Oh boy, does that look good. I'd do the same thing--take it off the bun. I'd love to try the tea chicken. Sounds wonderful!

Here's recipe for sweet tea fried chicken. Did a search and all the recipes are basically the same.

Sweet tea fried chicken

8 chicken leg quarters
1 quart brewed tea, double strength
1 lemon, zested, quartered
1 cup sugar
1/2 cup kosher salt
2 cups all-purpose flour
2 cups masa harina (fine cornmeal)
2 tablespoons Old Bay Seasoning
1 tablespoon chili powder
Salt and pepper, to taste
2 cups buttermilk
1 quart vegetable oil

How to make it

Mix brine ingredients. Simmer 5 minutes, until sugar and salt dissolve. Add 1 quart ice water. Submerge chicken for 48 hours, refrigerated. Drain.

Mix flour, masa harina, Old Bay, chili powder, salt and pepper in large bowl. Soak chicken in buttermilk in medium bowl, 2 minutes. Remove, draining off excess liquid. Coat chicken in masa harina mixture. Let sit 30 minutes before frying.

Heat oil to 325�F. Fry chicken, fully covered in oil, 15 minutes (big pieces may need more time; small pieces, less). Cool; refrigerate overnight.

Double checked and YES cool, refrigerate overnight.

Food Network says this:

. Drain on a rack. Cool to room temperature, and then place in refrigerator for at least 4 and no more than 24 hours. Serve cool from a picnic basket or cold, straight from the refrigerator

I have found a new place in Trussville for us to have lunch at. It's called The Southern Diner. We think it's better than Joel's. Had dinner there tonight. DH had fried fish, fried okra and lima beans. I had Greek baked chicken, fried okra and mash red potatoes (skin on). Their fried okra is really crispy.

That is indeed a very big sandwich. Don't know how anyone could bite into it "traditional" sandwich style.

That's why they stick a knife into the top bun and give you a fork on the side of the dish, lol

marilyn, the oysters were perfect. I'm a oyster lover every which way.

Their chef was former chef of well known Ocean's Restaurant here.

My son's office is right across the street and he as well as everyone else loves SAWS.
