I make all my own noodles and pasta.
My pasta maker (not electric) was a wedding gift from First DH's stepmother, over 40 years ago.

Not I said the little red hen. But I would love to see a recipe. Do you have to have a pasta maker??

DH makes noodles for chicken soup. He cranks them out on our 40 year old Atlas.

You don't have to have a Pasta maker....I often just roll out the dough with my heavy marble rolling pin, then let the dough sit a bit, sprinkle with flour, roll the dough up like you would a rug, then slice to size with a sharp knife.

No you do not have to have a pasta maker. My recipe is 6 eggs mixed well into 3 cups of flour. Make into smallish balls and flatten, then wrap in plastic wrap and let them set for say a half hour at least. Put flour on your board or counter and your rolling pin and roll them out as thin as possible using more flour as you go. Let the circles of dough dry for awhile but still soft enough to cut, cut into strips then stack some strips and start slicing the stacks of dough in widths you want. I like them as thin as possible. Then put them to dry on a counter or table. I put mine on a clean table cloth and let dry, if more than one day, cover with another cloth. Then bag up for use. I know some do not let their noodles dry but that is the only way I do them. I do have a pasta roller and cutter now and it is manual one. I do like it but it takes time even that way. My machine says not to use salt. So if you are not using a machine you could add some salt if you like.

I haven't made any for awhile but I love to make them....I love homemade noodles...I love lasagne noodles so much...they are a whole different ballgame...

I make german spatulas (spaezle) with my Grandma's manual machine. I also have a recipe for roast beef with home-made noodles that I tried last year that was quite good and not too much work. It wasn't very time consuming. Waiting for a chilly day to make that again. Perfect for a cold rainy night!

I never ate purchased noodles during my entire childhood. My mother always made them, using the method that Sue describes. Homemade chicken soup with homemade noodles - yum! There was another favorite dish that we all loved. My mother would cook full fat cream (maybe with some onion) until it was rendered down into brown crumbles. She would toss the rendered product with homemade noodles. Wow, that was a real treat, especially since there were eight of us children and she had to make a lot. Fortunately, we hadn't yet heard of cholesterol!

I rarely make noodles though - too time consuming!

I make mine like Sue only I always add salt. My mother told me to salt the eggs as though I was going to scramble them. Works for me! Some people put an egg shell full of cream in theirs. I love noodles!

Noodles and beef or noodles and chicken are big here in Iowa. Since I don't eat meat, I don't make either one. I would like to try making noodles with 1/2 white flour and 1/2 whole wheat. Has anyone tried that?

Okay, now I'm really hungry!

I've made spaetzel and gnocchi, if that counts.

Old time recipe
8 eggs and 1 cup of water ,beaten together
add 5 cups flour
leave sit for an hour or longer
roll out and let dry some, then roll-up and cut
store in the freezer.

I haven't made pasta in a long time, but I have two machines; a cavatelli maker, and a machine that rolls the dough to various thickness and then cuts to varying widths, like fettucine, or linguine. Sometimes we just roll it out and cut little squares, we call those tucots and cook them with beans, like pasta fagiole,
My Dad is the big pasta maker in the family. He makes homemade raviolis and other pastas all by hand. YUM!!!

Might have to try this concotion of 2 ingredients.

When my children were young and we had our own chickens for eggs I used to make noodles and also homemade ravioli. I have a pasta roller and this discussion is making me want to get it out and make some noodles.

Thanks for reminding me about my cavatelli cutter....I forgot i had it, and it was in the back of my kitchen closet.

Made noodles "once" with my Kitchenaid stand mixer. Tasted okay but too much trouble. You can buy hand-cut pasta in most grocery stores.
