Need a nice Burgundy for a pot-roast recipe

In a week or two, I'm going to try Ina Garten's Company Pot Roast recipe for the first time.

One of the ingredients is some Burgundy wine.

Recommendations? I'm not a big drinker; my intake is about a glass of red a year!

Not too cheap, not too expensive, pls.

(It also calls for a couple tablespoons of cognac or brandy; I'm hoping my liquor store has the airplane-size bottles!)

Any good Chef will tell you

"Any wine will do as long as it is drinkable. There is no reason to find a bottle of aged and expensive wine to use in a recipe. Getting a more expensive wine is not going to make the dish taste any better. Finding an inexpensive table burgundy in the grocery is fine."

I watch cooking channel a lot and have been cooking with wines and liquors most of my life.
I've never needed brandy or cognac in the tiny bottles so I don't know about finding it in a liquor store, but having a small bottle around is just been the norm since I was a child. Again it does not have to be an expensive top shelf brandy or cognac. It won't go bad and can be used in many ways.

I've tried several recipes and pot roast always comes out tasting about the same but this one stuck out as particularly good. (copied from my blog) Slow-Cooker Pot Roast with Caramelized Onion Gravy The Essential Eating Well Cookbook Copyright 2004 1 4-pound boneless top or bottom round beef roast, trimmed of fat, twine on (I didn't trim or tie my roast) salt and freshly ground pepper to taste 1 tablespoon extra-virgin olive oil, divided 2 large onions, thinly sliced 4 cloves garlic, minced 1 teaspoon dried thyme leaves Â½ cup brewed coffee or 1 teaspoon instant coffee granules dissolved in Â½ cup boiling water I used brewed coffee 2 tablespoons balsamic vinegar 2 tablespoons cornstarch, mixed with 2 tablespoons water 1. Season beef with salt and pepper. Heat Â½ tablespoon oil in a large, heavy skillet over medium-high heat. Add beef and sear until well browned on all sides, about 5 minutes. Transfer to a 4-quart slow cooker. 2. Add remaining Â½ tablespoon oil to skillet; reduce heat to medium. Add onions and cook, stirring, until softened and golden, 5 to 7 minutes. Add garlic and thyme; cook, stirring, for 1 minute more. Stir in coffee and vinegar; pour onion mixture over beef. 3. RECIPE: Mexican Pot Roast

So here's what I finally made. We liked it better than the recipe I lost! My husband actually had 3 helpings, which is very surprising (he usually likes his own cooking more). Mexican Pot Roast One boneless chuck roast (mine was small, ~ 2 lbs) 1-2 T Mesquite Grill seasoning 1 14 oz. can diced tomatoes, preferably with Mexican seasonings 1 small can tomato sauce 1 t Cajun seasoning 1 t chili powder 1 T Worchestershire sauce adjust seasonings to taste or if using pre-seasoned tomatoes. Mix these above 5 items together in a bowl. 1 medium onion and 2 cloves garlic, sliced. 1 can kidney beans, drained and rinsed. 1 cup frozen corn, defrosted. Sprinkle roast with Grill seasoning and put in slow cooker on high till browned (or can brown in a pan first). Add water or broth if liquid/fat from the meat evaporates (keep about an inch of liquid in the pot). You want it to roast with moist heat, not dry out. Brown the onions and garlic in olive oil until caramelized. When browned, remove meat and cut large pieces of roast in the pot into smaller pieces, like 4 or 5. Drain juice from slow cooker and separate out the fat; returning meat and de-fatted juices to slow cooker. (In my slow cooker this browning and initial cooking took about 4-5 hours on high.) Pour kidney beans and corn around sides of meat. Cover meat with browned onions/garlic. Pour tomato mixture over all. Stir slightly to make sure beans are covered with sauce/juice, but keep meat covered too. Cook for another hour or so. We served this over noodles because my daughter always wants noodles, but it would have been good too served like chili with a crispy cornbread. Hope you like it!

Then may I suggest a Dutch Oven? Brown the meat in a little bit of fat...oil, bacon grease whatever. Brown slowly so all sides are nice and browned. add a chopped onion a clove or so of crushed garlic, about 1 1/2 cups liquid...either beef broth wine, beer veggie broth or a mixture of some of the above and scrape up the browned bits in the pan, cover and place in a 225 oven for 3 or 4 hours, depending on the size of the piuece of meat, add your potatoes after about 1 1/2 hours....and I like to add carrots too at that time. Thicken the gravy with a slurry of a little more broth/wine and flour and serve with the meat. Much better than cooking it to mush in a crock pot. Linda C

It's great as originally written....rutabega and fennel are too dominant for a good pot roast. I like to add some dry red wine instead of some of the beef broth....and maybe a dash of worchestershire sauce. It's fall food! Linda C

Not Mateus! That's a very light rose'.

If you're going to the liquor store anyway, they'll be able to advise you on a reasonably priced wine to both drink and cook with.

I like to use Pinot Noir. It's made from the burgundy grapes but lighter in flavor.

Did Ina say to use a "good" burgundy? I've noticed she does that a lot: good olive oil, etc. I agree with Lil--there's no point in getting a particularly good wine to cook with. On the other hand, it's a shame to open it, use a bit, and let the rest go to waste. So buy something that will inspire you to break old patterns and finish the bottle! :-)

Can you subitute a non alcholic product like chicken stock? Somewhere I read what you could subitute.

Umm - yes, you can substitute chicken stock for wine, but you change everything about the recipe. It's no longer "Ina Garten's Company Pot Roast". So then - why follow a recipe at all?

The OP doesn't have an issue with using wine! She was just asking for a brand of burgundy.

Be sure it is good enough to drink. Never cook with a wine that isn't good enough to drink.

I drink Lake Niagara Red wine from New York State. Use in cooking,too. I order cases of Lake Niagara Red from a local gourmet wine/food store called Stew Leonard's.

I usually go with a middle of the road wine when I need one for cooking. That way either I will use it for another recipe or we enjoy it by the glass.

I'm an odd one..I like a local Port for my beef recipes.

And Basket Case has a great Cab Sav that works well with beef.

Velvet Devil Merlot is another...

Burgundy is a region..

also look for a Pinot Noir...

Mirasou Pinot Noir and if you want to go really inexpensive, Trader Joe's three buck chuck.

Georgysmom--Trader's wine actually crossed my mind! (But I thought it was 2-buck chuck--must be inflation! LOL!)

Jannie: I've been to Stew Leonard's once--the same small chain as the store in either Norwalk or Danbury, Conn., correct? The only thing I recall was that they had big animated animals. (not live ones!)

Yeah, people--find me something that will turn me into a once-a-month lush! LOL!

There is actually chicken stock in the recipe, so there'd be no purpose in substituting, I fear.

Gallo Hearty Burgandy has been consisently good for cooking and drinking.

pammyfay, It use to be two buck chuck but you're right, inflation has set in! Gallo burgundy gets good reviews for a wine in that price range. The reason you want a wine you enjoy drinking is because when you cook with it, the alcohol burns off and all you have is the basic flavor of the wine. Enjoy your pot roast.
