Raining, so I'm makin' soup

I am cooking soup for a late lunch on this rainy day. I cheat and use Swanson canned chicken broth, but everything else is from scratch. My goal is to increase our vegetables and have a comfy meal and aroma, and so I wander through the produce department and find veggies that would impart a good flavor. This time I am starting by sauteing onions and celery in olive oil. Added sliced carrots, a big parsnip, a big turnip, and if I have room I will shred some cabbage and/ or a cubed potato later on. Added two chicken thighs and salt and pepper while the veggies cook in the broth. Then I will shred the meat and return it to the pot. Sometimes I throw in a handful of frozen peas for color.

DH doesn't like noodles or rice. But he loves the potatoes.

If it is raining, I love the smell of homemade soup simmering, and the other aromas I like are mulled cider or Constant Comet tea.
