I see that my wet burrito recipe wasn't very well received by the cooking snobs at the CF!.........lol! just wanted to say thanks for posting it and to tell you that hers didn't come close to looking right! each to his own.....lol.

I love a wet burrito and read your recipe...Looks good to me....Here's another you might like to try on this website.......
they are making it for enchiladas but it's just as good on burritos..

I didn't post my recipe for wet sauce....easy.
Lard
Gephart's chili powder
Wondra flour
cumin seed, toasted
beef or chicken broth or water
I think it is one Tablespoon of lard, chili powder and flour for each cup of liquid.
I just sort of play around with it until it tastes good and is of the right consistency.

Stuffed Cabbage Rolls, one of my favorites! STUFFED CABBAGE ROLLS 1 small whole Green Cabbage 2 tablespoons Butter 1 pound Ground Pork 1 pound Ground Beef Salt and Pepper to taste 1 Cup Chopped Onion 4 Cloves Garlic, minced 2 Cups Cooked Long Grain Rice 1 Egg Ã¯Â¿Â½ Cup Chopped Parsley 2 15 ounce cans of Stewed Tomatoes 1 5ounce can Tomato Sauce Bring a large pot of water to a boil. Core the Cabbage and place the whole head into the boiling water, core side up. Remove the individual leaves with tongs as they cook, and put them into a colander to cool and drain. Remove as many as you can. Set the remaining head aside to cool and drain. Melt the Butter in a sautÃ¯Â¿Â½ pan, and add the Ground Pork, Ground Beef, Onion and Garlic, and sautÃ¯Â¿Â½ until the meat is completely cooked. Remove from heat and cool slightly. Place all in a large mixing bowl, add the Egg, Rice, Parsley and Salt and Pepper, and stir gently to combine. Place approx. Ã¯Â¿Â½ cup of the meat mixture at the base of the Cabbage Leaf and roll tightly, folding in the sides as you go. Place in a deep stockpot, layering closely. Chop the remaining head of Cabbage and distribute between the layers. Pour one can of Stewed Tomatoes over the first Layer. When all the Filling and Cabbage Leaves are used, pour on the second can of Stewed Tomatoes. Be sure there is plenty of headroom in the pot as the rolls expand as they cook. Bring the pot to a boil and reduce heat to a simmer, cover and simmer for an hour, checking the liquid level frequently, adding Water or Tomato Juice if necessary. After the first half hour pour the Tomato Sauce over the Rolls. Finish cooking. Remove to a large platter and cover to keep warm. Increase the heat to medium and stir the pot until the sauce has thickened. Taste to correct seasonings, and serve the Sauce on the side. These are definitely better reheated the next day. Steve

No I do not believe a corn tortilla ever includes any baking powder. ..A real tortilla is a very very simple product. That is not to say that many fancy mexican places don't make them with extra ingredients but a real Mexican tortilla is a simple 2 ingredient bread. If you want them to puff up in the middle the way they do around the edges, just take a spatula and press the center area after you turn the tortilla..not hard...gently. I learned to make and cook them from Mexican women and most of them use their fingers or a clean dish towel and just gently press down on the tortilla and it will puff. You cook them for a few seconds (10 or 15) on one side until it starts to have a few brown spots,... flip and cook this side for a few seconds...press it very lightly to make sure it is in contact with the griddle...It doesn't take long but they get a definite color change with browned spots and this will make a tortilla puffy.,,,I cook my tortillas on a heavy duty comal but a non stick skillet will work. They may not look as puffy after you take them off the grill but they will be two sided like pita with lots of puffiness...They do need to be nice and thin to start with as well. I think what kfc made might be very tasty but she asked for a corn tortilla recipe and what she made was not a corn tortilla and probably isn't going to be the dreamed of puffy home made tortilla de maize...

