How are your holiday preparations going?

I am not hosting anything this holiday season but am trying to do an abbreviated preparation just to get into the spirit. I have almost all my shopping finished and most everything wrapped. I decorated my mantle and am pleased with it along with a few other areas of the house which I have decorated. No tree this year because my prelit table topper never looks the way I would like it to. If the weather cooperates and I can get to Pa I'll pick up my youngest daughter and she'll spend a few days with us. Looking forward to that. Now all I have to do is plan a couple of special meals, grocery shop and clean. Hope you are ahead of the game and will have some down time to actually enjoy the season.

We are having shrimp etouffe, sweet potato biscuits, stuffed chayotes (mirlitons), mashed potatoes, cranberry sauce, a fresh mixed salad, our pickled green beans and flan for dessert. Each family has their own traditions, turkey is not one of ours. This morning before work I already harvested the celery, onions, parsley and green peppers for the etoufee. I am making this tonight because it tastes much better the day after, and it is too dark when I get home to harvest! I will use a jar of tomato sauce from our preservation efforts as well. I think I will chose one from black tomatoes. The okra is also from the garden (we pre-froze some). Just add shrimp! The chayotes were harvested and stuffed last week (frozen at the moment). The sweet potatoes are also from our harvest. Biscuits will be served with habanero fig jam, made from our figs and hot peppers. Believe it or not we still have figs coming, the latest fig year we ever had. Tomorrow morning I will go out and pick the salad. Some lettuces are leafy enough to start harvesting, and we have a few baby mustard leaves and chard. I still have a few fresh tomatoes to add to a salad as well. Still a few leaves of basil to enjoy and maybe a carrot and a beet. We ate all the potatoes we grew (we are making another bed for more), so I had to buy potatoes. I also bought the cranberries. Shrimp was from a job. We feel blessed. May you feel equally blessed and have a great holiday!

Cantaloupe ices sound good. How do you make them? The leek-potato-cheese casserole is based on a recipe from Olive Trees and Honey for Sephardic Leek and Cheese Casserole (Quajado de Puerro con Queso). The original recipe has a variation with Potato instead of the cheese and another variant with zucchini in place of some of the leeks. I usually merge the variants putting in some cheese, some potato and an additional vegetable. The base is pretty flexible. It also has a step where one simmers the leeks (and potatoes if using) after sauteing but we find the results the same without that step. The something very close to the original recipe is on food.com except it has a bit more cheese. I've put the link below. The original recipe has: 5 ounces of feta or 8 ounces of farmer or pot cheese or 3 ounces kefalotyri or Parmesean cheese or a combination. and 4 ounces kashkaval, gouda, muenster or cheddar I usually use just one cheese or a two cheeses in smaller amounts, about 3 to 8 leeks depending on size, some potato - often a thin skinned variety that I don't peel - and another vegetable. Zucchini, yellow summer squash or broccoli work well. I find carrots a bit too sweet in this. I skip the part of step 2 where it says to add water, simmer and drain. I use Pioneer Women's Recipe for creamed spinach. We love this but have started replacing the cream with Cooking Cream. It's a new product from Kraft. Find it with the cream cheese in the store. I use the plain and use enough to make a sauce. I don't measure it but I never use the whole container. Recipe: Creamed Spinach Prep Time: 15 Minutes : Cook Time: 15 Minutes : Difficulty: Easy : Servings: 4 Ingredients 1 whole Onion, Finely Diced 2 cloves Garlic 2 Tablespoons Butter 1 bag (large Bag) Fresh Spinach 1 cup Heavy Cream Salt And Pepper, to taste Preparation Instructions Finely dice one onion and 2 cloves of garlic. Melt 2 tablespoons of butter in a large skillet over medium heat. Add onions and garlic and saute until translucent. Now add in the spinach. Lightly press it down with a spoon and toss it very gently as it wilts. When it comes to creamed spinach, wilting is good. When the spinach is mostly wilted(but not falling apart) add in about 1 cup of heavy cream Stir it around just a bit and give it a sprinkle of salt and pepper. Linda

