Comments (36)Well, I'd feel guilty if I didn't throw my voice in here. And I'm not trying to talk you out of it, because I know that's not possible. No one was able to talk us out of it. :) Like Nancy said, you can do all the right things and still go broke. I'm recent proof of that one. Make sure you are in a position where you do not need income from the business on which to live. I didn't pay myself a dime for five years; it all went back into the business. If you know that going it, then you're either prepared or pleasantly surprised. And please think about consulting with a smart CPA to determine how best to protect your home and personal assets. His/her advice is worth every penny of his/her fee. Sandwiches -- I'm strange in that I don't like sandwiches on big rolls. I have a small jaw and just can't get my mouth around them! So I prefer sliced breads, wraps and pitas. One of my favorite sandwiches is baked turkey (not smoked!) with harvarti cheese, roasted red peppers, spinach leaves, sprouts and sunflower seeds on a whole grain bread. While I love tuna, chicken and egg salad, I never order them in restaurants unless I am VERY familiar with what goes on in the kitchen. I seldom order green salads out for the same reason I don't buy pre-bagged lettuce mixes at the grocery -- that mysterious pastic-gassy smell makes me gag and no amount of rinsing will remove it. There is a place in Reno that preps their own lettuces and has a delicious Grrek-inspired salad of romaine, red leaf, tomatoes, feta, olives, pepperonici, etc. It's simple, but because they use really good ingredients, it's delicious....See MoreLooking 4 dairy free chicken recipes I can just throw in the oven
Comments (8)I hear ya' about the cooking and more cooking and more cooking...... I bake this Moroccan Chicken recipe instead of grill it...have made it 4 times already, it is that good! Grilled/Baked Moroccan Chicken Good with rice pilaf or couscous and a green salad. 1/2 cup extra virgin olive oil (good quality) 1/4 cup chopped scallions (white part only or chopped onion) 1/4 cup chopped parsley 1/4 cup chopped fresh cilantro 1 tablespoon minced garlic 2 teaspoons paprika 2 teaspoons ground cumin 1 teaspoon salt 1/4 teaspoon turmeric 1/4 teaspoon cayenne pepper 4 boneless skinless chicken breasts or 8 chicken thighs/pieces or leg quarters or chicken halves Optional use 1 heaping TB ras-al-hanout seasoning instead of the ground spices Combine oil, scallions, parsley, cilantro, garlic, paprika, cumin, salt, turmeric and cayenne pepper in the container of a food processor. Process until smooth. Rub the mixture on both sides of the chicken breasts and let stand 30 minutes. Preheat the grill to medium hot. Grill chicken breasts 5-7 minutes on each side, until done or bake at 375 for one hour for half a chicken or 45 minutes for chicken pieces Pizza Chicken Roll-ups - variation from my friend Keren 4 chicken breast halves sliced horizontally into 2 pieces and pounded thin Deli pepperoni very thin slices, 2-3 slices per roll Deli provolone cheese 1 slice per roll Pasta sauce, large jar of Prego or homemade tomato sauce Mozzarella cheese slices, 1 per roll On each piece of pounded chicken breast, layer on 2-3 slices pepperoni and 1 slice provolone cheese. Roll up and secure with a toothpick. Grease a 9x13 or equivalent baking dish. Pour in 1 cup of the pasta sauce. Place rolls in dish and pour rest of sauce over all. Cover with foil and bake at 350 for 30-40 minutes. Uncover and top with the slices of mozzarella then return to oven to melt cheese. Sprinkle with chopped basil or parsley and serve over hot cooked spaghetti that has some melted butter and garlic salt, pepper added....See MoreRECIPE: looking for: einstein bagel's cinnamon stick recipe
Comments (2)Good point Linda...I had made the assumption that Einsteins was all over the place (except in Maine because it seems that's the way so many things are!). It's an upscale deli similar in ambiance to Panera (another place I've only been once). The sticks were made with phyllo or puff pastry, a bit on the crusty side as they held their shape at approximately 12" x 1+" x 1+" per stick. Do you know what I mean? Your recipe sounds delicious too. Would you post it? Linda...See MoreLOOKING for: Turkey Breast - Seasoning like a deli cut?
Comments (3)Maureen, I know the type of thing you are talking about. There are a few extra steps that they do commercially that we can't do at home. The deli meats are all chunked and formed, even the best ones which have larger chunks. But one thing I've noticed is that some are injected with the flavors. This was very evident on a Buffalo Style Turkey Breast I looked at. The lines from the injection were real evident because of the red color. Outside coatings like sun dried tomatoes and basil or lemon pepper are put on pretty thick, almost like they are pasted on. I would keep the oven heat on the low side so that your rub doesn't burn. I keep sampling these new flavored turkey breasts and hams they are pretty good. There's even a London Broil Turkey Breast now. Nancy...See More- 17 years ago
