What's for dinner 10/11?

We were going shopping today and eat out, but Harry isn't feeling very well. He's been in bed most of the day. Neither of us slept well last night so maybe that's the problem. So I piddled around in the kitchen and made potato salad from some new red potatoes I needed to use and a beet salad. We'll have a plain hamburger patty to go with it (no bun).

What are you cooking up for tonight?

Ours will be the chicken enchiladas that I didn't get made last night!

There may be 6 of us this evening for supper. I have made chili soup and baked an apple cake. These were apples that I picked off the ground. I don't know what kind they are. Red and really nice and sweet. I had enough for the cake plus 3 quart bags are peeled and sliced and in the freezer. We will also have some cheese to go with the chili and crackers. Coleslaw also. I must make some iced tea to go with it.

"coinkydink" That's cute!! LOL I'll have to remember that. We had our main meal at lunch today as hubby is with the band from 4-10pm. Cool, rainy day and meatloaf was calling me. Lately I've been making my meatloaf with minced carrot, onion, celery and garlic and fresh breadcrumbs. Ketchup with a bit of brown sugar on the top. Hubs says this is his favourite. Mashed potatoes (using Brigette) and steamed carrots. Delicious!

Today was a gorgeous day here, cool but the sun came out and really warmed things up. Early this morning hubby dyed my hair. Put a beef roast in the slow cooker to have shredded beef/barbecue sauce for dinner. Made some biscuits to have with lunch. Went out to get 10lb bag of flour that was on sale for $6.97 but they are sold out, and getting more on Tuesday. Did get some white tuna AND sockeye salmon for 99 cents/can, so we still got some great deals. Dinner was the shredded beef on a bun with coleslaw and cookies for dessert.

Jasdip, we free feed dry food and the canned is also Friskies. They had it on sale, $11 for 30 cans, so we usually buy 120-150 cans when they do. One day when were were getting it an older gent was doing the same, he asked how many cats we had and in turn I asked him the same. He said he didn't have any cats that he fed 2 strays, that as long as he could afford to do so he couldn't see any animal going hungry. I liked him.

Had a little beef roast in the slow cooker all day with mushroom soup, the dried onion from an envelope of onion soup mix, and about a tsp of the onion powder from the mix. Way too salty for me to use the whole thing. Bit of water.

Served it over noodles for a cheater stroganoff. I'm surprised at how much we like it. Made for a nice relaxing day.

Fried shrimp and french fries. My wonderful brother stocked my freezer with bags of huge shrimp!!!

my wonderful DH hurt his back yesterday and could not sit thru his nighttime class @ 7:30, after sitting since noon in classes, so he came home and made dinner! i had a stuffed pepper, a piece of garlic bread and he even made my steamed artichoke :-) otherwise i would have had the artichoke and salad LOL. ~ liz

Meatloaf sandwich here, with some YUMMY tomato compote that I found at the local farmer's market :-)

even thou i was vegetarian all thru my 20's i had never had an artichoke! i first had one (steamed w/ drawn butter dip) about 10 yrs ago in an italian restaurant and i loved it. i get into these stages where i eat one thing alot then get tired of it. so far this one's going on 6 months LOL but it is very healthy 60 cal. 6g fiber and i eat it w/o dipping, just plain. it's also something easy i can make, i fill a small pan w/ about 1-1.5c water and a slice of fresh lemon, bring to a boil then steam for about 45-60 min. not exact, usually when i remember it LOL. luckily we have a produce market 2 mi away and he sells nice sized artichokes for $0.69-$1.25 ea v/s publix for $3.99 often which when i can't get at the market i will get just 1 in a wk.

i always eat that first and it fills me up nicely then i eat the rest of my meal. it also FORCES me to slow down, a problem i have while eating :-/ and eat each leaf then clean up the heart. i am trying trying trying to eat mostly veggies, chosing high protein healthy foods to lose weight :-) ~ liz
