Carnival cruise lines?

We have never cruised with them before. Glender, is this who you cruise with?

We are wondering about the quality of the food, etc.

It's been many years since I cruised with Carnival but the entertainment wasn't all that good at that time. I am hoping they have improved. I would take another Carnival Cruise because the price is right and I had a great time.

I think they sail out of Tampa near my office... but wasn't there some sort of sicknesses on them?

Every year I buy the luscious local strawberries from one of the many plots in the area...I don't have enough good sunny garden room to plant enough for my use. I make jam, and eat a ton of them fresh in all sorts of ways. But I also fill my dehydrator several times with sliced berries for the hot cereals we eat so much of during the winter. We like a variety of dried fruits as well as the traditional raisins. They are also very nice just to snack on during the Winter, when fruit worth eating is hard to come by. If you have a dehydrator (or a friend who has one you could borrow for the experiment) that would be one thing to do. I do freeze a number of them as well, for use in fruit sauces and smoothies. I don't add anything, just hull them and freeze them in a single layer on a cookie sheet before putting them into zip lock bags. That way, I can take out only the amount I need. I also eat them with ice cream or make home made ice cream with them. I only thaw them enough to quickly cut & eat or put into the cream though. If they thaw all the way they get slimy and the flavor changes.

This is a favorite of ours Carrot Ginger Soup with Coconut Roasted Shrimp HEALTHY ACTIVE TIME: 30 MIN TOTAL TIME: 45 MIN SERVES: 6 The Good News A little coconut milk and shredded coconut soften the spicy edge of this soup while adding just a small amount of fat. ingredients 2 tablespoons extra-virgin olive oil 1 medium onion, coarsely chopped 4 large carrots (3/4 pound), chopped 1 tablespoon finely grated ginger 1/2 teaspoon crushed red pepper 3 cups low-sodium chicken broth 3 tablespoons soy sauce 2 tablespoons fresh lime juice 2 tablespoons light brown sugar 1 tablespoon smooth peanut butter 1 teaspoon Asian sesame oil 1 cup skim milk 1/4 cup light coconut milk Kosher salt and freshly ground pepper 16 large shrimp, shelled 1 1/2 tablespoons shredded coconut Pinch of cayenne pepper directions Preheat the oven to 425Â°. In a large saucepan, heat 1 tablespoon of the olive oil. Add the onion and cook over moderate heat until softened, about 4 minutes. Add the carrots, ginger and crushed red pepper and cook for 6 minutes. Add the broth and bring to a boil, then simmer until the carrots are very tender, about 15 minutes. Remove from the heat and stir in the soy sauce, lime juice, brown sugar, peanut butter and sesame oil. In a blender, puree the soup until smooth. Return it to the saucepan and stir in the skim milk and coconut milk. Season the soup with salt and pepper and keep warm. Toss the shrimp with the coconut, cayenne and remaining 1 tablespoon of olive oil, and season with salt and pepper. Spread the shrimp on a parchment-lined baking sheet and roast for 8 minutes, or until pink. Ladle the carrot-ginger soup into warmed bowls and garnish with the coconut shrimp. NOTES One Serving 230 cal, 11 gm total fat, 3.6 gm saturated fat, 17 gm carb, 3 gm fiber. ************************************************ And this is a recipe I've been working on - not sure I am done tweaking it yet! LOL! Southwestern Sweet Potato Soup 1 tsp oil Â½ medium onion chopped 1 large Sweet Potato, cubed in Â½ inch cubes 1/2 tsp cumin 2 cups chicken stock 1 tsp chopped canned chipotle in adobo (or to taste) 2 tbsp heavy cream Heat a heavy bottom saucepan over medium heat, add the oil and onion and sautÃ© until it begins to soften. Add the sweet potato cubes and continue to sautÃ© for 5 more minutes. Add the cumin and sautÃ© for 1 minute. Add the chicken stock and simmer for 15 Â 20 minutes until the sweet potatoes are very tender. Add the chipotle and blend until smooth with a stick blender. Add cream and serve.

