large can tomatoes chopped, 1 teaspoon chili powder, juice of 1 lemon, and salt/pepper to taste Simmer about 20 min. I didn't make it but I sure did eat it! Campbell's Chunky Soup used to have a slogan 'So thick you'll be tempted to eat it with a fork'. My wife's soup is so thick you need a KNIFE & fork!

I wish, but no left overs, since I wasn't here.

I vote for making it right away, and then I just need to make a KT circle, to eat it everywhere. :)

Nope....but it's only because I'm the only one that would eat it..I have been eating a serving of leftovers everyday..LOL I love it..just finised a plate of turkey, sweet potatoes and gravy..(that's all that's left..) LOL

I wish I could make the delicious turkey soup my mother made. I adored it, but I cannot get the flavor she did when I try. And I am the only one who eats it, so I throw out the frame, glad to clean it out of the kitchen pronto.

I made turkey soup yesterday....small bird so not too much broth, darn it. But it was good anyway. I'll have it for my supper tonight.

Nope, not turkey here, but yesterday I did make leftover roasted vegetable soup.
I had loads of taters, red onion, carrots and caulifower, so I added stewed tomatoes, green beans and some corn plus vegtable broth and spices and it turned out yum if I do say so.
I love a warm bowl of homemade soup on a gloomy day.

Nope. We only made a turkey breast this year. We ate leftover turkey last night,it was delicious. There's only a few little pieces left, enough for a sandwich. DH likes to make Turkey Tetrazzini, but he won't get the chance. Maybe I'll buy a Christmas turkey.

We had dinner with friends out of town. Joanie was going to throw away the turkey carcass and the dark meat, bones, etc. I begged her to please freeze it and remind me to take it home when we left yesterday. She did!
I am making the stock right now and will de-fat it tomorrow and have turkey/vegetable soup and homemade bread tomorrow night.
I just cannot imagine throwing out the turkey carcass. (But I love to cook.)

I don't have any broth...I fell asleep and burned the roaster and the pan on the stove with the neck in it.....I get my CPAP machine tomorrow!! LOL!

i made Zesty Turkey Lime Salad yesterday and tonight we had turkey pot pie, all my leftovers are gone YEAH. both my fav's, DH would just be happy to eat sandwiches w/ the turkey till it was gone...couple of yrs ago i tried a weight watchers turkey soup that took 5 hrs to make and it was horrible & bland, never tried turkey soup again lol ~ liz
