How are your holiday preparations going?

I am not hosting anything this holiday season but am trying to do an abbreviated preparation just to get into the spirit. I have almost all my shopping finished and most everything wrapped. I decorated my mantle and am pleased with it along with a few other areas of the house which I have decorated. No tree this year because my prelit table topper never looks the way I would like it to. If the weather cooperates and I can get to Pa I'll pick up my youngest daughter and she'll spend a few days with us. Looking forward to that. Now all I have to do is plan a couple of special meals, grocery shop and clean. Hope you are ahead of the game and will have some down time to actually enjoy the season.

Cantaloupe ices sound good. How do you make them? The leek-potato-cheese casserole is based on a recipe from Olive Trees and Honey for Sephardic Leek and Cheese Casserole (Quajado de Puerro con Queso). The original recipe has a variation with Potato instead of the cheese and another variant with zucchini in place of some of the leeks. I usually merge the variants putting in some cheese, some potato and an additional vegetable. The base is pretty flexible. It also has a step where one simmers the leeks (and potatoes if using) after sauteing but we find the results the same without that step. The something very close to the original recipe is on food.com except it has a bit more cheese. I've put the link below. The original recipe has: 5 ounces of feta or 8 ounces of farmer or pot cheese or 3 ounces kefalotyri or Parmesean cheese or a combination. and 4 ounces kashkaval, gouda, muenster or cheddar I usually use just one cheese or a two cheeses in smaller amounts, about 3 to 8 leeks depending on size, some potato - often a thin skinned variety that I don't peel - and another vegetable. Zucchini, yellow summer squash or broccoli work well. I find carrots a bit too sweet in this. I skip the part of step 2 where it says to add water, simmer and drain. I couldn't believe how much stuff was in my cabinets. The frames are staying but my GC recommended everything come out because of the dust, etc. To say the least. Everything gets dusty and dirty. I can't imagine leaving things inside during reno. Everything I don't use on a daily basis went out into the garage in boxes. No need to pack like you're moving. Some of that stuff may end up being given away or stored in the garage permanently. There were many things I haven't used in the 12 years I've been in this house, and I question why I'm hanging on to them. Food, utensils, everyday dishes, pots and pans are in boxes in my dining room. I peer into them from time to time and snag a granola bar or tin of smoked trout. My stove and fridge are still in place and work, but my sink and DW aren't connected. I've heated some soup and used the oven once, but prep and cooking really need water close by. My coffee maker and cleanup area is my guest bath. I allowed myself one of everything (plate, bowl, mug, glass, spatula, etc.). I have to remember to wipe all my dishes before washing so no particles of food go down the bathroom drain. My microwave is in my office and I rely on it to heat food for dinner. My cats think it's a great perch. I'm into my third week like this with at least another week to go before my kitchen can start being put back together. I'm surviving. People live their lives in far worse conditions. I think I'm most anxious to be able to get boxes off the floor and clean the place. Everything's dirty and sticky. Good luck with your kitchen! When I was a kid it was so easy. Mom and dad were still married and came from the same hometown. So a visit to the grandparents meant a trip to only one place. We would stay a few days with one side, and a few days with the other. It was great. When my parents got divorced it got more complicated. My brother and I had four Christmases one year: I drove home from college in Missouri to Florida for Christmas with Mom/granny; flew to Maryland for Dad/stepmom/stepbrothers; drove to PA for cousins; then on to Ohio for Dad's dad, then drove back to Maryland, flew back to Fla. and drove back to Mo. It was exhausting. Now I am married to DH, whose parents are also divorced. The four parents live in: California, Arkansas, Alabama and Florida. Oh, and his mom and dad can't be together. And my mom and stepmom can't be together. Then there are DH's kids and their own in-laws . . . it's like that riddle with the farmer trying to cross the river with a fox, a chicken and a sack of grain. Our Christmas solution? DH sees his dad about twice a year when he comes from CA to Ark. to visit his brothers and have a fishing trip. We used to go to DH's sister's (his mom lives on the sister's property) for Thanksgiving, but there was a huge family meltdown back in '04 that put a stop to all that. So now DH sees his mom on those same spring and fall trips to Ark. and we go out (with my mom) for Thanksgiving. My mom always gets the actual holidays, because she is single and, frankly, the most pitiful (I know, I know -- but it's true) and lives here in town. Dad and stepmom fit in where they can, usually coming up before or after Christmas. DH's boys are usually with their Mom on Christmas. We have DH's daughter and family over usually the week before or after Christmas, or meet them halfway for dinner -- and invite the boys to this. My brother comes in from Tx. some time around Christmas, but also goes to his girlfriends' folks in Ky. Whew! I'm tired already! There is no way the kitchen will be done in time for Christmas this year, so there will be a lot of eating out. There will also be liberal use made of hotels for visiting relatives, as my mother informs me that the cute little pull-out sofa-chairs I got from IKEA for the spare-bedroom-turned-home-office are not beds at all, and should be donated to the CIA for interrogation purposes.