I'm copying all these cold soup recipes - they sound wonderful! Here are two of mine that we enjoy every summer (I've also made the borscht in the winter and served hot...both ways are good). Ann Iced Borscht 1 qt water 8 small to medium beets, cut into quarters 1 Tbsp butter 1 Tbsp corn oil 1 medium onion, chopped 1 clove garlic, minced 3 cups chicken broth 1 Tbsp chopped fresh dill 1 Tbsp fresh lemon juice 1/2 tsp salt 1/4 tsp white pepper 2 cups buttermilk 1/4 cup sour cream mixed with 1/4 cup plain yogurt for topping dill sprigs for garnish Bring water to a boil in a large saucepan. Add the beets and cook for about 30 minutes, or until tender when pierced with a fork. Drain and rinse the beets in cold water. When cool enough to handle, slip the skins off. Heat butter and oil in a large skillet over medium heat. Saute onion for 5 minutes or until translucent. Add the garlic and cook for 1 minute, then remove from heat. Add the chicken broth, dill, lemon juice, salt and pepper. Place some broth and some beets in a blender or food processor and puree. Pour the soup into a large bowl and repeat the processing until all of the broth and beets are pureed. Add the buttermilk, stir to blend and chill for several hours. At serving time, pour soup into bowls, top each serving with a tablespoon of the sour cream mixture and garnish with a dill sprig. You can omit the buttermilk and serve hot with a dollop of sour cream. Serves 8. source: Picnic by Dee Stovall Gazpacho 1 qt Clamato juice 1 cup tomato juice 1/2 cup peeled & chopped cucumber (about half a cuke) 1/3 cup sliced green onions 1 Tbsp olive oil 2 Tbsps red wine vinegar 1 Tbsp sugar 1/2 Tbsp dried dillweed 1 or more chopped garlic cloves 1/2 tsp hot sauce (like Texas Pete) or Tabasco 1 avocado chopped (opt. garnish) 1/4 to 1/2 lb small cooked shrimp (opt. garnish) diced cucumber (opt. garnish) salt and pepper to taste In a large bowl pour Clamato juice and cup of tomato juice; stir to blend. Put 1-1/2 or 2 cups (depending on size of your processor workbowl) of this juice mixture into food processor. Add the cucumber, green onions, olive oil, red wine vinegar, sugar, dill, garlic clove and hot sauce in food processor. Puree; then pour into bowl and blend. If it's cold you can serve immediately. We did a 1-week Carnival cruise four years ago - Mom, Dad, two teen daughters. Booked it quite last minute, paid retail, but loved our two rooms, right in the front of the ship (the bow, sez DH) - both rooms were very spacious, with nice portholes, we were very comfortable. Loved sleeping to the roll of the ship, and we loved being able to look out to see the ocean from our rooms (I would be claustrophobic in an inside cabin I think). HOWEVER we hated the Carnival program - mediocre food 24-hours a day at various central feeding facilities; CONSTANT merchandising from on-board tvs and deck microphone announcements; hawking of drinks at 8:00 o'clock in the morning; solid cloud of cig smoke on the gaming deck, where the smokey casino was attached to the kids' videogame room, so the kids were getting as much 2nd hand smoke as the rest of us... Everytime we found a nice quiet spot for sunning on the deck, someone would plug in the extra-loud salsa music, or start exhorting everyone to get up and join some idiotic game...we were on that ship for a week and could not wait to get off. The land excursions were fine, and we managed to do some Puerta Vallarta snorkling through an outfit that unfortunately made everyone play those embarassing "sit in the stranger's lap and pop his balloon" games. Ugh. Even our kids were mortified... too crude. I guess this was not the cruise for us - next time, we'll look for a slightly smaller outfit, with a less manic program -- maybe an environmental adventure cruise to Alaska? And we'll definitely book a non-smoking cruise. Good luck in finding the right cruise for you - I keep hearing that they're out there.

Many may differ, but I thorougly enjoy Carnival.
Just don't go during spring break! NO NO NO!
Food has been very good! Especially in the dining room.
Lunch at the buffet on deck, lately, they go international, varies daily, but always can get the burgers, fries and hot dogs.

