What's for dinner Monday?

They are still up on the roof pounding, pounding, pounding! I bet they've put a nail every two inches up there. Geesh, I'll be glad when this is over. Hopefully, today.

Leftover sausage stuff from last night. Neither of us are very hungry. What are you having?

Hi Patti!
I fried the last of yesterdays mashed potatoes (loved mashed, fried), and made salmon patties. Instead of using bread crumbs, I use some mashed potatoes as the binder as well as egg, hot sauce, dijon and onion. They don't hold together perfectly, are still a bit crumbly but they taste good.

Sauerkraut and sausage in the crockpot, cottage cheese and bread and butter. So good!

I've eaten at Tubby's for breakfast, which was pretty good. The Marshall House is so beautiful! Did they tell you that you got there at a lucky time? You just missed the St. Patrick's Day parade, when hundreds of thousands of people attend what is reported to be second largest St. Pat's celebration in the country. What a green crush of people! But it is an incredible parade...I'm glad I went but once was enough. And I think that the big music festival is coming up, another time that the city is packed to overflowing. The hotels and inns are booked a year in advance!

Jim congratulations on your upcoming cruise! I love it that you had wine with bacon and eggs. Audrey, your dinner looks and sounds fabulous. We had baked potatoes last nite. Shirley, I've yet to make red beans and rice. What's throwing me off from making it, much as I'd like to, is that we only have kidney beans, as far as a red bean, and I know that isn't the kind to use. I made quinoa with toasted almonds and red currants the other day. We like quinoa. Kath, for some reason companies change their recipes. In the event of making things healthier, taste gets compromised. Less fat and salt is less flavour it seems. Prairie Rose, do you make the light fluffy dumplings? That's what my Nan made and that's all I've ever known. I've never attempted it; I should! Raven, that looks divine!! We love roasted vegetables! Erin, I hope you feel better. That's dedication, coming onto a dinner thread when you're not feeling that great. Betsy, that's nice comfort food. Gyr_Falcon, that's a great sounding meal! Glad to see you here.

The weather here today was similar to yours, jasdip. We decided to go to the famous local seasonal 'dive' which opened for the season yesterday... a family business since 1938, I think. It's just a little shack with minimal cooking facilities (bbq sandwiches, hamburgs, hotdogs, fries) where you stand outdoors in line to order. They also have an ice cream side, but it's not open yet. You can do take-out or eat outdoors on picnic tables. It's near a busy intersection so always noisy, but the food is good and super cheap, so it's always busy. Totally tacky and totally fun. You'll see everything from tattooed grandmas on motorcycles to vice presidents in suits all standing in that line together, and today the lines were the longest I've ever seen! I chose a pork sandwich w/ bbq sauce, dill pickles, hot relish on the side (they make their own and it's really good) and fries. Totally happy here. :O)

Gorgeous day here today. I made grilled chicken breast in cacciatore sauce with sliced fresh little tomatoes and served it over fettuccine topped with grated cheeses. It was awesome. I should have made garlic bread to go with it.

Luncheon today with 15 lovely gals at Italian restaurant. We had reservations in their private dining room. We just chatted away.

Awesome bread right out of the oven.

I had a side of two Italian sausage links with marinara sauce. Very satisfying and the total bill was $3.18.

Rest of the gals ordered from their luncheon menu.

Tator tot casserole (at my son's request), homemade apple sauce and muffins. Made it over my lunch hour....now I just have to hope that someone saw my note and put it in the oven on time.

I am making pot roast in the oven, with red potatoes and carrots and onions with some brown onion gravy and rice YUM.

A bowl of asparagus soup which afterwards gave me so much gas I had to take two big swigs of Pepto Bismo. When I bent over to pick up the cat's dish, it was like a huge balloon deflating out you-know-where for the longest time. Sure glad I live alone. Wow, felt so much better. :)

We grilled steaks with southwest style hashbowns,lettuce salad and garlic toast.

I made Ms. Hunny's Green Chile. DH loves it. Last night I used to to make kind of a taco pizza.

From Ms Hunny

Green Chile

Pork. roast, steaks chops. whatever. Cut into cubes.
Two small or 1 large can of green enchilada sauce
1 med. onion chopped
1 sm. can green chili's
S&P to taste

Use as much pork as your family will need. Put it all into a crockpot or kettle. Let cook until tender. Stir once in a while to blend flavors. Add a little water if it starts to get dry. You can add a jalepeno or hot sauce to taste. Serve with flour tortillas.
Careful with salt as the enchilada sauce has plenty.
