Thanksgiving at friend, and she prepared mashed potatoes with cream cheese and sour cream.

To die for!

Plus she made a meat dressing, with allspice, etc.

Told her that the potatoes and meat dressing on top would be a wonderful dish for after Thanksgiving leftovers.

Going to sleep with visions of that delicacy.

Of course she had lots of other good eats, but the potatoes and meat dressing, I'll dream of lol

Friend is French Canadian, and she grew up on the meat stuffing. Awesome!

I will definitely try your hummus recipe...it sounds great. This is a fairly simple one from a blog called Smitten Kitchen. It's also very good! Smashed Chickpea Salad Inspired by Âwichcraft 1 15-ounce can chickpeas, drained and rinsed 2 tablespoons pitted, halved and very thinly sliced black olives 1 tablespoon finely chopped red onion 1 tablespoon chopped fresh parsley Zest and juice from half a lemon (if youÂve got one of those sad, juiceless lemons, use both sides for juice) Couple good pinches of salt A few grinds of black pepper A few glugs of olive oil (the original is quite oily, like bread-soaking oily, I went a little lighter. Both ways are delicious) Mix everything but the olive oil in a small to midsize bowl. Very lightly smash the chickpea mixture with the back of a fork or a potato masher. YouÂre not looking for a hummus-like puree but something closer to a coarse chop with a few smaller bits to hold it together. Add the glugs of olive oil, mix it lightly and enjoy. This is also awesome as a sandwich on toasted bread, and it needs nothing else on it. But, if you want to doll it up, here are some ideas: A slice of roasted red pepper (as they do at Âwichcraft), watercress (ditto), a slice of pickled garlicky red pepper (our way). We schmeared the bread with a tahini dressing, which was just tahini, lemon juice and a minced garlic clove thinned with water, but if youÂve got some harissa, I bet that would also be delicious.

Do not microwave. The best mashed potatoes I ever had were those that were served at David Bouley's restaurant in NYC. He used Yukon Gold. Cook the potatoes and then drain and then cook for a few minutes more without water. The point is to dry them out. Then add butter and/or heavy cream, heat that while mixing with a big spoon, and put through a ricer or Chinois - it's a conical kind of colander that has a big wooden stick to push food thru the holes - you use it to make applesauce or stuff like that. And then put the potatoes thru again. Even better is to put them thru the ricer, keep heating those and drying them out, and then adding the cream and putting thru a second time. Use at least a tablespoon of butter and a tablespoon of cream for each potato. You can use a lot more if you want - anywhere from 4:1 to 2:1 works. If you use enough heavy cream, as I do, you can eliminate the butter. If you don't serve these fresh, you can keep them in the fridge. Pipe them into a baking dish first and they'll look nice when you take to your host. They can put them in the oven and lightly brown them like potatoes duchess, which is what I'd do, rather than microwave. So what's the "science" behind it? You want the potatoes to cook but you don't want them to absorb water. That's why many people cook them in the skins. That's fine. But you really want to dry them out before mashing, because too much water will cause the cells to expand and explode and you'll get a gelatinous kind of mess. If you use really young or waxy potatoes, you get a gooey product, so you want to be sure you have starchy potatoes. But if you beat them with a mechanical beater or even your masher, you break up the starch cells and the starch gets released into the water or liquid and that's like cornstarch thickener - makes the potatoes gooey. So use starchy potatoes, make sure you dry them out, and then use a LOT of butter or heavy cream. NOT milk or half and half - the point is not to add water, it's to add butterfat. Recipes calling for cream cheese or stuff like that are trying to make the potatoes creamy because most people don't do it right and that way you can hide some flaws. That can be very delicious, but all you really need is a ricer, potatoes, and cream. Bouley was one of, and according to some people, THE best restaurant in NYC and they charged you a lot of money for the simplest preparation of those delicious potatoes. It's not actually his recipe as far as I know - it's used by most of the better French restaurants in town. BTW - if you have a ricer with holes on the side, be very careful because you'll spray potatoes all over the wall! Good luck!

