What's for Dinner -- Wednesday?

Overcast and/or rain all day today, and getting colder as the day goes on here in Ohio.

I am just finishing up cooking stuffed peppers for my meal tonight. Will just add a piece of buttered bread.

So what's on your plate today?

    Getting ready to rain here, but I did get in one more day of water aerobics. Water was warm, but the air was coolish. Bubble goes up after class, Friday, for the next 6 months. T'will be nice!

    Wed is chicken pot pie at Loui's so that's what I had! Delicious!

    Today was shopping with Cheryl and Terri. Lunch was just a roast beef from Arby's. I had my own drink of iced tea. Shopped here and there and my supper was a bowl of chicken noodle soup. Afternoon dessert was Happy Hour at Steak and Shake, had a Heath milk shake. Pretty good. Sunny most of the day here.

    Patti, we like that Panera broccoli cheese soup too, but Costco's runs a close second to that. I'm due for a Costco trip, maybe Friday. We're having pork ribs, I trimmed and browned some early today and put them in my slo cooker with a made up sauce- tomato, onion, garlic, bit of vinegar, dash of numeg, pinch of brown sugar, whatever was within reach. I've got one huge baked potato almost finished to share with DH. There should be enough ribs for tomorrow too and then I'll cook some rice to go with them that DH prefers.

    I'm donating blood tomorrow, so last night I had spinach. Tonight I'm having liver. Plus a multi vitamin. Because my diet has sucked lately. I just hope it's enough to get my iron up so I can donate. #26!

    I had a big buffet lunch, so dinner was a black bean salad w/ tortilla chips, and some hard-boiled eggs on the side. :) I didn't photograph the salad but should have! so pretty... made with what I had, so red & green bell peppers, jalapeno, mixed tropical fruit, and green onions, dressed w/ lime juice. The eggs were made this morning -- the Polish way. A basic color test run :)

    Warmer here today - around 86. Because of all the rain over the last couple of days, it was very humid. I was so glad to see the sun! Our summer has been cooler than normal. I don't remember a 100 degree day so far. It was cooler than normal last year too. We went out for Mexican tonight. Had a delicious carne asada.

    A much needed rain in North Alabama today with cooler temps coming in. We will have meat loaf, mashed potato patties, black-eyed peas and a gelatin salad.

    Great Greens pasta (whole wheat pasta with spinach, avocado and basil pesto) and roasted broccoli and asparagus.

    I have been craving meatballs, so I started my sauce early this morning and let it simmer for a few hours. Made the meatballs, browned them lightly and tossed them in the sauce to finish cooking. It smells wonderful in my house, my Italian grandmothers would be proud :) No pasta tonight, just a crusty sourdough baguette to sop up the sauce. Tomorrow it's meatball sandwiches.

    Our former neighbour gave us his cute little gas barbecue when we moved. So hubby grilled a couple of steaks. We eat steak very seldom, maybe once a year, and I got these on sale. He did a great job, grilling them.

    We had green beans and onion wedges simmered in a bit of water and olive oil, then drizzled lightly with balsamic vinegar.

    matti, I saved this recipe for whenever I have meatballs and sauce.

    You can improvise as you already have the meatballs plus sauce.

    Openfaced meatball sandwich

    1 tablespoon olive oil
    1 small sweet onion, diced
    1 garlic clove, crushed
    1 (26-ounce) jar spaghetti sauce
    1 tablespoon chopped fresh basil or 1 teaspoon dried basil
    1 (32-ounce) package frozen cooked Italian-style meatballs
    6 slices garlic-butter Texas toast
    1 cup shredded Parmesan cheese
    2 cups (8 ounces) shredded mozzarella cheese

    Heat oil in a large skillet over medium-high heat; add onion, and garlic, and saute 3 minutes.

    Stir in spaghetti sauce, basil, and frozen meatballs; cook 25 minutes or until thoroughly heated, stirring often.

    Prepare Texas toast according to package directions. Spoon meatball mixture evenly over toast; top evenly with cheeses and return to oven for 5 minutes or until cheese is melted. Serve immediately.

