Cook noodles and have them with the broth?

Turkey and noodles, turkey tetrazzini, turkey pot pie, hot turkey sandwich with mashed potatoes and gravy.

Turkey quiche, but it has to have bacon in it. Here's a link to one that has broccoli and bacon in it. Looks good to me.

If you have the turkey also, enchiladas are great. You can freeze the soup/broth in smaller containers and make gravy later or ???Just let stand so you can take most of the grease off. The stock can be used in many ways--gravy, hot dishes, chicken enchiladas.

There's a casserole dish called "Turkey Tetrazinni". It's wonderful-leftover turkey,stock, pasta,butter, grated cheese,mushrooms and cream. Just google that name and you'll find plenty of recipes. Mine is in the slow cooker right now.

BUFFALO CHICKEN NACHOS

Servings: 4 servings
Prep Time: 5
Cook Time: 5
INGREDIENTS:
2 cups diced cooked chicken or turkey
1/2 cup any flavor FRANK'S� REDHOT� Cayenne Pepper Sauce
1 (10 oz.) bag tortilla chips
2 cups shredded Cheddar or Jack cheese
DIRECTIONS:
TOSS chicken with Frank's RedHot Sauce.
Layer chicken mixture with chips and cheese in baking dish or on pizza pan.
BAKE at 350�F for 5 min. until hot and cheese melts.
TIPS:
Variations: Add 1/2 cup of the following to nachos along with chicken: chopped bell peppers, sliced green onion, sliced black peppers or diced jalapeno peppers.
For a change of pace, substitute 2 cups diced shrimp

Thank you thank you every one. I have stock simmering...don't know what I'll use it for yet, but I'll have stock...no room to freeze it.

There are so many ways to use stock, but I'm not sure how to store it without freezing. Mine is all in margarine containers.

I don't know if you have a pressure canner, but I use mine to process jars of stock.

If you have a recipe for chicken pot pie you could just substitute turkey and turkey broth.

Cook it down to broth, then freeze the broth in ice cube trays and store the cubes of broth in your freeze. Then if you want to make gravy you grab three or four cubes, if you want to make a caserol grab a dozen cubes. In this manner you only need to thaw the exact amount you need. It is the easiest storage I have found. Even works for boxed broth when you have extra.

Jean, since you are just talking about the carcass, you might like a turkey CREAM soup with noodles. It's a favorite of ours as one of the left over meals. I make mine closer to what could be called a chowder, but with lots of veggies. I use noodles instead of potatoes, but the latter would work. Season with sage.

hmmm my "stock" came out kind of whitish. All it was was the carcass and water. The fat on top is not solidified, sort of soft even tho it's been in the fridge all night. I think I will reduce it before I use it. Add some onion, garlic, carrots. Don't have any celery. Man said he would like some soup. I'll make some.

Bigbaby made turkey tacos last night. MMMmmmm.

I saw turkey tacos on Rachael Ray. Fry bite sized pieces of turkey in gravy. Mix cranberry sauce and chopped jalapenos to make salsa. Combine in hard taco shells. My tetrazinni turned out awful. Recipe called for nutmeg, too much dumped out by accident. I drove to McDonalds to pick up cheeseburgers to make up for it.
