Scottish Shortbread II

Light, very buttery shortbread, that does not make a large batch, but are simple enough to make many batches. Recipe does not double well.

Ready in 30 minutes

Ingredients

Serves: 12

185g (1 1/2 cups) plain flour

90g (1/3 cup) white sugar

185g butter

Preparation method

Prep: 15 minutes : Cook: 15 minutes

1. Preheat oven to 180C (350F).

2. Blend all ingredients well. Dough will be stiff.

3. Press into a 23cmx23cm buttered cake pan. Prick top with a fork. Mark into 24 squares

4. Bake in preheated oven for 15-20 minutes until pale golden brown on the edges. Whilst still warm cut into squares.

Peanut Butter Oatmeal Sandwich Cookie

a clone of Nutter Butters or Girl Scout Do-Si-Dos. Even if you don't make them into a sandwich cookie, they are to die for, or as the someone else stated... LETHAL!!!

3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
1 cup quick cooking oats

In a large bowl, cream together butter or margarine, peanut butter, white sugar, brown sugar, and vanilla. Add egg and beat well.
In another bowl, combine the flour, baking soda, baking powder, and salt. Add these dry ingredients to the creamed mixture. Stir. Add oatmeal and stir.
Drop by teaspoons onto greased baking sheet, and press each mound down with a fork to form 1/4 inch thick cookies. Bake at 350* for 10 minutes, or until cookies are a light brown.

Filling
3 tablespoons butter, softened
1 cup confectioners' sugar
1/2 cup smooth peanut butter
2 1/2 tablespoons heavy whipping cream

Cream butter or margarine with the confectioners' sugar, peanut butter, and the cream. Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.

Note:
Since I seldom have cream on hand, I make the old fashioned Gravy Frosting, and substitute peanut butter for part of the butter in it.

2 Tablespoons flour
1/4 cup milk
Whisk together and cook over medium heat, stirring constantly, until a thick blob. LOL Set aside to cool

2 Tablespoons butter or butter Crisco
4 Tablespoons creamy peanut butter
6 Tablespoons sugar
Beat these together until light and fluffy and sugar is dissolved. Beat in the cooked mixture.
Place in a baggie, snip off the corner and squeeze onto a cookie, top with another cookie.

I make shortbread every year for Christmas, cut it out with a Scottie dog cookie cutter and put green and red bows around their necks..sooo cute and yummy

DELICIOUS: Beef Bourguignon 1 tablespoon good olive oil 8 ounces dry cured center cut applewood smoked bacon, diced 2 1/2 pounds chuck beef cut into 1-inch cubes Kosher salt Freshly ground black pepper 1 pound carrots, sliced diagonally into 1-inch chunks 2 yellow onions, sliced 2 teaspoons chopped garlic (2 cloves) 1/2 cup Cognac 1 (750 ml.) bottle good dry red wine such as Cote du Rhone or Pinot Noir 1 can (2 cups) beef broth 1 tablespoon tomato paste 1 teaspoon fresh thyme leaves (1/2 teaspoon dried) 4 tablespoons unsalted butter at room temperature, divided 3 tablespoons all-purpose flour 1 pound frozen whole onions 1 pound fresh mushrooms stems discarded, caps thickly sliced For serving: Country bread or Sour Dough, toasted or grilled and rubbed with garlic clove 1/2 cup chopped fresh parsley, optional Directions Preheat the oven to 250 degrees F. Heat the olive oil in a large Dutch oven. Add the bacon and cook over medium heat for 10 minutes, stirring occasionally, until the bacon is lightly browned. Remove the bacon with a slotted spoon to a large plate. Dry the beef cubes with paper towels and then sprinkle them with salt and pepper. In batches in single layers, sear the beef in the hot oil for 3 to 5 minutes, turning to brown on all sides. Remove the seared cubes to the plate with the bacon and continue searing until all the beef is browned. Set aside. Toss the carrots, and onions, 1 tablespoon of salt and 2 teaspoons of pepper in the fat in the pan and cook for 10 to 15 minutes, stirring occasionally, until the onions are lightly browned. Add the garlic and cook for 1 more minute. Add the Cognac, stand back, and ignite with a match to burn off the alcohol. Put the meat and bacon back into the pot with the juices. Add the bottle of wine plus enough beef broth to almost cover the meat. Add the tomato paste and thyme. Bring to a simmer, cover the pot with a tight-fitting lid and place it in the oven for about 1 1/4 hours or until the meat and vegetables are very tender when pierced with a fork. Combine 2 tablespoons of butter and the flour with a fork and stir into the stew. Add the frozen onions. Saute the mushrooms in 2 tablespoons of butter for 10 minutes until lightly browned and then add to the stew. Bring the stew to a boil on top of the stove, then lower the heat and simmer for 15 minutes. Season to taste

