Pavlova

Alrecipes. Australia

Prep: 15 mins : Cook: 45 mins

Serves: 8

Ingredients

3 large egg whites

2 tbsp cold water

1 cup (220g) caster sugar

1 tsp cider vinegar

1 tsp vanilla essence

3 tsp cornflour

Preparation method

1. Preheat oven to 150 degrees C.

2. Beat egg whites in a clean medium bowl with an electric mixer until stiff peaks form; beat in water. Gradually add sugar, beating between each addition until dissolved. Beat in vinegar, vanilla and cornflour.

3. Pile onto a baking tray lined with baking paper. Spread out into a 22cm circle. Bake for 45 minutes. Turn off the oven and leave to cool with door ajar.

Note: Take care not to open the oven door while your Pavlova is cooling.

Breton Brittle

28 Dare Breton Crackers
1 c Packed brown sugar
1 c Butter
1 pk (300g) Semi-sweet Chocolate
Chips
1/3 c Chopped nuts

Preparation

Completely line 13x9-inch (3.5L) baking pan with foil. Arrange a single layer of crackers over bottom of pan. Arrange a second layer of crackers to cover spaces between crackers in first layer. (It will be necessary to break some crackers in half so that the entire bottom of pan is covered.) In medium saucepan combine sugar and butter. Cook and stir over medium heat until mixture comes to a boil. Remove from heat; pour evenly over crackers in pan. Bake in 400F (200C) oven 5 minutes. Remove from oven; sprinkle with chocolate chips. When chips are soft, spread over top. Sprinkle with nuts. Chill until chocolate is set. Break into pieces to serve. Store in refrigerator

Orzo with Chicken, Corn and Green Beans (Everyday Food)

8 oz orzo pasta
8 oz green beans, trimmed and cut into 1" pieces
1 tbsp olive oil
4 garlic cloves, minced
1 pkg (10-oz) frozen corn, thawed
4 cups shredded roasted chicken breast

Cook orzo in boiling salted water until al dente, adding green beans during the last 6 minutes of cooking. Drain orzo and beans; rinse under cold water.

Meanwhile, heat oil in large skillet over medium heat. Heat garlic, cook, stirring until fragrant, 1-2 minutes. Add corn and 1 tsp salt. Cook, stirring occasionally until warmed through, 2-3 minutes

Ross orzo and green beans with corn mixture and chicken. Season generously with salt and pepper.
This dish can be made up to 2 days ahead. Serve chilled or at room temperature.

I've made this Honey-Whole Wheat Bread twice now and we love it! I'll post the complete recipe. My bread-maker doesn't hold 6 cups of flour, so I cut the whole recipe in half. I use it to knead the dough, then put in a loaf pan and bake. Honey Whole-Wheat Bread (2 Loaves) 3 1/2 cups white flour 2 1/2 cups whole wheat flour 2 pkg yeast 2 tsp salt 1 cup milk 1 cup water 1/2 cup honey 3 tbsp oil 1 egg In large bowl, combine 2 cups white flour, 1 cup whole wheat flour, the yeast and salt and mix well. In saucepan heat milk, water, honey and oil until a thermometer reads 120-130 degrees. Add liquid mixture to dry ingredients and stir to combine. Beat this batter for 3 minutes. Gradually stir in the rest of the whole what flour and enough remaining white flour to form a firm dough. Sprinkle work surface with flour and knead dough, adding more flour if necessary, 5-8 minutes, until smooth and satiny. Place dough in a greased bowl, turning the dough to coat the top. Cover and let rise until double, 1 hour. Punch down dough and divide into 2pieces. On lightly floured surface, roll or press each piece of dough into a 14"x7" rectangle. Starting with shorter side, roll up tightly, pressing dough into roll with each turn. Pinch edges and ends to seal and place dough, seam-side down, into greased 9x5 bread pans, making sure short ends of bread are snuggly fitted against the sides of the pan. Cover and let rise in warm place until the dough fills the corners of the pans, and is double in bulk; 30-40 minutes. Bake in preheated 375 degree oven 35-40 minutes until bread is golden brown. Bread may brown too quickly because of the honey, so cover with foil if needed. Also try baking the bread on a lower rack. Remove from pans and cool on wire rack. I like to brush the bread with butter when it's still hot for a softer crust.

