Be sure to use a DEEP dish crust!

I made mine from scratch and the recipe just said a 9" pie crust, so............. I assumed it meant a regular crust. I just hate when there is not enough pie for your crust so I used the regular crust.

Well....... I had way too much filling, so I pourerd as much as I could in, then went an made some crust to put in muffin tins for small pumpkin tarts.

My pie ran over like mad, all over the pan & oven floor. What a mess up!

I just wanted to warn you, go for DEEP DISH everytime!

I know what you mean, and I've had that happen many times. I never think to buy a deep dish pie plate, though, and I rarely see them in stores.

I almost had that same problem today.
I was in Krogers yesterday and they had canned pumpkin.

Great! I wanted to bake a pumpkin pie. They only had large cans of pumpkin. I haven't made pie crust for ages, so I bought frozen crusts. I was ready to start the pies...yep, I had gotten the "regular," not deep dish crusts.

So no pies. I have already made Taco Soup and Broccoli Cornbread today, so I'm quitting for now.

Tonight I'm going to set out everything I need for Apple Pecan Cobbler so in the morning all I will need to do is slice the apples, put it all together and bake it. That I'm taking to dinner at DGD's.

Sorry about the mess you have to clean up.

You know I love pumpkins and squash. My favorite pumpkin for baking and pumpkin butter is the winter luxury pumpkin. It makes a very mild pumpkin pie similar to old fashioned squash pie. Winter luxury pumpkins don't last long--so you basically grow, process and freeze. These pumpkins can't compare to anything you find in the grocery store. When processed, they are great for low fat cooking. Pumpkin butter from these is out of this world. I use Queensland's Blue for pumpkin pie. They have a little more depth to their flavor. They are an Australian pumpkin that will last a long time in your cellar. I still have some in my basement--which is warmer than a typical cellar would be. Now if you want beauty--plant the musquee de provence. It looks like a cinderella pumpkin and is absolutely beautiful. You can cook with it--but I don't. It just doesn't compare to the pumpkins above. My favorite squash is the Potimarron. It's a French squash that has an unbelievable taste. Imagine 1 1/2 cups of refined cane sugar in one pie, Gardenlad. A Libby pie is beautiful and tasty but substituting a lovely flavorful squash from the garden wouldnÂt be excessive or unnecessary. Even if, or especially if, one reduces the refined sugar in preparation. (No guilt on gilding any lily, here ;o) As regards kabocha, I am so totally unfamiliar with growing and utilizing this squash. We have tried a couple of varieties with very limited success (season may be too short, nights too cool). Blue Hubbards have done okay but, perhaps for the same reasons, not especially well. So, we return happily each year to buttercups and harvest this season could be measured by the wheelbarrow. I realize that the terms "pumpkin" and "squash" cannot be directly related to species; as you point out, forms of several are called pumpkins. "100% pure pumpkin" says the Libby web site. Then they refer to "a special variety of pumpkin called the Dickinson." But, it looks as thoÂ the Dickinson is a C. moschata rather than C. pepo (Jack oÂlanterns). Something I LOVE, but rarely buy due to it usually being sold in huge sizes for single me, is something called a hubbard squash. It is sort of football shaped, but rounder. Has deep furrows. Sort of looks like a huge acorn squash, but the colors of the rind are a little bit different. Sort of a bluish green, and perhaps I have seen orange ones. Anyway, the flesh is very orange. I have heard a rumor that it is hubbard squash that is used in canned "pumpkin." It is real tasty, but I can't eat it up fast enough to warrant buying it. I have made pumpkin pie from a fairly large, ubiquitous pumpkin. Not sure if it was a prime pie variety but I doubt it, a friend bought it. It was OK, pie tasted good, but yes, a stringier texture than what we are probably used to.

momj74 LOL. So far I KNOW about: Blueberry pies (yes that's plural), apple pies (again more than one), pecan pie (and yes I've been asked to bring one too and she knows I'm a great baker), pear tart, cranberry bread, brownies, GF bread, trifle, TWO turkeys... I know we will be there for 4 days but I truly hope she doesn't push all this food. I'm on day 8 of 90 for WW (small goals) and I will be SO mad if I ruin it. I am going to take all my ingredients weighed out, mis en place and mixed if appropriate and bake at her house. Thanks for all the advice

Yup, had to take out a custard cup full in order to get it in the oven without spilling it all over the place. Cooked the custard cup full and ate it.

My recipe fit just fine in both pumpkin pies I baked today. I measured carefully for each pie had the same amount in each. Oh, we ate one today, really good. I guess they were deep. They were heavy pottery type pie plates, made my own crusts.

I use the standard glass pans and everything fits, but I have to be careful carrying it to the oven.

I was going to say...I made two pies today..one sweet potato, one pumpkin in Glass Pyrex pie plates 9" and they both fit perfectly. Same recipe basically..

I have the perfect cure--Marie Callander's pumpkin pie. Last year I took two to my sister's and my BIL said it was the best pie he'd ever eaten. Other people were raving and he told them I made them (like from scratch). I had to give my good friend Marie credit, though.

The fillings are pretty good, but I really don't care for the crusts of store bought pies.