Kate, I'm sorry for what you are being forced to go through right now. Very hard. Sounds like you started clearing out, next step is to take a deep breath. What worked for me was to go to Target or Walmart, I bought various sized plastic bins. I collect Barbies, so that was where I started. If the bin had more room in it, I found other collectibles that would fit in the bin. For his sheet music, they also sell a bin that is great for something a little bigger then magazines, so it will be protected. You want to invest in bubble wrap. Uhaul was cheap for moving supplies. They also sell boxes if you want to use them. For my more valuable or sentimental I did not box. IMO, getting a storage unit is the best thing to do. We were going to get a medium sized one but after realizing how much we had we got a garage sized one and it was perfect. Yes, it's a bit pricey but what choice do you have? Are you going to throw out, donate or yard sale your whole life? I was not willing to do that, nor was I willing to lose money on stuff I love. The other option is to ask family to hold stuff for you if they are willing. So, 1st you pack collectibles, or in your case the hobbies you listed. Next the extra stuff laying around, nick knacks, pictures. I did not put away every family picture, left one collage frame in each kids room, a table top wedding pic and a Christmas pic when my dad was still alive. It's a peeve of mine seeing no family photos in houses for sale & opinions vary. I've read posts where sellers missed their family photos so much. Leave out the most special ones to you, just don't over do it. Next, pick a room. I used to start in my daughters room. I took everything she didn't use. Clothes got put in bins & into storage. Everyone had a few long sleeves, a jacket and some summer clothes. The bulk went to storage. With the books, call your local school system, they might take some. I've donated stuff like magazines to guidance or the child study team. You can also go as far as donating other things, one used to love donations of beads so that when the kids went down for cool down time they had something to do. If you want to post where you are located, someone might be able to suggest specific places to donate stuff. We are having our family gathering the 21st~~we will put up a tree, I decorate the dinning room table a bit, the buffet and an antique dresser in our entry way. Something lite on the mantle in the family room. I do everything easy peasy now days and I really love it.

Not sure about the menu, 3 of us are vegetarians and 8 meat eaters;) I think a ham will be bought, each family will bring a side dish. Younger DD and her BF are the veg's (me also) they will take over the kitchen when they get here and make wonderful smelling/tasting dishes. To share with all~~~my DD also makes all of the deserts, vegan:)

Mine have come to a screeching halt because I'm sidelined with severe knee pain (both knees, one much worse than the other). It came on 10 days ago, out of the blue, with no obvious reason. I'm wondering if it's Lyme after my summer of many tick bites. Knee doctor can't see me until January.

Wicked timing, but at least I got my Christmas cards done!

Oh, Alisande, I'm sorry to hear you are in pain. I hope it goes away as quickly as it arrived.

All of my decorations are complete, gifts shipped and gifts for local friends and family wrapped. I've finalized the menu for our 12/14 party. Now, I just need to do the grocery shopping, prep and cooking. I haven't sent out any Christmas cards, but I should send one or two, so I need to do that still.

Then, we will travel to my parent's house where I will do it all over again in time for Christmas.

Pretty much finished decorating. I still have a little to do in the kitchen. I've had an ongoing project with remodeling the bathroom, master bedroom and walk-in closet. Everything is almost done.....need some shelves put in a decorative unit in the bathroom, hang some art work that hasn't come yet and am waiting for plantation shutters to be installed. Today I had the window treatments installed in the bedroom, the dust ruffle put on the bed and am waiting for a table skirt to be delivered. I have 16 people coming tomorrow night for cocktails so that keeps me moving. Should be all done decorating tonight and then after tomorrow night I will get busy with mailing gifts and cards. I didn't put up my table top tree which is bigger than I would like. Instead I bought a real 3 - 4 ft tree and decorated that last night. It smells good in here. Also decided not to put up the garland on the stairs this year. Looks fine without it. I use to put up five trees but am becoming a real Scrooge. Too much work!

I still have about everything to do except the Christmas cards I sent some out today. Christmas will be here too.

Alisande, I hope you'll be feeling better soon. I'm doing ok, but not nearly as far along as I wanted to be on the 10th. Bad weather messed up the schedule for putting up the window wreaths last weekend and we get home from work after dark, so we'll have to wait until Saturday. I'd really like to finish everything by the end of the day Saturday so we'll have some down time & time to enjoy the decorations.

Slooooowly. Working full time means I just have weekends to set stuff up. Got the north pole village and candy tree set up in the family room. Lights are up in the windows. Toy themed tree is up in the cat room. Radko ornaments are lit and hung in the bedroom. Gingerbread decorations are up in the kitchen. Now I have the Dickens and CIC village vignettes to put together in the living room and the main tree to set up and decorate.

We don't have any big family get togethers here. I just mainly do this all for me. So magical at night when everything is lit.