Idahoans here too! I also use lots of butter and more milk than water and add more milk as needed.I also add heavy cream if I have it and sometimes sour cream. When we had our little cafe a few years ago I always made mashed potatoes from scratch.One day I was low on potatoes and needed to make them for the dinner run and didn't have time to go to the store for more potatoes.I had a can of instants and about 4 potatoes,so I peeled and sliced them and cooked them as I would for mashed potatoes.When they were done I added butter and salt and pepper and blended them up in the cooking water with the hand mixer.They looked like potato soup at this point.Then I added the potato flakes until they were thick.Then I added enough milk to make them the right consistency.Everyone raved about the mashed potatoes.What had I done? They were "even better than the usual ones I always made".LOL To this day I still make them that way for my family and they all love them.When it's just DH and I and we are hungry for mashed potatoes I just get out the can of Idahoans.He has never liked instant potatoes but likes this brand.

I do not think that making it on a large scale is a good idea, since it does not keep well - better to make just what you need for a few days at a time - not more than a week. The recipe you linked to says to cut the potatoes into 1" cubes - that seems a bit large to me. I would never cut them into any larger cubes than 1/2", but that's my personal preference. I do like the idea of blue cheese and bacon with potatoes - I frequently have baked potatoes that way. Lars

I love mashed potatoes with sour cream. Never thought to add cream cheese though. I always add a bit of garlic salt to my potatoes.

Glenda--I'm gonna assume it was the day's tryptophan from those potato carbs than made you sleepy and unable to get that recipe from her??? Call her! Tell her you teased your KT friends and made them drool on our keyboards and can only begin to earn our forgiveness but that the recipe will be a start! LOL!

I always do the make ahead mashed potatoes with sour cream and cream cheese. Make the day ahead and just pop into the oven until bubbly hot. Delish!!!

Like Mush, Mom always makes the mashed potatatoes/sour cream, cream cheese and shredded cheese on top a couple days ahead. This is for Christmas and TG.
I posted the recipe earlier this week, or late last week.

One time, she didn't make them, but regular mashed, and the whole family almost had a mutiny! LOL

I make my mashed with sour cream, but the cream cheese is a different addition. Will try it next time. I once had mashed with some horseradish added-that was very interesting.

I started putting meat in my stuffing a year ago. What a difference it makes. I make a plain jane bread stuffing, but add the meat from six hot Italian sausages to it. I fry it up, crumbling it up. (remove it from the casing first). Once the bird is stuffed, I put thick sliced bacon all over the top of the bird and put it in the oven, covered. I uncover the last 1/2 hour to 45 minutes to brown the bacon. Remove the bacon then crumble it finely. In the meantime, leave the bird in the oven and it'll brown nicely. When you take the stuffing out of the bird, mix in the crumbled bacon. I also add cranberries to the stuffing. One of the guys I work with told me his sister did this so I tried it for Christmas and it was an instant hit. You would think the spices from the sausages would over power the 'normal' dressing spices, but it actually enhanced them, with a tiny kick. Even people who don't like spicey would eat it, I'm sure.

We always make sausage stuffing, this is the first year I ever made it outside the bird and it was very good but I have never added allspice, may try that. I always add cream cheese to my mashed taters, and since I am diabetic and need the fat with any carbs that I eat, they are made with cream.

Yes - Company Potatoes is what I know those mashed potatoes as. Sour cream, cream cheese, and a good lot of garlic salt. Friend gave me the recipe long ago and I never make them any other way. Easy and even better the 2nd day.

I've seen a "make-ahead" mashed potatoes recipe over on the HGTV cooking forum frequently, a recipe that you make in a crock-pot.

I love horseradish mashed potatoes! Great for any sinus block, that's for sure!

Always add cream cheese and sour cream to my mashed potatoes, along with the cream and butter. Might as well go all the way! Make them up the day before and put them into a large baking dish and pop into fridge. Morning of holiday, I take out dish to almost room temp and then heat/bake in the oven to get a slightly brown top. DH's family goes crazy over them!

The meat stuffing is with two or 3 kinds of ground meat, cooked with allspice and cinnamon, etc.. No bread in it.

That sounds like the ingredients in the Tourtiere. It's a French Canadian meat pie that has allspice, cinnamon and summer savory in some of the receipes. I've only had it as the pie though, not stuffing. I'll bet that was wonderful!