English Breakfast In A Bun * Time 15 minutes * Serves 6 Ingredients * 1 cup of water at room temperature * 2 1/2 tbsp olive oil * 2 1/2 tbsp dried milk powder * 2 1/2 tbsp sugar * 1 1/2 tsp salt * 3 cups white bread flour * 1 1/2 tsp active dried yeast * For the filling: * 4-5 slices of bacon * 6 mushrooms, sliced * 3 medium sized tomatoes, sliced How to make it * To make the dough, place all of the ingredients in the bread pan in the order listed unless your bread machine directions say otherwise. * Place the pan in the bread machine making sure that the pan is in the locked position. * Close lid and select dough setting and press start. * If your bread machine has a quick dough setting choose that one. * To make the filling, fry the bacon for a few minutes on each side in a frying pan. * Add the mushrooms and then the tomatoes and fry until cooked. * Put the mixture to one side to cool. * When the bread cycle is complete, remove the pan and tip the dough onto a lightly floured work surface. * Knock back the dough and then divide into 6 or 9 equal sized pieces. * I made 6 equal sized portions and they were quite big! * Flatten each piece, then divide the crumbled bacon, mushrooms and tomatoes between the centers of each. * Brush round the edges of the dough with a little water, then bring them up around the filling. * Pinch together to seal. * Place join-side down on a lightly greased cookie sheet. * Cover loosely with a clean dish towel and leave in a warm place to prove for about 20 minutes. * Bake in a preheated oven at 220 degrees for 15 minutes if making 6 buns. * If making 9 buns bake for about 10-15 minutes. Here's a meatloaf recipe using chipotle ketchup for a bit of kick. It makes a lot, so I'm going to cut it in half. Adelle's Meatloaf with Chipotle Ketchup 2 slices applewood smoked bacon, diced 1 small yellow onion, finely chopped 1 carrot, diced 1 celery stalk, diced 1 cup shiitake mushrooms, julienned 1/4 cup red pepper, diced 2 cloves garlic, minced 1 tablespoon fresh basil, chopped 1 tablespoon fresh thyme, chopped 1 1/2 pounds ground veal 1 1/2 pounds ground pork 1 1/2 pounds ground beef 2 eggs 2 tablespoons Worcestershire sauce 6 tablespoons plain ketchup 1 tablespoon Dijon mustard Salt and pepper to taste Chipotle ketchup 4 cups tomatoes, chopped 3/4 cup tomato paste 2 cups onion, chopped 1 green pepper, chopped in 1-inch pieces Canned chipotle peppers to taste 1 bay leaf 1/4 teaspoon ground cloves 1/4 teaspoon ground allspice 1/4 teaspoon black pepper, ground 1/4 teaspoon cinnamon 1/4 teaspoon dry mustard 1 teaspoon garlic, minced 1/4 cup malt vinegar 1/4 cup brown sugar For the meatloaf: Heat oven to 350 degrees. I like molasses as part of the glaze or sauce, so this recipe looks good to me. Molasses Chicken Breasts with Swiss Chard (Real Simple) 4 6-ounce boneless, skinless chicken-breast halves 1/2 cup ketchup 2 tablespoons molasses 4 tablespoons olive oil 1 teaspoon dry jerk seasoning (found in the spice aisle) kosher salt and pepper 1 baguette, sliced in half lengthwise 2 cloves garlic, finely chopped 2 shallots, thinly sliced 1 large bunch Swiss chard (stems trimmed), roughly chopped Heat broiler. Pat the chicken dry with paper towels, pound to an even thickness, and place on a broiler pan. In a small bowl, combine the ketchup, molasses, 1 tablespoon of the oil, the jerk seasoning, 1/4 teaspoon salt, and 3 tablespoons water. Brush the chicken with the glaze. Broil, brushing occasionally, for 4 to 6 minutes. Turn, brush, and broil for 4 to 6 minutes more, until cooked through. Brush the bread with 1 tablespoon of the oil and sprinkle with the garlic. Broil until crisp, 1 1/2 minutes. Slice the bread crosswise. Meanwhile, heat the remaining oil in a skillet over medium heat. Add the shallots and cook, stirring, for 4 minutes. Add the chard, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook until wilted and tender, about 5 minutes. Divide the chicken, chard, and bread among individual plates.

Glazed Apple Cookies

Ingredients:
1/2 cup unsalted butter
1 1/3 cups packed brown
sugar
1 egg
2 cups sifted all-purpose
flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground
cinnamon
1/2 teaspoon ground
cloves
1/4 teaspoon ground
nutmeg
1 cup chopped walnuts
(optional)
1 cup apples - peeled,
cored and finely diced
1 cup raisins
1/4 cup milk
1 1/2 cups sifted
confectioners' sugar
1 tablespoon butter
1/2 teaspoon vanilla extract
2 1/2 tablespoons half-and
-half cream
Directions:
1. Beat butter and brown sugar together until light and fluffy. Beat in egg and blend thoroughly.
2. Stir together flour, baking soda, salt, cinnamon, cloves and nutmeg.
3. Stir half the dry ingredients into creamed mixture. Stir in nuts, apple and raisins, then stir in remaining half of dry ingredients and milk. Mix well.
4. Drop from tablespoon 1 1/2 inches apart onto lightly greased baking sheet. Bake in a preheated 400 degree oven for 10-12 minutes. Remove cookies to racks and while still warm, spread with glaze.
5. To make Glaze: Combine powdered sugar, butter, vanilla and enough cream to make glaze of spreading consistency. Beat until smooth. Spread on warm cookies.

I love Pavlova! My recipe called for making a well in the center and when baked and cooled, fill with fresh fruit (I used strawberries) and top with whipped cream. It was so easy and looked really elegant.

This is a new recipe I'm trying for dinner tonight.

SAUCY SWISS STEAK (CD Kitchen)

2 pounds round steak
2 tablespoons flour
1 sliced green pepper
1 teaspoon salt
1/8 teaspoon pepper
2 tablespoons salad oil
1 large onion, sliced
1 can (16 oz.) tomatoes, cut up
1 stalk celery, thinly sliced
1 tablespoon thick bottled steak sauce

Cut steak into serving size pieces. Coat with flour, salt and pepper. In large skillet or slow cooking pot with browning unit, brown meat in oil. Pour off excessive fat.

In slow cooking pot, combine meat with tomatoes, onion, green pepper and steak sauce. Cover pot and cook on low for 6 to 8 hours or until tender. Thicken juices with additional flour, dissolved in a small amount of water, if desired. Serves 6.

2 cups chicken broth
1 tablespoon butter
1 (10-ounce) package plain, uncooked couscous
1/3 cup grated Parmesan cheese
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
Preparation
Bring 2 cups chicken broth and 1 tablespoon butter to a boil. Stir in 1 (10-ounce) package plain, uncooked couscous; cover and remove from heat. Let stand 5 minutes. Stir in 1/3 cup grated Parmesan cheese, 1 tablespoon fresh lemon juice, 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/8 teaspoon freshly ground pepper. Fluff with a fork, and serve immediately.