    Probably just grilled cheese, if anything. We had a long day. We took my sister for a doctor apt 2 hours away. We did have the world's best juiciest burger for lunch and I am not too hungry. But Glenda's chicken pot pie sounds good.

    Oh, stuffed peppers. It is that time of year to clean up daughters garden and that means a day of fixing stuffed peppers to freeze. So nice to have them in the freezer.

    Supper was a repeat of last night. The doctored up pasta salad over mixed greens. Added shredded low fat cheddar cheese to the salad and a high fiber/protein bar to it as dh has blood work scheduled tomorrow at 6 am. Since he is diabetic, added the cheese and bar (protein and fat) to his meal to help slow down his digestion of the carbs in the meal. Less chance of him getting low blood sugar during the night and having to cancel the blood test.

    It was a lovely day here today.. I was suppose to go out for lunch today with the neighbor ladies, but Monday was bridge and shopping, Tuesday was golf, lunch and bridge at night, tomorrow I need to leave here at 7:30 for a golf outing, Friday is golf again. I think I'm getting too old to have this much fun so I decided to stay home today instead of lunching with the ladies. I did go out this afternoon and ran some errands. While I was out, I picked up Chinese so we are having hot and sour soup, orange beef and chicken with mushrooms and onions and fried rice

    Glenda: I love a good chicken pot pie. But the vegetables have to be done. Do you exercise under the bubble?

    Sue: Once in a while, I buy the Arby's roast beef for the freezer when they run a special. I like the horsey sauce. What's a Health shake?

    Betsy: Mmmm, good comfort foods for a rainy day.

    Chi: Just went and looked up that pasta dish. It looks really good.

    Matti: Meatballs, sauce and sopping bread. Who needs pasta?

    Jasdip: Give me a good steak any day of the week and I'll be happy.

    Pam: I'll take either the grilled cheese or the juicy hamburger.

    Gazania: If I had a garden, I'd premake my peppers too. Great to have them in the freezer. And I love 'repeat' meals. Quick, easy, good and clean up can be a breeze.

    Georgysmom: You are one busy gal. I simply must try the Chinese place they have in our little town. I think I'd need an advisor to go with me.

    We are currently on the road heading to Oklahoma where mother in law is in the hospital in bad shape. We are setting up the rv and I will cook for the family. Tonight we may have ham sandwiches since we are getting in late.

    Ravencajun: I've been wondering about you and your mother in law today. How much farther do you have to go? Ham sandwiches should just hit the spot, being on the road.

    Hellion: When I was going to fix chicken yesterday, I debated about fixing the alfredo instead. It will go back on the list for later in the month.

    We went out to a Mexican restaurant nearby. Great food and service, and it's independently owned. We usually go on the weekend for their buffet, so this was fun.

    Raven, I hope that your trip goes well and that you'll be able to spend lots of quality time with your family in this difficult time. I'll be thinking about you.

    Smothered pork chops, jasmine rice, corn and broccoli..

    Well the chops are simmering in broth at the moment...have to make it into gravy..every thing else is ready..

    We made it here and my husband's niece had a crockpot of potato soup waiting on us which was so sweet of her. I will take over the cooking tomorrow through at least Sunday.
    The doctors are not very hopeful of much improvement. She has more fluid building around the heart and lungs and at 91 they just can't risk too much more than they have done. But she is very optimistic and stubborn so that might be to her benefit. We are praying for time.

    I had the last piece of Hamburger Cassarole, although I used ground turkey this time-couldn't even tell. It's very simple but good.

    Brown 1lb of ground beef or turkey. Drain. Add 1/4 cup chopped onions to meat. Add 8 oz. tomato sauce and 3/4 cup ketchup and mix well. Put in a oven safe 9x9 pan. Layer sliced 4-5 pieces of American cheese or shredded cheese of your choice. Top with 4 Pillsbury cresent roll pieces (lay one layer flat). Bake at 350 for 15-20 minutes or until cresent rolls are browned. Very easy to double for a bigger crowd! YUM!

    I made stuffed peppers for hubby last night. He loved them. I didn't have anything. I don't like green peppers. Now I'm hungry. lol
