Blackened tilapia w/ corn on the cob, ... I'd try adding a rice pilaf or rice w/ some veggies in it, and also a tomato salad of some kind.... like tomatoes w/ sweet onions & cukes, or tomatoes & green onions. It sounds good. :)
I'd second the recommendation for rice pilaf, or perhaps the "asian noodles" I posted here a few days ago.
My usual recipe for rice pilaf is below: (from memory)
Rice Pilaf
1 cup long-grain white rice 2 Tbsp butter 2 cups water 2 tsp better than bouillon chicken flavor 1 carrot (sliced thin) 2 white mushrooms sliced 1/2 green onion (chopped) 1/4 cup frozen peas
Melt butter in pot over medium-high heat. Add rice and shake/stir until rice is well coated and just starts to lightly toast. Add water and bouillon, stir well.
Add carrot, peas, mushroom and green onion. Cover pot and continue to heat over medium heat until the water reaches a full boil. Reduce heat to low, (or if you are on a standard electric stove move pot to a different burner that has been preheated to low.) Simmer, covered, on low for 10-12 minutes.