How do you prepare your spinach?

I use Pioneer Women's Recipe for creamed spinach. We love this but have started replacing the cream with Cooking Cream. It's a new product from Kraft. Find it with the cream cheese in the store. I use the plain and use enough to make a sauce. I don't measure it but I never use the whole container. Recipe: Creamed Spinach Prep Time: 15 Minutes : Cook Time: 15 Minutes : Difficulty: Easy : Servings: 4 Ingredients 1 whole Onion, Finely Diced 2 cloves Garlic 2 Tablespoons Butter 1 bag (large Bag) Fresh Spinach 1 cup Heavy Cream Salt And Pepper, to taste Preparation Instructions Finely dice one onion and 2 cloves of garlic. Melt 2 tablespoons of butter in a large skillet over medium heat. Add onions and garlic and saute until translucent. Now add in the spinach. Lightly press it down with a spoon and toss it very gently as it wilts. When it comes to creamed spinach, wilting is good. When the spinach is mostly wilted(but not falling apart) add in about 1 cup of heavy cream Stir it around just a bit and give it a sprinkle of salt and pepper. Linda

We are having our family gathering the 21st~~we will put up a tree, I decorate the dinning room table a bit, the buffet and an antique dresser in our entry way. Something lite on the mantle in the family room. I do everything easy peasy now days and I really love it.

Not sure about the menu, 3 of us are vegetarians and 8 meat eaters;) I think a ham will be bought, each family will bring a side dish. Younger DD and her BF are the veg's (me also) they will take over the kitchen when they get here and make wonderful smelling/tasting dishes. To share with all~~~my DD also makes all of the deserts, vegan:)

Mine have come to a screeching halt because I'm sidelined with severe knee pain (both knees, one much worse than the other). It came on 10 days ago, out of the blue, with no obvious reason. I'm wondering if it's Lyme after my summer of many tick bites. Knee doctor can't see me until January.

Wicked timing, but at least I got my Christmas cards done!

Oh, Alisande, I'm sorry to hear you are in pain. I hope it goes away as quickly as it arrived.

All of my decorations are complete, gifts shipped and gifts for local friends and family wrapped. I've finalized the menu for our 12/14 party. Now, I just need to do the grocery shopping, prep and cooking. I haven't sent out any Christmas cards, but I should send one or two, so I need to do that still.

Then, we will travel to my parent's house where I will do it all over again in time for Christmas.

Pretty much finished decorating. I still have a little to do in the kitchen. I've had an ongoing project with remodeling the bathroom, master bedroom and walk-in closet. Everything is almost done.....need some shelves put in a decorative unit in the bathroom, hang some art work that hasn't come yet and am waiting for plantation shutters to be installed. Today I had the window treatments installed in the bedroom, the dust ruffle put on the bed and am waiting for a table skirt to be delivered. I have 16 people coming tomorrow night for cocktails so that keeps me moving. Should be all done decorating tonight and then after tomorrow night I will get busy with mailing gifts and cards. I didn't put up my table top tree which is bigger than I would like. Instead I bought a real 3 - 4 ft tree and decorated that last night. It smells good in here. Also decided not to put up the garland on the stairs this year. Looks fine without it. I use to put up five trees but am becoming a real Scrooge. Too much work!

I still have about everything to do except the Christmas cards I sent some out today. Christmas will be here too.

What gets done, gets done I guess.

Alisande, I hope you'll be feeling better soon. I'm doing ok, but not nearly as far along as I wanted to be on the 10th. Bad weather messed up the schedule for putting up the window wreaths last weekend and we get home from work after dark, so we'll have to wait until Saturday. I'd really like to finish everything by the end of the day Saturday so we'll have some down time & time to enjoy the decorations.

Slooooowly. Working full time means I just have weekends to set stuff up. Got the north pole village and candy tree set up in the family room. Lights are up in the windows. Toy themed tree is up in the cat room. Radko ornaments are lit and hung in the bedroom. Gingerbread decorations are up in the kitchen. Now I have the Dickens and CIC village vignettes to put together in the living room and the main tree to set up and decorate.

We don't have any big family get togethers here. I just mainly do this all for me. So magical at night when everything is lit.