Only bad experience, was on the Holiday! It's one of their older ships, very hard to maneuver, service not that great. Stay away from that ship.

Been on the Legend twice, which the first time was brand new and wonderful. Belize, Costa Rica, Panama. Last year, on the Legend, went to Southern Caribbean! Great experience, as well.
Mediterranean cruise, Freedom, and had it's maiden voyage past March, and I went end of Aug.

Where you thinking about going, JOan?

We would sail from Cape Canaveral or Jacksonville, easiest to get to for us (we're 60 miles in from Daytona Beach).
Carnival and Royal Carib. have the best deals. We would go to the Bahamas. The ones out of Jax goes to Key West, I have been wanting to go there, then K wouldn't have to drive the 800 miles round trip.

Joan, I would seriously consider Royal Caribbean over Carnival. We seldom get a complaints on cruise vacations since we stopped selling them, we were averaging a complaint rate of nearly 30% with Carnival and that just isn't worth it so we tossed the brochures and I intituted a stop sell. The major complaint was poor service and food quality.

I would still go on Carnival, cause it is a fun ship! Only time I ever had bad service and blah food as on the Holiday, and didn't feel clean in my room.

Other Carnival's check out to see how old they are Joan! Glenda who has cruised on various Carnival's 7 times, 10 cruises, total.

Been on Princess cruise to Alaska, and was not in love with the ship, shows, etc.

Do want to travel on Royal Caribbean, sometime.

It depends on the ship. Some are really nice and some are the run down party ships. It depends on the size and the ports. Good luck. I love cruising! Last Feb I went from Miami to Nassau on Carnival and it was really nice.

When we went last October to the Mexican Riviera, we went on the Princess Diamond. I loved it. Food/service was great. New ship. We had a balcony suite where we could open a partition between us and the cabin next to us, which was my sister and my DD's MIL. Great time.

I have been on RC, Norweigan, and Princess. Our travel agent did not recommend Carnival, although we had some friends that cruised on Carnival and loved it. I would not recommend Princess b/c it was so crowded. Waiting lines for the elevators, hard, if not impossible to get a seat for the shows. I loved Royal Caribbean and Norweigan.

I have never been on Carnival, but of the lines I have traveled, I like Royal Caribbean the best.

My parents have been on least 30 cruises, and Royal Caribbean is their favorite--by far. They enjoyed their cruises on Carnival, but have said that Carnival is the "Burger King" of cruise lines...and they prefer filet mignon.

They book their cruises through a friend who owns a travel agency, and he books on Carnival only when he can't get the desired booking on Royal Caribbean or Norwegian.

i too would look at RC. i have a friend who goes on 3-4 cruises a yr and prefers princess or RC. we've been trying to get our first cruise into our schedule for 9 months now, i'm very claustrophobic but friends assure me i would be o.k. in a suite or balcony room. sometime in the next yr we'll find out LOL. i'm planning a short 4 day cruise on RC in a suite or balcony room to bahamas w/ a day in the keys (cuz there's no way i'm driving there) for about $100 a day each, very cheap i think. that 4 day cruise leaves either miami or ft lauderdale.

bet you're happy to be in FL right now LOL! i'm looking forward to wed/thur cool temps so i can have some hot chocolate and mulled cider in the proper weather lol. ~ liz

Thanks so much, everyone! We've decided to go for 4 nights on RC out of Cape Canaveral this trip, and save the Carnival trip for March.
We got a porthole room for $299 each, with a $75.00 shipboard credit, seems like a great deal to us.

Joan, I live a 1/2 hour south of Canaveral, and everyone I know has high praise for Royal Caribbean. My brother also goes on the Disney Cruises, he says that they are lots of fun, especially for families.

Do you still live in MN and then spend part of the year in Florida?

There are a number of cruise review sites - cruisereport.com, cruisecritic.com, cruisedirectonline.com. There is also a good cruise review section at about.com. I'll provide it's link at the end of this message. Some of these cruise reviews will also provide reviews of offshore excursions.

By the way, if anyone is ever interested in cruising with a disabled person, Royal Caribbean is the hands-down favorite around here. My sister loved it and everyone in her ALS group said that RC was the best.
