Chicken & noodles in roaster??

We're having Christmas with our kids on the morning of the 27th. I've invited my side of the family for the day and they'll start showing up between 10 & 11 probably. There will be about 30 of us.

We're having brisket, chicken & noodles and 10# of mashed potatoes. I'd like to prepare the brisket and chicken & noodles in advance, then reheat them that day. It's no problem with the brisket because we've done it before.

What's the best way to do the chicken & noodles? I'd like to do them in a roaster because I want a large quantity.

What's your advice/suggestions/experience? I've Googled and searched recipes, but haven't found a roaster recipe....uh, maybe there's a reason for that ;-)

I wish you lots of family fun on the 27th. I will venture to my "pretend" grand baby's first birthday. Present is ordered.

I always make my homemade chicken noodle soup in my roaster, use it like a crock-pot actually, cook the soup over night, the bump the heat up while i make the noodles and cook the noodles in it.

Who knows how grocery stores rate their fowl? Originally, I believe age would have made a difference, but dunno about now. Grandma fried young chickens, roasted older chickens and then stewed the old biddies who had got past laying but were "tough as an old hen!" I buy 10 pound bags of chicken quarters at a local store for about $6 partially because they're cheap, but a bigger part of the reason is that they are from larger, older chickens and have more of the real chicken flavor I remember from my childhood. Apparently, commercial chickens are slaughtered quite young, and so are tender no matter what way you cook them. But a certain amount of flavor is sacrificed. For myself, I have a mouth full of teeth that work just fine and I would prefer to chew a bit more to get better flavor. For this reason, I've never been all that worked up about veal or filet mignon. Yeah they're tender, but I want beef that tastes like beef and steak that tastes like steak! Same sentiment applies with chicken. I want it to taste like a chicken!

A 4.5 lb. chicken is 1.5 lbs. heavier than the 3 lb. chicken used in the recipe that I posted. You should definitely NOT cook it less than the 5 hours and it may take MORE time because you are cooking a bigger bird. To be safe, you should check the bird with a meat thermometer after 5 hours at 250F in the meatiest part of the thigh. The temp should be up to 180F and if it is not up to that temp, I would put it back in to roast for another 30 minutes, then check the temp again. Poultry should always be throughly cooked and have no pink juices flowing when stuck with a fork or tip of a sharp knife. Please be careful to check the temp of the bird before you take it out of the oven and pronounce it done.

Ohhh, thanks, Moni! It's easy to be gracious with guests like you and Mel! My niece emailed that she and her little boy will be here. She said, "Your place is my favorite part of Christmas." DH & I decided we'd better get into the Christmas Spirit and quit thinking of all the preparations that we think need done. No one will notice anyway. It's just for family fun, as you said, lots of card and board games played, and lots of food to eat! (They always bring lots!!)

Thanks, Vickey_MN. So, I can make the soup part the day or night before. Yay! Good to know! I won't be making noodles. I'll use Ream's frozen ones, but I can put them into the roaster with the soup that morning??? I probably should have extra broth/liquid on hand as well in case it gets too thick???

can put them into the roaster with the soup that morning??? I would bring the soup to a boil about 20 minutes before you're going to eat, then add the noodles (that's what I do with fresh noodles). When the noodles are cooked, put the soup back down to about 250 (that's because 250 won't let salmanella grow..you won't give your guest food poisoning)

I probably should have extra broth/liquid on hand as well in case it gets too thick??? If those noodles soak up broth, yes have some on hand.