Jenn that salad sounds DELISH! My mom gave me a bag of walunts and I already had two bags in the freezer, so I'm collecting walnut recipes, lol! Speaking of walnuts, the salad I made for Thanksgiving was delicious. I didn't follow it to a T though. But I love beet salads and this one is lower fat than my traditional beet salad which has goat or feta cheese in the mix. BTW, this was also great mixed in with some homegrown cabbage the next day as a kind of coleslaw. Beet and Walnut Salad - Rachel Ray 1/2 cup chopped walnuts 1 heart romaine lettuce, chopped (I used a gourmet lettuce mix, including red leaf, mache, romaine and frise, my favorite. Also added chopped cabbage the next day.) 1 can sliced beets (14 ounces), drained and chopped (I left out this time, subbed a red pepper for color) 4 radishes, chopped 1/2 small red onion, chopped 2 ribs celery, chopped (I subbed two pickling cucumbers, very yum!) 2 tablespoons black cherry, seedless raspberry or apricot preserves (I used blackberry) 2 tablespoons vinegar, eyeball it 1 teaspoon poppy seeds, (optional, but makes the dish, IMHO) 3 tablespoons extra-virgin olive oil (EVOO) Salt and pepper Toast the nuts in a small pan over medium heat, 3-4 minutes, then let them cool. Combine chopped lettuce, beets, radishes, onion, celery and toasted walnuts in a shallow bowl. Place the preserves into a small bowl and whisk vinegar into it. Add poppy seeds to dressing if you are using them. Whisk EVOO into the dressing and season it with salt and pepper. Dress salad and toss to coat evenly then adjust salt and pepper to your taste. Lpink's notes: I marinated the chopped veggies in the dressing for a couple of hours before putting the stuff on the lettuce. Also, it still tasted kinds bland to me so I added 1 or 2 TBLSP raspberry balsamic vinegar. I can't remember if it was 1 or 2, but it made the salad, that's for sure. Could add more of the preserves and regular old balsamic vinegar if you don't have the snazzy raspberry kind. ________________________________________________________ This dressing was a great alternative to the usual sagey kind, I may make it every year. Wild Rice and Goat Cheese Dressing Recipe courtesy Bobby Flay Prep Time: 25 min Inactive Time and Cook Time: 1 hr 45 min Serves: 6 to 8 servings (Definitely 8!) Ingredients 2 cups wild rice 6 cups water 3/4 pound Spanish-style chorizo, diced, see Cook's note* 5 tablespoons unsalted butter, plus extra for greasing the dish 1 cup Spanish onion, diced 1/2 cup diced carrots (BF didn't want carrots so I used all celery, but it would have been great with carrots) 1/2 cup diced celery 3 cloves garlic, finely chopped 2 tablespoons fresh thyme, chopped (I used 1 1/2 tsp. dried thyme) 1 (day-old) loaf country-style bread, cubed 2 to 4 cups homemade chicken stock (Use the lesser amount) 12 ounces goat cheese (I used maybe 6 oz.) 1/2 cup fresh flat-leaf parsley, chopped (I used 2 heaping TBLSP dried parsley) Freshly ground black pepper Kosher salt Directions: Combine the rice, water and 1 tablespoon of salt in a large saucepan, bring to a boil over high heat and cook until the grains open all the way, about 1 hour, 15 minutes to 1 hour, 30 minutes. The rice should be very cooked (not even the slightest chewy). Drain well, place in a large bowl and set aside. (I cooked the rice in vegetable bouillon, saved the leftover broth for the dressing. I did not add salt and 1 TBLSP seems like a lot, I would never put that much salt in something! I would use maybe 1 tsp.!) Preheat the oven to 375 degrees F. Heat the butter in a large high-sided saute pan over medium-high heat. Add the chorizo, onions, carrots and celery and cook until soft. Add the garlic and thyme and cook for 1 minute. Add the onion mixture, bread, goat cheese, parsley and 2 cups of the chicken stock to the rice. Mix to combine. The mixture should be quite wet; add more stock, if needed. Season with salt and pepper to taste. Transfer the mixture to a large buttered baking dish and bake, uncovered, until heated through and golden brown, about 30 minutes. Remove from the oven and let rest 10 minutes before serving. *Cook's note: We recommend to order from D'Artagnan because it's not raw or totally cured and cooked...it's kind of in between. Lpink's notes: I didn't use chorizo, so I don't know how good it would be with that spicy sausage. I had some maple flavored vegetarian sausage I wanted to use up, and some mild natural pork sausage links. The kind of sausage you use is the key flavor ingredient here, so if you don't think you'll like chorizo flavored dressing, use another kind you like. Also, I think all that goat cheese is overkill, definately not needed or use way less. Lastly, I added about a cup of chopped and sauteed gourmet mushrooms because I thought the recipe called for them when I got them at the store. They were great in the recipe!

Cuban style black beans are good in a burrito, but you have to be very careful about the moisture content. When you're removing them from the pot, use a flat slotted spoon and really let the wet drain out. There should still be enough sauce left for the flavor and texture. Too much wet and the burrito will fall apart. Oaxaca cheese pairs well. It's melty but more solid than some cheeses. Your basic, street style (SoCal), bean burrito is made with refried pinto beans, white flour tortillas, and sometimes a little Mexican rice (toasted, lightly fried and seasoned) or white cheese, and grilled. This is the palm sized burrito, not the big kind that's served on a plate. Traditionally, both the tortilla and the beans were cooked with lard, but for many decades they've been just as likely to be vegetarian. If you're using wet ingredients (like vegetables), lightly toasting your tortilla before you assemble can help keep it from falling apart. You want it to still be very pliable, but somewhat dried out. Otherwise, just lightly warm it to make it more pliable for rolling. As to recipes beyond that, it's look in your fridge, see what needs using up that'll taste good together, balance the moisture and seasoning, go easy on the quantity of filling if you want to be able to pick it up (it's way easy to overstuff a burrito), and grill on all sides on a plancha or frying pan. If you're serving on a plate with a fork and knife, you can cover it with any sauce you have handy, guacamole, etc. A good burrito, however, is moist enough inside not to need sauce, but not so moist that the tortilla collapses with sogginess. There really isn't anything more to making burritos. Do you need bean recipes?

I know that yours has been tried by our friends here, and thought it was a good one to share. My mistake, I guess!

I DO want to try it as well. Do you use a 14 or 28 oz can of tomatoes?

