This is a good, different dessert and is made ahead, making it convenient for you.

FOOD FOR THE ANGELS

3 egg whites
¾ cup sugar
25 Ritz crackers, crushed
1 tsp vanilla
½ cup chopped walnuts
1 cup cream, whipped
2 Tbls sugar
Grated coconut

Beat the egg whites stiffly. Gradually add ¾ cup sugar. Fold in the crackers, vanilla and nuts.

Put into 8X8 greased pan and bake at 300° for 20-30 minutes. Cool well. Whip the cream. Add 2 Tbls sugar. Spread on the baked layer and sprinkle on the coconut. Chill over night.

This is easy to make, and everyone loves it.

FRUIT PIZZA

1 roll Slice and Bake sugar cookies - baked in pizza pan, according to package directions. Put cookies close together so there wonÂt be any space between them. COOL.

Mix together:
4 oz. Cool Whip
8 oz. softened Cream Cheese
1 Tablespoon Sugar
1 teaspoon Vanilla Extract

Spread mixture on cooled dough, almost to edge of pan.

Top with circular pattern of any fruit you like. I use canned peaches, and whatever other fruit desired (i.e., kiwi, berries, etc.). Bananas are great, but put a little lemon juice on them first so they donÂt turn brown.

Then spread strawberry pie glaze over the top.

Two ingredients..the kind of recipe I love :o)

A brownie mix...mix as instructed

Two Hershey Symphony bars (the kind with toffee bits)

In a 8 x 10 pan put half of the brownie mix...then break up the candy bar and put a layer on the first layer of brownie...leaving a little space around the edge for it to melt.

Then, add the rest of the brownie mix and cook according to the instructions on the brownie box

Cut into bars...yummy beyond belief....and so easy

I haven't made this yet, but it will be our Christmas dessert. You can leave out the rum. Some recipes have a glaze, which is what I'll do.

EGG NOG CAKE

1 package yellow cake mix
1/4 teaspoon ground nutmeg
2 extra large eggs, lightly beaten
1-1/2 cups eggnog
4 tablespoons butter, melted
2 tablespoons rum, optional
Powdered sugar for dusting

Preheat oven to 350 degrees. Butter and flour a standard Bundt pan (or use cooking spray that contains flour). Don't skip this step or you'll have a sticky mess on your hands.

Combine all ingredients in a large mixing bowl. Beat for four minutes, on medium speed with an electric mixer.
Pour into prepared pan and bake for 45-55 minutes, or until a toothpick inserted in the center of the cake comes out clean.

Cool 10 minutes and invert onto a cooling rack and cool completely. Dust with powdered sugar and serve.

We had the fruit pizza at Wanda's house and it was really, really, good.

I am making this one tonight:

PUMPKIN TRIFLE
1 box Betty Crocker Gingerbread mix, baked according to box directions, and crumbled
4 small boxes instant vanilla pudding mix (original recipe said butterscotch pudding)
4 c. milk
15 or 16 oz. can sold-pack pumpkin
1 tsp. cinnamon
1/4 tsp. ground allspice
1/4 tsp. ground ginger
1/3 tsp. ground nutmeg
16 oz. Cool Whip (fat-free or Lite), thawed
Mix the 4 boxes of vanilla pudding and the 4 c. milk in a big mixing bowl for 2 minutes
with an electric mixer. Then mix in the canned pumpkin and all the spices for 2 more
minutes. Then layer everything in the trifle bowl.(pumpkin pudding, cake, coolwhip 2x)
Layer everything in a trifle bowl. Finish with some crumbled gingerbread on top.
Makes 18 servings

I don't have a trifle bowl, I just use a big glass bowl.

Angel food cake would be appropiate! lol And you can make it adding powered Jello mix to add fruit flavor.

I have made this and it is delicious. You can do everything the night before and refrigerate it, then bake it in the morning. It is soooooo good!

Eggnog Bread Pudding

Serves 8.

1 loaf stale French bread ----- betting cinnamon raisin bread would do great (it does!)
1 quart eggnog
3 eggs
2 tablespoons vanilla
1 cup raisins
1/2 cup sugar

1. Heat oven to 325 degrees. Grease a 9x13x2-inch pan.

2. In a large mixing bowl, crumble the bread and pour the eggnog over it, letting it sit until bread is soft, at least 20 minutes and even overnight.

