Bacon Wrapped Smokies

"Time consuming but it is well worth it! The brown sugar and bacon grease combine beautifully and give such a great taste."

Prep Time: 45 Min

Cook Time: 45 Min

Ready In: 1 Hr 30 Min

Ingredients

â¢ 1 pound sliced bacon, cut into thirds

â¢ 1 (14 ounce) package beef cocktail wieners

â¢ 3/4 cup brown sugar, or to taste

Directions

1. Preheat the oven to 325 degrees F (165 degrees C).

2. Refrigerate 2/3 of the bacon until needed. It is easier to wrap the wieners with cold bacon. Wrap each cocktail wiener with a piece of bacon and secure with a toothpick. Place on a large baking sheet. Sprinkle brown sugar generously over all.

3. Bake for 40 minutes in the preheated oven, until the sugar is bubbly. To serve, place the wieners in a slow cooker and keep on the low setting.

These are VERY good! I've made them for a few years now. I have to bake them til the bacon is pretty done, I hate undercooked bacon. LOL My SIL started making them also after she had them here!

I stole this from the cooking forum, haven't made it yet, but hope to over the holidays. And darn it, I forgot who posted this now too!

JALAPEÃO POPPER DIP

8 oz. cream cheese, softened
1/4 cup mayonnaise
1/2 cup Cheddar cheese
1/2 cup grated Parmesan cheese
4 oz. canned, sliced jalapeÃ±os
1/4 cup Italian breadcrumbs
1/4 cup grated Parmesan cheese

Mix the cream cheese, mayonnaise, cheddar cheese, Parmesan and jalapeÃ±os in
a bowl and pour into a baking dish.
Mix the Italian breadcrumbs and Parmesan and sprinkle over the dip.
Bake in a 350Â° F. oven until bubbling on the sides and golden brown on top,
about 15-20 minutes. Serve with tortilla chips.

Bacon Crackers

1 (16 ounce) package buttery round crackers 1 pound sliced bacon, cut into thirds 1 pound brown sugar
Directions
Preheat oven to 250 degrees F
Arrange the crackers in a single layer on a large baking sheet. Top each cracker with 1/3 slice bacon, and sprinkle desired amount of brown sugar over all.
Bake 1 hour in the preheated oven, or until browned and crisp. Serve warm.

Another recipe from the Milk Calendar: Ginger-Lemon Beef and Broccoli Serve it over rice or noodles to soak up the delicious sauce. 1 lb boneless beef grilling steak, cut into thin strips 1 cup milk 2 tbsp cornstarch 2 tsp grated lemon zest 1/3 cup reduced-sodium soy sauce 1 tbsp honey 1/4 tsp hot pepper flakes or to taste 1 tbsp butter, divided 1 onion, cut in half and sliced 6 cups broccoli pieces tbsp grated fresh gingerroot, or 1 tsp ground 2 tbsp freshly squeezed lemon juice In a bowl, whisk a little of the milk into the cornstarch to make a smooth paste. Whisk in remaining milk, lemon zest, soy sauce, honey and hot pepper flakes; set aside. Heat a wok or large skillet over high heat. Add half the butter and swirl to coat. Add beef and stir-fry for 3 minutes or until browned; transfer to a bowl. Add remaining butter to pan, then onion and stir-fry 1 minute. Add broccoli and ginger and stir-fry for 3 minutes or until onion is tender. Return beef and accumulated juices to pan. Whisk milk mixture and pour into pan. Cook, stirring and scraping up brown bits, for 2 minutes or until thickened. Stir in lemon juice.

Massimo's Canadian Sandwich (3 Chefs cookbook) Caramelized Onions 2 tbsp butter 1 tbsp olive oil 2 cups sliced onions salt and pepper Sandwich 4 ciabatta buns 1/4 cup tomato sauce 8 slices Gruyere cheese 1/4 cup caramelized onions 8 slices bacon, cooked crisp 24 oz cooked roast beef salt and pepper 1 tsp thyme leaves Heat the butter and oil in a skillet over medium heat. When the butter has melted, add the onions. Season with salt and pepper and simmer gently, stirring occasionally until the onions are caramelized and start to brown. Cut the buns in half and spread some tomato sauce on each half. On the bottoms layer a slice of Gruyere, then caramelized onions, two strips of bacon and 1/4 of the beef. Season with salt, pepper and thyme. Finish with one more slice of cheese and the top of bun. Grill in a panini press until the cheese is melted.

I was looking through my old recipes and came across Mom's Butter Tart Squares recipe. We loved these on a plate of goodies at Christmas, etc. It uses a shortbread base. The only thing I'm not sure of, is that she squiggled out to bake the base first. I'm wondering if it made it too dry, and crumbly by baking first, so I'm going to try it both ways, to make sure that's what she meant. I'm going to make it today and report back with the results. Butter Tart Squares Base: 1 1/4 cup flour 2 tbsp brown sugar 1/2 cup butter Mix together with a fork and press into a square ungreased baking dish. Topping: 1 1/2 cups brown sugar 2 eggs 1/2 cup walnuts 1 cup coconut 1 tbsp flour 3/4 tsp baking powder 1 tsp vanilla 1 tsp butter Mix together and spread over base. Bake at 325 until firm, 30-35 minutes or until nicely browned. Cool before cutting into squares.

Juellie1962, I have no idea how to tell if a mango is ripe, other than the blush on the skin, so I'd probably do the same as houstonmom! Actually a lot of tv chefs use unripened or not fully ripened mangoes when they're cooking them. They apparently sweeten up when cooked.

I am going to add some of the goodies that I am going to be making this Holiday season.....hoping others will to! ~hint, hint~ ;) I picked up a Taste Of Home cookie book last night...OH MY! (of course I can find them all online..but I still like to HOLD a cookbook and read.

Butter Brickle Biscotti

Ingredients
1/2 cup butter, softened
1/2 cup sugar
1/4 cup packed brown sugar
3 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 package (7-1/2 or 8 ounces) English toffee bits or almond brickle chips
Directions
In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Stir in toffee bits.
Divide dough in half. On a parchment paper-lined baking sheet, shape each portion into a 10-in. x 2-1/2-in. rectangle. Cover and refrigerate for 30 minutes.
Bake at 350Â° for 30-35 minutes or until golden brown. Cool for 10 minutes. Transfer to a cutting board; cut diagonally with a serrated knife into 1/2-in. slices.
Place slices cut side down on ungreased baking sheets. Bake for 20-24 minutes or until golden brown, turning once. Remove to wire racks to cool. Store in an airtight container. Yield: about 2-1/2 dozen.

Apricot Pecan Pie

1 8 inch prepared pie shell (unbaked)
1/4 cup sugar
1/4 cup butter or margarine
1/4 cup flour
1/8 teaspoon salt
1 can apricot pie filling 1 pound five ounces can
1/4 tsp. lemon zest
1/2 tsp. almond flavor
1 cup pecan halves

Combine sugar, flour, butter and salt. Mix until crumbly. Place halfof this mixture into unbaked pie shell. Combine apricot pie filling with lemon zest and almond flavoring. Arrange the apricot filling over flour mixture in shell. Sprinkle the remaining dry ingredients over the filling. Top with 1 cup pecan halves. Bake for 35 to 45 minutes at 350 degrees.

I have not tried this recipe, but it is on my to try list.
