Spaghetti and Meatballs.....

Never served them to guests before but last night was the night. We had stuffed mushrooms, gravlax on flat bread and stuffed dates for appetizers,,,,, minestrone soup, antipasto salad, spaghetti and meatballs and for dessert, pecan balls with hot fudge sauce. I think people just enjoy getting together. Everyone seemed to enjoy themselves.

Sounds terrific. What a spread, I'll have to remember this menu and try it. Did you serve the soup first? or did guests have their choice of spaghetti or soup? sitting here eating a dutch loaf and baby swiss cheese sandwich :(

I served the soup first...just a small cup, then the salad. The first two courses were plated and served..... The spaghetti and meatballs I placed on my kitchen island and had everyone serve themselves because I tend to plate too much food and this way everyone can take whatever they want and I don't wind up tossing out all this good food. I also had garlic bread. I'm doing the same menu next Saturday. I just washed and ironed the tablecloth and napkins and unloaded the dishwasher straight to the dining room table. I'm all set and ready to go. Only thing I need to make is the sauce and pecan balls. Salad dressing is made, fudge sauce, meatballs, garlic butter etc. all done. When I was preparing for the first dinner I just did for the second dinner also.

Glad to see we all use our leftovers. Sometimes I feel guilty posting this when it's leftovers 3 nights in a row. Carol, both your choices sound good, but I'd have to go with the beef dip sandwiches. I'm such a carnivore. I'm glad you had a pretty day, Jas. It was good here and I had to turn the heat on so we could shower. Got to be up early (5:00) to be at VA by 8:00. Wow, Glenda--two margaritas?? Aren't they usually pretty big? Maybe she just lost her job so she doesn't have to go back to work.But if she's driving, I'd head in the opposite direction!! Wish we could find a good Mexican restaurant without having to drive all the way into town.

It's funny, I, too, really want to bake. And that will be the one thing I will most unlikely be able to do as our ovens, which were promised to arrive in November '07, are evidently not even going into production until the last week of February '08. I'm not sure how funny I think this is. Right now, not very. But I love to bake. Love it! We're vegan and since our kitchen was gutted this has been my version of porn: Vegan Cupcakes Take Over The World. I want to make cupcakes! I'd love to make pizza. I'd love to make sugar cookies with my three year-old (he loves using cookie cutters and colored sugars) and Nanaimo Bars just for me (I'll share, begrudgingly). I'd love to stop eating so much processed food. But on the bright side, I've lost weight since the remodel started (really hate processed food!), and if I start making my above list, you can bet every pound will find its way back to me! It's so fun to read others cooking dreams -- I'm looking forward to reading how everyone's forays are. polly -- I've been thinking about you!

I think that the best basic meatball recipe is this one. I use it as my guideline but adjust the seasoning to suit my own taste. Don't be afraid to use the eggs. Home Cookin Chapter: Recipes From Thibeault's Table ================================== adapted from: Nicolina DiSpirito Serves 4 to 6 My own Sauce 1 tablespoon olive oil 1/4 onion, chopped 2 or 3 cloves of garlic minced 2 cans of quality tomatoes season with basil, salt and pepper. Rocco's Mama's Meatballs 1/2 cup chicken stock 1/2 large sweet onion, rough chopped 4 cloves garlic, rough chopped 1/2 bunch parsley, chopped 1/2 pound ground beef 1/2 pound ground pork 1/2 pound ground veal 1/2 cup breadcrumbs 5 eggs, lightly beaten 1/2 cup grated Parmigiano Reggiano cheese 2 to 3 pinches chili flakes 2 to 3 pinches salt Olive oil, to coat hands and for browning meatballs Cooked spaghetti (optional) (Note: add Basil, oregano, rosemary, fennel seed, etc.) Make the sauce: Heat oil in a large saucepan. When oil is hot, sautÃ© onions until translucent.Add the garlic and the tomatoes. Simmer. when the meatballs have been browned add them to the sauce and simmer for at least one hour. Make the meatballs: Place the chicken stock, onion, garlic and parsley in a blender and purÃ©e. Set aside. Place the meat, breadcrumbs, eggs, grated cheese, chili flakes and salt in a large bowl. Add the purÃ©ed chicken-stock mix. Using your hands, gently but thoroughly combine all ingredients, being careful not to overmix the meat. Coat your hands with a little olive oil and form the meatballs. Pour oil in a large skillet to a depth of about 1/2 inch and place over medium-high heat. When the oil is hot, brown the meatballs, turning once. Add as much of the tomato sauce as you desire, and bring to a simmer. Cook until meatballs are done. Serve over spaghetti, if desired

If you have never made a dressing it doesn't get much easier than this one and all my friends and family love it SPICY RANCH DRESSING 1-1/2 cups Miracle Whip 1/2 cup of milk 1/4 cup vinegar (white or cider) 2 TBSP Yellow prepard mustard (could sub brown or dijon) 2TBSP sugar I level Tsp course ground black pepper 1 tsp McCormack mixed Italian Spices 1/2tsp Garlic Powder sometimes I add 1/4tsp powdered celery seed Combine all the ingredients in an old mayonaise jar then close the lid tight and shake vigorously and chill. Shake thoroughly before putting on salad. This is not only good on a salad, I like to put it on a baked potato too.

Sounds good Reminded me that every Christmas Eve that is what I served
along with a nice salad chips and dip and jellos and stuffed Dtes. Then I'd have the usual
huge feast on C Day I loved doing it. All the boys loved it (my three and 2 cousins)
My BIL worked on C Eve so there was always lots for him when he'd come by.

Almost forgot since it's been years since then Thanks for the memory

Minnie, isn't it amazing how many fond memories revolve around meals. One of my guests was helping clean up in the kitchen and I was reminiscing about my dating days with DH and how during the holidays, all the men would be in watching football, and the women would be in the kitchen washing, drying and chatting. It was a great bonding time. I miss the big holiday meals and get togethers, but everyone lives so far away.

Sausage stuffed mushrooms

1 lb. sage sausage (brown until crumbly)
1 C sour cream
1 C bread crumbs (plain or Italian...I used plain with about a tsp of Italian seasoning)
1 small onion minced
1/2 C freshly grated parmesan reggiano
2 dashes Worcestershire
Approx. 36 mushrooms

Remove stems and clean mushrooms with damp cloth. Roll mushrooms in 2 -3 T melted butter coating the outside. Mix remaining ingredients together and stuff mushrooms. Bake 350 approximately 15 minutes. Stuffing can be made a day or two ahead and mushrooms can be stuffed early in the day.

Stuffed dates

1 8 oz. container mascarpone cheese
1 tsp grated lemon zest
2 T. honey

Remove pits from Medjool dates. stuff with cheese and top with toasted pecan or Marconi almond (I buy the almonds in Costco they are softer than regular almonds)

Pecan Balls with Fudge sauce

Make a good size ball of vanilla ice cream and roll in chopped toasted pecans.
Put on cookie sheet and freeze. Top with fudge sauce

Fudge Sauce

12 oz. can evaporated milk
12 oz (2 C) semi-sweet chocolate chips
1/2 C sugar
1 T. unsweetened butter
1 tsp. vanilla

I used 8 oz. evaporated milk and 4 oz Kahlua. Melt chips with milk and sugar over medium to medium low heat stirring constantly. Bring to a boil. Remove from heat and add Kahlua, butter and vanilla. Cool 30 minutes and put into jar. Refrigerate up to 2 months.