3. In a smaller bowl, beat together the eggs, sugar, and vanilla and stir into the bread and eggnog mixture. Add the raisins and mix well.

4. Bake for 1 hour and 10 minutes, or until knife comes out clean. Let cool before cutting.

5. Serve with a little whipped cream, if desired.

I would keep it simple but elegant for this occasion. Do you know their tastes...Are they picky eaters? I find chocolate and cheesecake desserts generally go over well with most people.

Ginger's Slices of Sin recipe would be great but you need to make days ahead - do you have enough time? Maybe a specialty cheesecake prepared in a springform pan -- Presentation looks a lot better that way. Or you could make a tiramisu dessert. Those are yummy!

Any triffle would look nice and that eggnog bread pudding sounds really good too -- As long as you think your hosts like bread pudding and eggnog.

I made this last Christmas and it was a hit:
Christmas Trifle
2 packages of ladyfingers or a pound cake
Raspberry Jam
1 package of frozen raspberries, thawed and sweetened
2 cans of mandarin oranges, drained
1 package of Birds custard powder prepared according to directions with whole milk (I used Vanilla Pudding)
1 pint of heavy whipping cream
Good quality sweet sherry according to taste. (I Omitted this)

Trifle Recipes Instructions

Start with at least 1/2 a cup. Do not use cooking sherry. Sliced, toasted almonds

Spread ladyfingers with raspberry jam and arrange around sides and bottom of trifle bowl.

If using pound cake, cut into slices, spread with jam and cube before arranging in bowl.

Reserve a few segments of orange for decoration. Arrange fruit on top of ladyfingers.

Moisten with sherry according to taste. You may also use part of the syrup from the oranges if you do not care to use as much sherry. I would use half to three quarters of a cup and a small amount of syrup. Pour prepared custard over the cake and fruit. Allow to cool well.

Whip the cream with 1 tablespoon of sugar until stiff. Spread over the top of the cooled custard. Decorate with mandarin orange segments and almonds.

Chill several hours before serving.

I've made the eggnog cake before. It was good.

Here is a really EASY dessert - it makes a classy presentation and it tastes fabulous!

Cake and Berries with Melted Ice Cream Sauce

Ingredients:

1/2 pint strawberries , sliced
1/2 pint blueberries or blackberries
2 teaspoons sugar
1/2 loaf pound cake , cut into cubes
2 cups strawberry or vanilla ice cream

Directions:

Mix the berries together with a little sugar.
Pile cake cubes up in goblets or sundae cups.
Top the cake with berries.

Melt ice cream in microwave for 15 to 20 seconds.
Stir out any bumps in your melted ice cream and pour evenly over cake and berries.

Be prepared for lots of compliments!!!

I made this many many times! Always great!

Baby food Prune Cake

2 cups flour
1 cup vegetable oil
4 eggs
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon vanilla
1 1/2 cups sugar
1 jar baby-food prunes
1/2 cup buttermilk
1/2 cup chopped pecans

Mix all ingredients well. Bake in a greased and floured tube pan for 1 hour at 350 degrees. Poke holes in the cake with an ice pick and pour glaze over cake.

Glaze

1/2 cup sugar
1/4 cup buttermilk
1/4 cup butter
1/2 teaspoon baking soda

Place in a saucepan. Bring to a boil and cook for 2 minutes. Pour over cake.

This is the recipe I used to make, NOT the one above. I had go to find it.

BABY'S PRUNE CAKE

2 c. self-rising flour
2 c. sugar
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. allspice
1 c. cooking oil
3 eggs
1 c. chopped nuts
1 jar baby prunes (Junior size)

Sift together dry ingredients. Blend together eggs, cooking oil, and prunes. Add dry ingredients and nuts. Bake in tube pan for one hour at 350 degrees.

ICING: I didn't put icing on mine

1 c. sugar
1/2 c. buttermilk
1 tsp. vanilla
1/2 c. butter

Mix all ingredients together. Cook over low heat until thickened. Pour over cake, while still in pan.
