Want to share soup recipes?

Spring's a long ways away and to me nothing is better in winter than a hot and hearty bowl of soup. I would love a tried and true recipe for chicken-rice soup if you have one. This is my favorite winter soup. It tastes just like my mother made it. :-)

Mom's Beef Vegetable Soup

1 chuck roast with bone, about 2-1/2 lbs.

4 medium carrots, sliced thin

3 stalks celery, sliced thin

3-4 med. potatoes, diced

1 med. onion, chopped

1-1/2 c. V-8

1/4 head cabbage, chopped

Salt and pepper to taste

1-2 tsp. chili powder

Place beef in Dutch oven with about 6 cups of water. (Add more if needed.) Bring to a boil, reduce heat and cook for one hour. Remove meat from pan to cool. When cool, cut into bite-sized pieces. Add back to broth in the Dutch oven and add all the vegetables, except cabbage. Add salt, pepper and chili powder. Cook slowly for about 2 hours, adding cabbage the last twenty minutes.

This makes a lot, but freezes well.