I didn't think that you might or might not be upset that I shared.....whew! I'm glad it was okay....

glad you did share it even though it didn't meet their standards...lol. i use the smaller can of tomatoes and any variety is fine. some like the seasoned for extra spice but i find it spicy enough so i prefer the plain tomatoes.

thanks for the other recipes ruthie and carol.. i will have to try them.

Jae, just want to let you know we love your wet burrito recipe. Since the recipe makes 10 large burritos I froze 8 of them in bags of two. They are even better after they're thawed. Just used our last two, so it's time for another batch. Just want to thank you again for the recipe.

I just started reading the KT forum a couple of months ago. I'm a regular on the Cooking Forum and Caregivers Forum. I realize that Jae was hurt because the recipe wasn't enthusiastically received by the poster on the CF, but she did not make any unkind comments. She is one of the most gracious posters on the CF. However, she is very much a "from scratch" cook. Several people posted sauce recipes and the post eventually turned into a discussion of the differences between a wet burrito and an enchilada.

I was a bit hurt to be referred to as one of the "cooking snobs at the CF." And criticizing the CF poster's wet burritos for not "looking right" was not necessary.

There are a lot of levels of cooking skills represented on the Cooking Forum -- from master chef to beginner. Everyone shares recipes but not all recipes become "hits." Everyone also has different ideas about what tastes good: some can't stand bananas, while others dislike cilantro. That's part of what makes the forum interesting -- reading about the different techniques, regional preferences, etc.

And like the Kitchen Table, the Cooking Forum has its share of dust ups. But that's to be expected when you have so many people posting their own unique ideas.

I can't really explain why this post bothered me enough to reply, but it did. I've posted several recipes on the CF and not had anyone try them. I don't take it as a personal affront. It may have not struck anyone's fancy. I know I do the same thing when reading through recipes on AllRecipes or other food sites. A recipe may get 430 reviews, all 5 stars, and yet, for some reason, it doesn't appeal to me. Who's right? Me or the reviewers? No one is right because taste & smell is so very subjective.

Where I live a wet burrito (actually it is called a burrito mojado) is any burrito topped with sauce. They are never cooked in sauce. The sauce is put on top.

I am surrounded by Mexican families, taco trucks and restaurants. No such thing as cooking burritos in sauce around here.

Burritos are kind of a fast food around here. Even at home. We would never make them ahead. Might have the filling made up ahead of time and the sauce for a burrito mojado but you simply warm the tortilla, (when doing many I steam them over a pot of boiling water) fill and fold and eat.

Just like tacos. You don't make tacos ahead of time. You build a burrito when you will eat or serve it. If you want it wet you top with sauce and cheese if you want.

Have a restaurant that opened recently near me called Izzo's Illegal Burrito.

Had lunch with DS there the other day. I had their smallest burrito with the spinach tortilla. Son had his with their cayenne tortilla.

I didn't see anyone being either insulting or snobbish. Someone just said she preferred to cook without cans. I can't say I blame her.

I never, ever cook with cream of whatever soup, or canned or jarred gravy. First, I can't stand the mouth-feel of the canned soups, and second, the sodium content would really affect my DH's blood pressure.

You're reading insult where none was intended, and really, none was given. She was quite polite.

this is the comment that elicited my "CF snobs" comment

"Thanks Jasdip, I prefer to make my own sauces from scratch. Not much into a jar of this and a can of that... " maybe i'm being thin skinned about it but it hit me as being dismissive and that my recipe wasn't worthy since it used cans of stuff rather than homemade. even though it isn't "homemade" it has been very well received and i appreciate that jasdip offered it to them.

and on a funny note, someone there mentioned Beltline Bar in Grand rapids, Michigan. well, that is the restaurant that my recipe was created from. we lived there many years ago and that is the taste that was closest to theirs!

I don't go to the CF; I get more than enough excellent recipes right here! :)

Jae, I can understand that you were a bit hurt because the CF poster did not enthusiastically embrace your recipe. But your response was to label Cooking Forum posters as snobs: "I see that my wet burrito recipe wasn't very well received by the cooking snobs at the CF!"

I'm a regular on the Cooking Forum, so you were making a statement about me. I do not consider myself a cooking snob. As I said before, the Cooking Forum includes all levels of cooking skills, all kinds of tastes, and many different approaches.

shambo - i apologise for that generalization. it was said tongue-in-cheek but there wasn't one comment in support of it even after jasdip posted her regret ar making the reply. it was obviously not well received due to it not meeting the standards of the cooks there. again, i really don't care if anyone tries it or not! i have asked a question or two over there before anf have been warmly welcomed so, no i don't mean to have generalized by my comment and will do so in any way to assure that it be known that it was made it jest. i regret that i didn't add my usual " lol" to it. i would love for just one person to try my recipe before condemning it to the rejection pile........

Jae, I think you're being too hard on yourself. Five people offered recipes, and the original poster used two of them as guidelines only. In fact, one of the posters actually complimented your recipe. The majority of the comments were part of a discussion about the differences between wet burritos & enchiladas.