Pecan Bars Recipe courtesy Claire Robinson, 2010 24 bars.Ingredients Crust: 1 1/2 sticks (3/4 cup) cold unsalted butter, cubed, plus more for dish 1 1/2 cups unbleached all-purpose flour 2/3 cup light brown sugar 1 teaspoon kosher salt Filling: 1 stick (1/2 cup) unsalted butter, softened 1 cup light brown sugar Pinch salt 1/3 cup light corn syrup 1/4 cup unbleached all-purpose flour 3 cups coarsely chopped pecans Directions Preheat oven to 350 degrees F. Line a 13 by 9-inch baking dish with foil allowing an overhang about 2 inches off the sides. Butter the foil. In a food processor, blend together flour, sugar, butter and salt until the mixture resembles coarse sand. Add 2 tablespoons cold water and mix until the dough just holds together. Press dough into bottom of buttered baking dish and bake in oven until golden in color, about 20 to 25 minutes. Meanwhile, make the filling. In a stand mixer fitted with paddle attachment, add the butter, brown sugar and a pinch of salt and mix on medium speed until light and fluffy, about 3 minutes. Add the corn syrup, flour and pecans and mix until just combined. Spread the filling over the baked crust and bake until golden brown, about 30 to 35 minutes. Remove the dish from the oven and allow it to cool completely in the pan. Remove from pan by pulling up the foil sides and putting it on a cutting board. This is a very fast and simple entree that will wow a visitor! Boursin and Spinach Stuffed Chicken Breasts BOURSIN CHICKEN 4 boneless chicken breasts Salt and pepper, or seasonings of your choice 5.2 ounce package Boursin garlic and herb cheese 10 ounce package frozen chopped spinach, thawed and drained very well 2 tablespoons butter To prepare the chicken, trim off any fat. Butterfly the chicken by making a shallow vertical cut into the middle of the thickest part of the breast and then running the knife horizontally toward the outside stopping within a quarter to half inch of the edge. Fold out the flap you just cut. Cover the chicken with a piece of plastic wrap and pound until it's a thin even thickness all over. Season on both sides with salt and pepper, I use a little seasoned salt. Stir together the Boursin cheese and spinach. Place 1/4 of the spinach mixture in a pile in the center of each chicken breast. Fold all the sides of each breast up and over the filling to completely cover it. Gently squeeze the seam to seal the opening. Carefully place seam side down in a greased baking dish. I lined my pan with nonstick foil. Tuck in any stray ends of the chicken. Sprinkle with seasoning salt or garlic powder. Divide the butter into 4 equal pats and place one on top of each piece of chicken. Bake at 375 for 25-30 minutes or until chicken juices are no longer pink. Serve at once. If you are not carbohydrate sensitive you can flour, bathe in egg and coar with bread crumbs and pan fry to brown before baking.

Braised Short-Ribs in the Slow Cooker (from our local paper) The sauce that these ribs make is truly exceptional, and doesn't even need thickening. But because the ribs are fatty and tender, you might need a gravy separator. It's a handy tool that allows you to pour off the delicious broth, separate from the fat that collects on top of the juices. I served this delicious main course with steamed green beans and soft fresh bread to mop up the gravy. It would be lovely with mashed potatoes or noodles, too. Bring on winter! Braised Short Ribs with Orange and Hoisin 1 kg (2 lb) beef short ribs, trimmed of excess fat 2 cloves garlic, chopped finely or sliced thinly 125 ml (1/2 cup) orange juice 15 ml (1 tablespoon) ketchup 5 ml (1 teaspoon) soy sauce 30 to 45 ml (2 to 3 tablespoons) hoisin sauce 15 ml (1 tablespoon) fresh ginger, grated 5 ml (1 teaspoon) sesame oil 8 to 10 pearl onions 1. In a large skillet on high heat, quickly brown the meat on both sides. You can use a little oil if you need to, but this shouldn't be necessary, as the meat is quite fatty. Place the meat in the slow cooker, trying to keep it to one layer at the bottom. 2. Fry the garlic in the pan for a moment or two until it turns pale gold. Combine the orange juice, ketchup, soy sauce and hoisin sauce in a bowl and whisk together. Pour this into the skillet with the garlic and stir until all the browned bits are loosened in the pan. Pour the mixture over the meat in the slow-cooker. Sprinkle sesame oil on top. 3. Peel the pearl onions. This can be tricky, so I trim the pointed top and the root end with a sharp knife, then plunge them into boiling water for one minute. The skins will then slip right off. Scatter the pearl onions over the meat. Cover the slow-cooker and leave on High for four to five hours, or Low for eight to 10 hours. 4. Remove meat and onions from slow cooker and place into individual plates or a serving dish. It should be dark and very tender, with the bones falling off. Pour the juices into a bowl or gravy separator and skim off the fat. Pour degreased juices over the meat and serve with steamed vegetables or a salad, and bread, noodles or mashed potatoes. I made this soup, and it's pretty good! I put a glug of half and half in to make it a little creamier.

Classic Tomato Soup (Fine Cooking)

2 tbsp olive oil
1 tbsp unsalted butter
1 large white onion, finely chopped
1 large clove garlic, minced
2 tbsp flour
2 cups low-sodium chicken broth
18-oz can whole peeled plum tomatoes, pureed
1 1/2 tsp sugar
1 sprig fresh thyme
salt and pepper
some half and half, if you like

In a 5-6 quart Dutch oven, heat the oil and butter over medium-low heat. Add the onion and garlic, cook until softened. Add flour and stir to coat.

Add the broth, tomatoes, sugar, thyme and salt and pepper. Bring to a simmer over medium-high heat, stirring. Reduce heat to low, cover and simmer 40 minutes.

I put some half in half in, towards the end.

Discard thyme sprig, let cool briefly and puree in blender or using a stick blender. You can garnish it with a dollop of this cream garnish.

Sour Cream, Goat Cheese and Parmesan

In a small bowl, combine 1/2 up sour cream with 1/4 cup crumbled goat cheese. Add 1 tbsp freshly grated Parmiagiano-Reggiano, 1 tbsp thinly sliced chives and 1 tbsp olive oil. Mix thoroughly and season to taste with salt and pepper.
